Breast myopathies have caused significant economic losses to the poultry industry over the last decade. The induction of woody breast (WB), white striping (WS), and spaghetti meat (SM) have caused textural issues, functional issues, and a decline in consumer acceptance. Of these three myopathies, WB causes the most pronounced effects on product quality and reduces functional use. Woody breast is also commonly associated with expansive breast meat growth/high performing broilers. However, progress in reducing these myopathies has been limited without hindering other aspects of poultry rearing. Necrotic enteritis (NE), caused by C. perfringens and coccidiosis, is responsible for substantial economic loss annually. In the first chapter, we investigated the effect of secondary bile acid on necrotic enteritis. Day-old broiler chicks were randomly assigned to 5 groups of diets supplemented with 0 (basal diet), 0.8, 1.0, and 1.5 g/kg (on top of basal diet) deoxycholic acid (DCA). The birds were challenged with Eimeria maxima (20,000 oocysts/bird) at d 18 and C. perfringens (109CFU/bird/day) at d 23 and d 24 to induce NE. According to USDA FAS, in 2017, the US was the largest broiler-producing country with 18.696 million metric tons and the second largest exporter of broiler products with 3.075 million metric tons (Brazil is the largest exporter with 3.847 million metric tons). Thus, around 83% of US production is consumed domestically. According to USITC, chickens are the most important protein source in the US, and Americans consume more chicken per capita than any other country. However, while the broiler industry is a key segment of US agriculture, it is underserved by large-scale supply-chain and trade models.

Currently, several niche markets, such as organic and “all natural”, are marketed within the poultry industry. However, little research has been undertaken to determine the cost-effectiveness of poultry diets used to produce chicken within these markets. Specifically, the economics and resulting profits associated with raising chicken with antibiotic-free, all-vegetable (AV) diets are not evaluated. As national chain restaurants such as Chick-fil-A and Panera Bread begin to mandate poultry suppliers raise chicken without antibiotics and use AV diets, it becomes increasingly important to evaluate the economics for integrators. Two 3-week experiments were conducted, each using 480 day-old male broilers placed randomly among 96 battery cages (5 per cage; 680cm2 per bird), to evaluate the influence of phytase supplementation, with or without supplemental xylanase, on bird performance. Individual body weights and cage feed weights were taken on days 0, 7, 14, and 21, and mean BW, body weight gain (BWG), feed intake (FI), and FCR over each period calculated. An increase in the consumption of poultry has generated an increase in demand for higher yielding broilers. This has led to an increase in atypical meat and issues with appearance. Color is a direct result of a pH decline as meat goes through rigor mortis with meat generally becoming lighter. If the pH declines too rapidly or too slowly, meat quality can suffer. Physical properties of meat can be altered by pH. A fast pH decline results in pale meat with decreased tenderness. A slow pH decline can result in darker meat with a reduced shelf-life. Recently, the poultry industry has encountered an emerging muscle myopathy known as woody breast (WB), which is characterized by hardness throughout the Pectoralis major muscle. Two experiments were performed to assess sensory characteristics and acceptability of WB meat and to determine the effect of broiler age on meat quality factors in varying severities of WB. Fillets were categorized as normal (NORM), moderate (MOD), or severe (SEV) WB. Consumers are increasingly concerned with the use of antibiotics and hormones in poultry production, and the news media is the primary way consumers gain knowledge about this subject. This study assessed articles about antibiotic and hormone use in poultry production from the New York Times, USA Today, and the Wall Street Journal from 1994 to 2014. This study employed a content analysis methodology to assess selected articles (n = 139) for key messaging about antibiotic and hormone use in poultry production, article tone, article framing, and article journalistic quality.
