Food animal welfare is an issue of great concern, as society has a responsibility for animals under human care. Pork is the most consumed meat worldwide, with more than a billion pigs being slaughtered globally every year. Still, in most countries, sows are restrained in farrowing crates throughout lactation. In these crates, sows arc confined with bars to an area that is just slightly larger than their body. Thus, moving and turning around, grooming, or expressing other natural behaviors are typically impossible. This course provides students with a farmer’s perspective on the sustainable management of cows, sheep and goats on a small farm. The course provides students with a clear understanding of how to think through the planning and management of cows, sheep and goats for meat production. All aspects from purchasing and nutrition to marketing and finances will be addressed. This course also brings awareness to the U.S. meat industry and supports students in becoming educated consumers and producers. Students will walk away with a rudimentary plan on how to incorporate ruminants into their small farm plan.

Aquaponics is the combination of aquaculture and hydroponic technology to grow both fish and plants together in a closed-loop system. While aquaponics can play a role in increasing food security, it may also be a potential educational tool because of its interdisciplinary nature and required technological skill set. With aquaponics, students could conduct hands-on activities involving chemistry, physics and biology to solidify their understanding of a range of theories. Food borne illnesses continues to be a public health challenge in the United States (U.S.); an estimated 9.4 million incident cases occurred in 2011. In view of this challenge we conducted two food safety studies; 1) related to product formulation (hummus spoilage challenge study) and 2) evaluating the microbial safety of domestic kitchen surfaces in Residential Child Care Institutions (RCCI pilot study).
