Brewer’s spent grains (BSGs), a byproduct from beer production, are generated in excess globally. Most often, they are sold or given to proximate cattle farmers for use as feed. However, spent grain can also be used as a medium for fungal cultivation. Given that certain fungal species have the capability to degrade lignin and produce protein, the cultivation of fungi on spent grains may serve to enhance the nutritional profile of the grains for their use as cattle feed. This thesis consists of two chapters discussing the economics of raising stocker beef cattle in the southeast United States. The objective of the first chapter is to estimate supplemental feed cost for spring-calving cows, spring-born stockers, cows calving in the fall, and fall-born stockers, while considering the seasonality of forage production and nutritional needs. The chapter explores ways producers can lower their feed costs and demonstrates the importance of managing hay expenses for cattle producers to control cost. Johne’s disease is a scourge to dairy farmers all over the world. It is an infectious disease that causes chronic inflammation and lesions along the inside of the small intestine of, primarily, ruminant animals (i.e., cattle and sheep). It is an incurable disease and urgently requires new and radical intervention strategies. Apart from careful on-site farm management practices, little can be offered to farmers to reduce the risk of infection, and nothing short of livestock culling is effective once an animal becomes infected. Currently, there are no vaccines licensed in Ireland or antibiotic treatment strategies available for Johne’s disease. This …

Genome annotation has a direct impact on the success of genomic studies. Transcriptome analyses and chromatin immunoprecipitation and sequencing (ChIP-seq) have been used to functionally annotate genomes. These methods can identify protein-coding genes, non-coding transcripts, and cis-regulatory elements across the genome. The primary objective of the first study was to functionally annotate the equine genome through the assessment of nine tissues: adipose, brain, heart, lamina, liver, lung, skeletal, muscle, testis, and ovary. In the first project, 150 bp, paired-end RNA sequencing (RNA-seq) libraries were generated in stallion tissues and compared to previously generated mare RNA-seq libraries to quantify variation in …

Failure of beef carcasses to achieve desirable carcass specifications represent inefficiencies within the supply chain, namely greater carcass processing costs and the inability of the resulting primal cuts to conform to high-value market specifications. Analysis of a representative sample of prime Irish beef cattle conducted in this thesis determined that 59% of cattle fail to achieve the desired carcass specifications of the supply chain at slaughter. The objective of this thesis was to use readily available information to define strategies that could help to reduce this statistic. In June 2010 the Cattle Industry Funding Scheme (IFS) was introduced to address biosecurity threats relevant to the Western Australian (WA) cattle industry. The Scheme was established under the Biosecurity and Agriculture Management Act 2007 to enable cattle producers to identify the pest and disease priorities at a whole-of-industry level and to raise funds for activities to address these priorities.

A finishing study evaluated the performance, carcass characteristics and fatty acid profiles of steers fed four inclusions of a novel feedstuff Green Grass. Green Grass is a product comprised of sesame meal, giant kelp, cassava, and sorghum containing high concentrations of polyunsaturated fatty acids. No differences were observed in initial BW, final BW, BW gain, HCW, LM area, 12th rib fat depth, calculated YG, or liver abscess %. Dry matter intake linearly increased as Green Grass inclusion increased in the diet. Steers fed Green Grass had lower G:F than control cattle, and steers fed 30% Green Grass had a …

Traditional and genetic parasitological identification procedures were compared using naturaland artificial nematode parasite infections in Holstein steer calves. The traditional parasitological procedures measured fecal egg counts, coprocultures with subsequent larval collection and adult nematodes collected at necropsy. The genetic identification procedures measured ITS-2 sequences extracted from different stages of nematode development: raw feces, concentrated nematode eggs, third stage larvae and adults. The primary nematodes observed were Cooperia oncophora, Cooperia punctata and Ostertagia ostertagi. The traditional techniques were not significantly different from one another, while the genetic sequencing showed variation amongst the different procedures. The raw feces sequences showed the most …

This study compared the effect of supplemental whole cottonseed in a weaned calf ration on cattle productivity. Feed is the main cost for livestock production. Whole cottonseed supplementation may increase production and reduce the cost of gain for the ration. During the study, 18 beef calves were weaned and split into two groups and fed, with and without WCS, for 50 days to determine the effect of supplemental whole cottonseed. Productivity was determined by measuring average daily gains for each group and comparing cost of gain for each ration. It was determined that WCS did increase productivity of weaned calves …

