There is much interest in locally produced food and the benefits it can have on communities across the state of Kansas. By interviewing city managers, we have identified some of the unique factors and challenges that city officials face when considering their community’s local food systems. Through interview and survey data, we sensed that there is a desire for more local food in communities but lack of resources, lack of policies and the nature of large commodity agriculture in Kansas appear as challenges. The cost of building a high tunnel fluctuates over time with supply prices. This Excel workbook accompanies the USU Extension fact sheet, "Constructing a Low-cost High Tunnel" by Black, Drost, Rowley, and Heflebower (2011) and allows users to input local supply costs. The workbook then calculates the cost to build a USU low-cost high tunnel with several design options according to high tunnel length and door structure. It also provides an example calculation based on April 2022 pricing for reference.

This thesis brings together two studies of local food systems in Vermont and New England. The first study focuses on the experience of Vermont local food businesses during the Covid-19 pandemic by combining two surveys conducted in the first half of 2021: one of foodservice operations that procure food locally and one of Vermont farms that sell directly to consumers. We analyzed descriptive statistics, open responses, and conducted Kruskal-Wallis rank sum tests to assess which factors were related with business’ financial status before and since the pandemic. This study provides a mixed-methods approach in analyzing a potential closed-loop system between renewable biogas production from anaerobic digestion, vermiculture production, aquaculture production, and organic wastes with a particular focus on stillage wastes. Such system may hold significant promise for significantly reducing organic carbon and methane emissions from its components, and should be assessed for such. The common property nature of the Mississippi River Alluvial Aquifer (MRAA) results in the formation of a cone of depression in the southern portion of the aquifer encompassing Concordia parish, Louisiana. Excessive groundwater withdrawal and the resulting cone of depression formation have caused some wells to go dry and others to be affected by saltwater intrusion. The depleting groundwater stock can be managed optimally using different groundwater management policies. The findings of this dissertation are relevant to both policymakers and researchers to understand the effects of policies to keep the aquifer sustainable.
