In an effort to increase the amount of locally sourced food utilized by dining services at WKU, the Office of Sustainability, WKU Restaurant Group, and the WKU Agriculture & Research Education Center have partnered to establish garden spaces on campus properties. This project developed a detailed plan for implementation of this effort. In addition, this project established a plan to educate students and the local community alike on the benefits of sustainable farming and locally-sourced food, while also creating profiles on local farmers from whom the university could buy crops in order to further supplement items for dining services. The number of farmers’ markets has been growing, but consumer attendance does not appear to rise at the same rate. The overall purpose of this study was to investigate primary reasons for not attending. Specific objectives were: (1) describe the consumer characteristics of individuals who do not attend farmers’ markets (2) investigate the consumer characteristics and market amenities that influence a consumer’s choice to not attend a farmers market (3) estimate the variables that impact a consumer’s level of interest in subscribing to a CSA and (4) assess and estimate the relationship between consumer characteristics and their willingness to pay …

This study applies an Ordinary Least Squares (OLS) model to explain differences in the amount that online shoppers might spend per month on fresh produce, given specific consumer characteristics. It also uses a multinomial logit model to determine the relative probability of online shoppers spending more or less, given specific consumer characteristics. The independent variable of interest in both models is whether or not the respondent is a recipient of a government assistance food program. These analyses used data from a stratified random sample of 1,205 online shoppers residing in the southern region of the United States. “Online shoppers” in …

Food waste is a pervasive global issue with many environmental and social repercussions. While about one-third of all food produced for human consumption goes to waste, many people in the United States and the world are affected by food insecurity. Food recovery, the process of rescuing edible food that would otherwise go to waste and delivering to hungry people, is an effective solution for both food waste and food insecurity. Preparing to leave office, he provides a report on his administration’s accomplishments with respect to agriculture in the state. Much of the detail is set out in a report to Nunn from the Commissioner of Agriculture that is included with the letter.

Finding aid only for Folklife Archives Project 1247. Student paper titled “The Scarevenger Hunt” in which Phil R. Aaron documents the use of scarecrows throughout Adair County. By using an ad in the local newspaper, a radio ad, and a telephone book, Aaron was able to interview residents about their connections, traditions, and beliefs surrounding the construction, decoration, and implementation of scarecrows. The paper contains photographs of various scarecrows, hand drawn illustrations of charts and data sets, and maps of the research area.

Finding aid only for Folklife Archives Project 1228. Student paper titled “Blacksmithing” in which Larry Brooks explores the history of blacksmithing, the proper way to shoe a horse, appropriate tools and supplies, and how craftsmen use various smithing methods to repair items such as shovels, plows, and wagon wheels. Brooks collected information from Earl Austin, a longtime farmer and blacksmith from Beaver Dam, Kentucky. The paper also contains black and white photographs of blacksmithing implements, the shoeing process, and Austin’s workspace.

Antonini describes the equipment used to produce moonshine and includes several stories told by her informant, a man only referred to as “Jim,” about his methods and various run-ins with the law. The author also includes her mother’s wine recipe and additional “home brew” stories.

Student paper titled “Winemaking: The Old and New Way” in which Charles Genau details the process of wine production from harvest, to fermentation, bottling, and distribution. Genau compares and contrasts methods of traditional winemaking with contemporary approaches. He also gathered his information from two winemakers of different ages and ethnic backgrounds. The paper contains two illustrations of the winemaking process.

Finding aid only for Folklife Archives Project 1206. Collection consists of interviews conducted by students in Barry Kaufkins’ Introduction to Folk Studies (FLK 276) class at WKU. Students conducted interviews with various family members, friends, and coworkers. Topics include childhood memories, cultural traditions, professional responsibilities, and other issues relating to personal narratives. Collection also contains brief summaries of subjects covered in the interviews. Audio recordings of the interviews that were recorded and submitted are stored in the WKU Sound Archives.