Nutrient inputs from cattle dung are crucial drivers of nutrient cycling processes in grazed ecosystems. These inputs are important both spatially and temporally and are affected by variables such as grazing strategy, water location, and the nutritional profile of forage being grazed. Three studies evaluated the effects of corn silage hybrid, inclusion level and kernel processing in growing and finishing diets. Two more studies were conducted on high protein dried distillers grains and its effect in finishing diets. Experiment 1 and 2 evaluated three corn silage hybrids; standard (CON; hybrid-TMF2H708), brown midrib (bm3; hybrid-F15579S2) and Unified™ brown midrib with SilaSoft™ kernel technology with a floury endosperm (bm3-soft; hybrid-F15578XT) harvested with or without kernel processing on growth and metabolism. When eukaryotes are exposed to stressors such as heat, toxins, and low oxygen levels, heat shock proteins (HSPs) are synthesized to maintain normal cellular function within the body. Single nucleotide polymorphisms in the heat shock protein 70 (Hsp70) gene have been associated with calving percentage, and Julian calving date in spring-calving crossbred Brahman cows (Rosenkrans, et al., 2010). Brassica carinata is an oilseed crop that requires a relatively short growing season and produces high crop yields. It is a great source for aviation biofuel, however it produces a large amount of waste that may be used as a protein supplement for cattle. We tested the effects of solvent- or mechanically-extracted carinata meal as a protein supplement to ad libitum ground or long-stem corn residue (i.e., corn plant left over from grain harvest) had on cow performance and digestibility. The DAFWA-NBF project is committed to identifying growth and value creation opportunities for the WA Beef industry and have engaged PwC to estimate the value of increased security of supply.
A joint PwC/NBF team have developed a WA beef value chain model to better understand the industry’s potential and establish the potential value associated with changes in the security of supply.
Results indicate that, over a five to twelve year timeframe, the WA Beef industry might have the potential to grow cattle disposals, double revenue to $1.2B and increase profit by $0.5B.

Bovine Johne’s disease (BJD) is an infectious disease of cattle caused by Mycobacterium avium subsp. paratuberculosis (Mptb) that can also affect other ruminants such as goats, alpaca, sheep and deer. It causes chronic wasting and incurable diarrhoea leading to deaths in mature cattle. Subclinically affected animals may have reduced growth and milk production levels.
The WA cattle industry needs to determine what level of protection from BJD incursion and spread is required for WA, including at the border, and how this is best achieved. The primary decision to be made is whether BJD is best managed on a statewide basis …

During the past three decades, Shiga toxin-producing E.coli (STEC) have emerged as an important food safety concern. Although initially E. coli O157 was the main focus, recent outbreaks and resulting investigations have shown that certain non-O157 STEC are as much a threat to food safety as their O157 counterparts. To the beef industry, STEC have been of particular concern due to the frequent association of beef and beef products as vehicles of STEC infection. The primary objective of this study was to estimate variance components and heritability of bovine respiratory disease (BRD) incidence in beef calves before weaning and during the finishing phase. The second objective was to investigate the impact of BRD incidence and treatment frequency on performance and carcass traits. Bovine respiratory disease is the biggest and most costly health challenge facing the cattle industry. The 2 populations used consisted of 1,519 preweaned calves and 3,277 head of feedlot cattle. Interest in substituting legumes for N fertilizer in beef cattle grazing systems has recently increased with rising fertilizer prices. Legumes are well known for their ability to fix atmospheric N and decrease dependence on input of N fertilizer. Beef cattle are estimated to directly contribute 26% of U.S. agricultural greenhouse gas (GHG) emissions, and future climate change policy may target reducing these emissions. Life cycle assessment (LCA) of GHG emissions from U.S. feedlot beef cattle was conducted to compare methods of the U.S. Environmental Protection Agency (EPA) with a more complete evaluation of emissions. The purpose of this research was to evaluate the economic tradeoffs and land use dynamics of incorporating switchgrass into the farm plan of a representative middle Tennessee cow-calf operation. A net revenue simulation and multi-year mathematical programming model was used to find the optimum mix of switchgrass and cow-calf enterprises that will maximize whole farm net revenues over 30 years on a representative middle Tennessee beef farm under both average and above average management. Land use changes predicted by the mathematical programming model were used to assess the carbon change associated with incorporating, or transitioning to, switchgrass production.
