Cereal Source And Microbial Consortia Of The Starter Culture Influence The Chemicalcomposition And Physicochemical Characteristics Of Boza, Mehli̇ka Borcakli, Tarik Öztürk, Erdem Yeşi̇lada

Turkish Journal of Agriculture and Forestry

Boza is a popular cereal-based traditional beverage particularly consumed during winter months in Balkan countries and Turkic societies. The present study aims to investigate the influence of different cereal sources and starter cultures used in the commercial production of boza on its chemical and microbiota compositions and physicochemical characteristics. Detailed experimentation has revealed that chemical compositions, i.e. carbohydrates (beta-glucans, starches), organic acids, vitamins, dietary fibers, proteins, fat, and minerals, along with physicochemical characteristics, are subject to significant differentiation depending upon the cereal types and microbial consortia of the starter culture used in boza production. These variations also influence the physicochemical …

Characterization Of The Beta1 Gene, Which Might Play A Role In Beta Vulgaris Subsp. Maritima Salt Tolerance, Özge Uysal, Çi̇ğdem Çakiroğlu, Ahmet Koç, Hüseyi̇n Çağlar Karakaya

Turkish Journal of Botany

Salinity stress has a negative impact on plant growth, which affects homeostasis and productivity. The uptake of nonessential salt ions changes the osmotic balance of the cell and causes dehydration. Higher plants develop salt tolerance mechanisms to avoid dehydration. Sea beet (Beta vulgaris subsp. maritima) is a halophytic ancestor of cultivated sugar beet that displays salt stress tolerance. In this study, we screened a B. vulgaris subsp. maritima cDNA library in Saccharomyces cerevisiae strain Ab11c (ena1Δ, nha1/4Δ, nhx1Δ), which is deficient in sodium transport, to find sodium-detoxifying genes. We identified a cDNA construct, named BETA1, providing salt tolerance to yeast …

The Effect Of Live Saccharomyces Cerevisiae Yeast In The Diet Of Rams On The Digestibility Of Nutrients, Nitrogen And Mineral Retention, And Blood Serum Biochemical Parameters, Barbara Kowalik, Jacek Skomial, Renata Miltko, Malgorzata Majewska

Turkish Journal of Veterinary & Animal Sciences

The effect of live Saccharomyces cerevisiae yeast added to the diet of rams on the digestibility of carbohydrates and protein in the total tract, retention of nitrogen and mineral elements, and concentration of biochemical parameters in blood serum was examined. The experiment was carried out on 12 Corriedale rams allocated to 2 groups of 6 animals each. The control group was fed meadow hay (45.4%), concentrate (53.2%), and a vitamin?mineral mixture (1.4%), while the second group was fed the same diet supplemented with 2 g day-1 live S. cerevisiae. Adaptation to feeding lasted 21 days; the sampling period lasted 7 …

S. Cerevisiae $\Beta$-Glucan Reduced Viability Of Mouse Hepatoma Cells In Vitro, Artur Javmen, Ausra Nemeikaite-Ceniene, Saulius Grigiskis, Irena Jonauskiene, Mark Rudenkov, Darius Kacianauskas, Mykolas Mauricas

Turkish Journal of Biology

$\beta$-Glucan is a natural polymer, which is widely studied due to its multiple immunomodulatory properties. In addition, recent findings indicate potent antitumor properties of $\beta$-glucan. Saccharomyces cerevisiae, baker's yeast, is one of the commonly used sources of $\beta$-1,3-glucan. The aim of this work was to investigate S. cerevisiae $\beta$-glucan immunomodulatory activity against cancer cells. In our experiments, BALB/c mice were fed with insoluble whole $\beta$-glucan particles, and then their blood was collected for experiments. MH-22a hepatoma cells were treated with the blood of mice fed with $\beta$-glucan, and tumor cell viability was investigated after the treatment. The obtained results demonstrated that leukocytes …

Analysis Of The Effects Of Chromatin Modifying Complexes On The Transcription Of Retrotransposon Ty2-917 In Saccharomyces Cerevisiae, Sezai̇ Türkel, Bükay Yeni̇ce

Turkish Journal of Biology

Transcription of the yeast retrotransposon Ty2-917 is regulated by a complex set of regulatory regions located both upstream and downstream of the transcription initiation site. In this study, it was found that certain chromatin modifying factors are essential for the transcriptional regulation of Ty2-917. Among the chromatin binding factors tested in this research, non-histone proteins Nhp6A/B have the largest effect on the transcription of Ty2-917. In Dnhp6A/B double mutant yeast strain transcription of Ty2 decreased 20-fold, indicating that these non-histone proteins are essential for the transcription of Ty2-917. Furthermore, it was also shown that the transcription of Ty2-917 decreased by …

Evidence For The Presence Of A Second Electron Donor For The Cytoplasmic Thioredoxins In The Yeast Saccharomyces Cerevisiae, Ahmet Koç, Hüseyi̇n Ç. Karakaya, Ercan S. Ünlü Jan 2006

Evidence For The Presence Of A Second Electron Donor For The Cytoplasmic Thioredoxins In The Yeast Saccharomyces Cerevisiae, Ahmet Koç, Hüseyi̇n Ç. Karakaya, Ercan S. Ünlü

Turkish Journal of Biology

In yeast, the cytoplasmic thioredoxin system is composed of NADPH, thioredoxin reductase-1 (TRR1) and 2 thioredoxin genes (TRX1, TRX2). In this study, using yeast knockout mutants for TRR1, TRX1 and TRX2 genes, the role of the thioredoxin system in methionine sulfoxide reduction was investigated. Cells lacking both TRX1 and TRX2 genes simultaneously were not able to reduce methionine sulfoxides to methionine; however, mutants missing the TRR1 gene were able to reduce methionine sulfoxides to methionine, which showed that electrons could be transferred from NADPH to thioredoxins in the absence of TRR1. Similar results were observed for 3-phosphoadenosine 5-phosphosulfate reduction in …

The Use Of Ram Horn Hydrolysate As A Supplement For Glycerol Production By Yeast, Esabi̇ Başaran Kurbanoğlu, Namudar İzzet Kurbanoğlu

Turkish Journal of Biology

This study describes the interesting potential of ram horns to be used as a supplement for glycerol production in batch fermentation. The use of ram horn hydrolysate (RHH) as a supplement for glycerol production was investigated using baker’s yeast, Saccharomyces cerevisiae. For this purpose, RHH was first produced. The production and chemical composition of the RHH was as described in our previous study. The effects of different concentrations (1 to 10% v/v) of RHH on the production of glycerol were investigated, and 8% RHH was found to be optimal. The content of glycerol in the culture broth containing RHH (6.3 …
