Market demand for instant rice--a processed form of rice that is cooked and dehydrated before it is sold--has risen tremendously and become a significant component of the rice industry. Compared to freshly cooked rice, the quality of instant rice (in terms of texture, color, aroma, etc.) is much lower. There exists little information regarding how instant rice’s storage conditions affect its quality. Such information may be elucidated by studying sorption isotherms which describe the storage temperature, relative humidity, and instant rice moisture relationships.

Wheat variety performance tests are conducted each year in Arkansas by the University of Arkansas System Division of Agriculture’s Arkansas Crop Variety Improvement Program.

The tests provide information to companies developing cultivars and marketing seed within the state and aid the Arkansas Cooperative Extension Service in formulating variety recommendations for small-grain producers. The tests were conducted at the Northeast Research and Extension Center at Keiser, the Vegetable Substation near Kibler, the Lon Mann Cotton Research Station near Marianna, the Pine Tree Research Station near Colt, and the Rohwer Research Station near Rohwer. Grapevines (Vitis species) are grown worldwide to produce table grapes, juice grapes, dried grapes, and wine with the United States as one of the world’s largest wine and grape producers. Though not a large contributor to the U.S. grape and wine industry, Arkansas’ industry plays an important role in the state’s agritourism and economy. Most grapes grown in Arkansas’ warm climate include native species, such as muscadines (V. rotundifolia) and hybrids (crosses of Vitis species). Arkansas is the leading soybean-producing state in the mid-southern United States. Arkansas ranked 11th in soybean production in 2021 compared to the other soybean-producing states in the U.S. The state represented 3.49% of the total U.S. soybean production and 3.49% of the total acres planted in soybean in 2021. The 2021 state soybean average yield was 52.0 bushels per acre, setting a new state record and surpassing the previous yield record of 51.5 bushels per acre set in 2020. The top five soybean-producing counties in 2021 were Mississippi, Phillips, Crittenden, Poinsett, and Arkansas (Table 1). These five counties accounted for …

The war in Ukraine and the lingering effects of the COVID-19 pandemic are pushing input costs to record levels. Although rice prices have increased some in the last several months, production costs have increased more than proportionally, undermining rice profitability.

We project global rice production will surpass global rice consumption for most of the coming decade, with a small deficit developing by the end of the projected period.

The projected growth in production is almost exclusively due to productivity gains since the global rice area is projected to increase only marginally by 2029–2031.

Direct-seeding is the most frequently utilized planting practice in Arkansas and Mid-South rice (Oryza sativa L.) production. Enhanced plant density and more rapid rice canopy formation may result from the implementation of innovative plant arrangements and spacings. Studies were initiated in 2019 and continued into 2020 to examine different cultural management practice experiments, including evaluating the impacts of planting arrangement, row spacing, and seeding rates on rice stand density, canopy coverage, grain yield, and milling yield. Formation of harmful microbes and their associated mycotoxins on rough rice during storage present negative socioeconomic impacts to producers and consumers. The objective for this study was to investigate the impact of treating rough rice with selected infrared (IR) wavelengths at different IR intensities and heating durations, followed by a tempering step for further inactivation of microbes (mold and bacteria) on the grain. Freshly-harvested long-grain, hybrid, rough rice (XL 745) with initial moisture content (IMC) of 18.4% wet basis (w.b.) was used. Rice production differs from most other field crops by distinct differences in yields across cultivars and rice producers being paid for yield after post-harvest milling. Using eleven years (2003-2013) of Arkansas harvest data from performance trials in six different locations, hybrids have 19% higher paddy yields and head rice yield rate 1.7% lower than conventional cultivars. Given the 2014 Farm Bill’s emphasis on crop insurance as a risk management tool for producers, these variations in yield among cultivars have significant implications for rice producers. Comparing national level, crop insurance data on corn, soybeans and rice indicates rice producers strongly prefer …

The objective of this research was to quantify and assess the energy use and efficiency of commercial cross-flow dryers when drying rice using a range of drying and ambient conditions. First, equations that predict the theoretical energy required to dry rice from any given initial moisture content to a desired final moisture content were developed for several rice cultivars using a semi-theoretical approach to obtain a basis for comparison to calculate energy efficiency. Theoretical energy requirements, expressed as the energy required per unit mass of water removed, increased exponentially as initial moisture content decreased. This study brought together an advisory team of agricultural communications professionals to gather perceptions of crisis communications educational needs for new professionals and to identify the best practices for using Second Life© (SL), a 3-D virtual world, simulations for training. Previous research has indicated that while drying rough rice using air temperatures above the glass transition temperature (Tg), head rice yield (HRY) reductions are incurred if a state transition occurs when severe intra-kernel moisture content (MC) gradients are present. State transitions can occur by extended drying using high-temperature air or by cooling kernels below Tg before sufficient tempering has occurred. The objectives of this experiment were to determine the maximum MC removal per initial drying pass and the associated tempering durations required to prevent HRY reduction. Vietnam shifted rapidly from being a net rice importer prior to 1987 to become the second largest world rice exporter by 1995. Net rice exports have leveled off at about 3.8 million metric tons from 1997 to 1999. The world rice price has dropped dramatically in 2000 to barely cover the rice production cost in Vietnam, and net rice exports are expected to fall to 3.4 million mt because of the poor import demand in 2000. When a rice kernel fissures, it can break in subsequent food processing operations and lose its commercial value. Head rice yield (HRY) is a measure of the percent of kernels that remain whole (at least three-fourths of original length) after rice has been milled. Our experiment was designed to test the effect of a rapid state transition during drying and tempering processes using cultivars Bengal and Cypress. ‘Bengal’ is a medium-size kernel and ‘Cypress’ is a longsize, thinner grained cultivar. In this study, the Myanmar rice economy is described in the context of the current political situation and state of national economic development. The forces that are changing rice production and exports are identified; however, the rate of development involves a complex integration of government intervention and politics, as well as availability of resources. Probable scenarios for rice production and export are projected based on recent growth trends and expected infrastructure development. The Arkansas Global Rice Model is used to integrate the Myanmar rice sector with the global rice market in developing projections.
