Food insecurity is a growing issue in developing and developed countries alike, and in countries like Belize, the prevalence of hunger has soared in recent years. Not having access to diets with sufficient calories and nutrients leads to a host of developmental issues, including stunting and cognitive delays. The purpose of this work was to create an all-encompassing manual for small-scale poultry production in order to provide nourishment for the students and staff of a school in Belize. Rice is an important staple for more than half of the world’s population and is the main staple in Bangladesh, accounting for 65 percent to 70 percent of the daily calorie intake. The importance of rice consumption and the high level of food insecurity in Bangladesh highlights the importance of having markets that efficiently price rice according to consumer preferences. Weaknesses in the grades and standards system in low-income countries across Sub-Saharan Africa undermine the transparency of agricultural markets. In the Democratic Republic of the Congo (DRC), Ghana and Mozambique rice is predominately sold in open bags and if rice price does not reflect its quality, then inefficiencies may lead to consumer welfare losses. Importantly, it is possible that impoverished communities are priced out of the market due to inflated and inefficient prices. The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. The DYD’s goal is to incentivize healthy eating among individuals of low income and promote spending at farmers markets. Food insecurity affects over 60,000 individuals in Washington and Benton counties in Arkansas. In the last 30 years, rice has become the number one food staple in Haiti, and rice imports have outpaced domestic production to supply the country’s increasing rice demand. Policy makers support the claim that increasing local rice supply will not only reduce the dependency on imported rice but also upheave the national economy. In 2012 and 2013, Arkansas ranked first in the nation in food insecurity in both categories of “low food secure” (21.2%) and “very low food secure” (8.4%) (Lilley, 2013; Coleman- Jensen, 2014).
