Understanding consumer perceptions of carbon emissions in agriculture is a critical step to help increase the sustainability of food consumption. According to the Food and Agriculture Organization of the United Nations, 14.5 percent of all global anthropogenic GHG emissions are estimated to be represented by livestock (FAO), and cattle, raised for beef and milk, are the largest animal species responsible for emissions, comprising over 60 percent of the livestock sector’s emissions. Grapevines (Vitis species) are grown worldwide to produce table grapes, juice grapes, dried grapes, and wine with the United States as one of the world’s largest wine and grape producers. Though not a large contributor to the U.S. grape and wine industry, Arkansas’ industry plays an important role in the state’s agritourism and economy. Most grapes grown in Arkansas’ warm climate include native species, such as muscadines (V. rotundifolia) and hybrids (crosses of Vitis species). Arkansas has a long history of grape and wine production, and muscadine grapes (Vitis rotundifolia Michx.), a native disease-resistant grape, are an important part of that industry. Muscadine grapes can be sold as a fresh-market grape or made into juice, wine, and other products. Arkansas has a climate and geography that allows for the production of unique horticultural crops, including hops (Humulus lupulus L.), blackberries (Rubus subgenus Rubus), and muscadine grapes (Vitis rotundifolia). These crops not only have potential for growers in Arkansas but have unique flavor and aroma attributes that impact marketability. Volatile compounds present in many different agricultural plants are the primary source of biologically-derived aromas and flavors. Global population growth and increased meat demand present challenges for the agricultural industry to produce meat sustainably. In-vitro meat (IVM) is an alternative that could reduce negative impacts associated with livestock production. The goal of this study was to examine consumers’ preferences for IVM. A choice experiment was created with twelve choice tasks that varied across five attributes: production method (IVM or conventional), carbon trust label, organic label, animal welfare label, and price. 1,120 US consumers were randomly assigned to one of four information treatments, differing by information presented regarding IVM: 1) neutral (baseline), 2) positive, 3) negative, and 4) …

This project utilized a mixed-method needs assessment approach to urban agriculture in Arkansas, a predominately-rural state. Chapter II was a qualitative study, using semi-structured, in-depth interviews, that investigated the perceptions, needs, and experiences of Arkansas urban farmers and their interactions with the University of Arkansas Division of Agriculture Cooperative Extension Service (CES). Interviews were conducted with 16 urban farmers in Northwest and Central Arkansas. The interview data revealed individualized needs based on the size, years in operation, and mission of each urban farmer interviewed. The purpose of this study is to identify and describe the barriers that prevent local food producers from selling their food in a mainstream market. This study utilized both qualitative and quantitative analysis through a mixed-methods survey. Information collected through the study had a two-fold focus: barriers that producers face (or that they are providing assistance for) and what are consumers looking for in products that these producers are supplying. The major barriers found for local food producers in Arkansas were lack of capital and obtaining infrastructure for packaging, processing, and storing products.
