ABSTRACT

Extension agricultural business programs have provided enhanced individualized services to Vermont’s agricultural producers by using a variety of external funding sources combined with base departmental funds. These farm business programs are uniquely positioned to deliver one-on-one outreach education and information that not only has a direct benefit to private farm business owners but indirectly serves the public good by enhancing farm business viability. Meanwhile, there is an ongoing cultural shift among Extension professionals and farm owners who acknowledge that Extension programs cannot be sustained at low or no cost to participants. Farm-to-school (FTS) programs are supported at federal, state, and local levels as a cross-sectoral intervention to curb rising levels of obesity, strengthen local food systems, and improve school climate and academic outcomes. Comprehensive FTS programming, according to the “3-C” approach embraced by leaders in the FTS movement, includes interventions in three domains: the cafeteria, classroom, and community. FTS programming in these domains may include procurement of local food; school gardens; and education related to food, agriculture, and nutrition. The rural-urban interface (RUI) is a complex landscape impacted by a variety of social and economic processes. Substantial U.S. agricultural production occurs at the RUI despite non-farm development pressure. Notably, at a time when U.S. farming is increasingly dominated by a shrinking number of large scale operations, RUI agricultural production occurs primarily on small and medium farms. Importantly, RUI farms exhibit greater diversity in terms of operator demographics, production type, and marketing channels, than their large-scale counterparts.

Dairy farmers in the Northeastern Unites States are paid based on the amount of fat and protein in their cows' milk, and improving fat and protein production is linked with improved financial sustainability for dairy farms. However, not all farmers are motivated to make changes to increase milk fat and protein production. Previous research has identified a positive correlation between a group of fatty acids, known as the de novo fatty acids, and the fat and protein content of bulk tank milk from commercial dairy farms. School garden-based education programs have become an increasingly popular tool to improve children's nutrition, yet evaluations have found mixed results. This study analyzes three years of student surveys collected before and after one year of participation in the American Heart Association's Teaching Gardens program. Analysis was guided by the Social Cognitive Theory, and measured changes in determinants of healthy eating behavior: preferences for fruits and vegetables, gardening skills, food systems learning, and perceptions of self-efficacy and social norms regarding fruit and vegetable consumption.
