Mauritius faces food security and economic challenges due to its lack of a domestic dairy industry. To address this, the University of Arkansas partnered with the Ministry of Agro Industry and Food Security to explore the possibility of establishing a dairy sector on the island.

Through surveys and interviews with locals, including restaurant owners and grocery store customers, we investigated the demand for fresh milk. We also studied factors like consumer preferences and production costs. Our research, conducted with IRB approval, aimed to understand if people are willing to buy locally produced milk.

Over the past two decades, the diagnoses of gluten allergies and celiac disease has increased significantly. Although there has been no development of a cure for either ailment, these conditions can be managed by the elimination of glutenous foods from a person’s diet. In previous studies, the financial cost of replacing or excluding glutenous foods was higher than the financial cost of diets that do not exclude gluten. Additionally, the correlation between consumers’ demographics and their willingness to purchase imperfect produce at various price points was evaluated. This dissertation investigates three unique aspects of sustainable agricultural intensification (SAI) in the context of Bangladeshi rice production. The first article presents a qualitative analysis of SAI and farmer surveys in the embanked polder region of coastal Bangladesh. The second article investigates the global food security and environmental impacts of already adopted High Yielding Variety (HYV) rice and double-cropped rice systems in Bangladesh using a spatial partial equilibrium trade model and a Life Cycle Assessment (LCA). The purpose of this study was to describe agricultural information sources available to farmers and to describe food access and availability for the people of Dangriga, Stann Creek, Belize. This study used descriptive survey research methods with convenience sampling of the general public (n=22) and of farmers (n = 38) in the summer of 2017. Farmers use a variety of agricultural information sources with the extension service cited most often, followed by friends and fellow farmers. The 2008 food crisis prompted many food importing nations to reconsider the need to be self-sufficient especially in their staple food needs. This awakening led to the launch of the Coalition for Africa Rice Development (CARD) initiative with a goal to double rice production in Africa. Under the CARD umbrella member countries drafted individual National Rice Development Strategies (NRDS). Despite the fact that the recent rice policy has been moving to a strategy of self-sufficiency while the status quo of the national rice economy remains ambiguous, Malaysia has made an extreme policy decision to pursue an autarky economy in its rice sector, thus closing borders from the international markets in the future.
