The purpose of this work is to study the influence of lipolytic enzymes on the fermentation activity and fractional composition of alcohol by the yeast Saccharamyces cerevisea during alcoholic fermentation. Lipolytic enzymes, intensifying the fermentation process and increasing the yield of the target product, have a positive effect on the physiological activity of yeast cells. Hydrolysis of carboxylic acid esters also occurs due to the hydrolase activity of lipases. In the presence of exogenous lipases, hydrolysis of lipids occurs due to the hydrolase activity of lipases and the fractional composition of alcohol changes. The content of esters is reduced by …

A total of 1,188 pigs (L337 × 1050; PIC; initial BW of 11.1 lb) were used in a 40-d trial to determine the effect of a combination of mannan oligosaccharides, yeast culture, and beta-glucans (AgriMune Liquid; AFI-Agri Feed International, L.L.C., Rockwell, IA) on growth performance, morbidity, and mortality of pigs during the nursery period. The normal flora community plays a significant role in both healthy and patient individual’s bodies. It has improved its ability to change from beneficial to opportunistic organisms causing crucial infections in immunocompromised patients. This study was conducted to identify the community of yeast species, and to investigate potential virulence factors. Saliva samples were collected from healthy individuals, yeast species were isolated and identified using both traditional and advance molecular genetics technique. The results revealed that Candida albicans was the dominant isolate, while Meyerozyma caribbica was the least. Identification And Polar Lipid Composition Analysis Of Yeasts Isolated From Sufu Manufacture, Chen Si-Kai, Lin Sheng-Jie, Li Li

In order to characterize lipid metabolism of yeasts during sufu manufacture, 23 isolates from sufu pehtze and acidic tofu whey were identified. Ultra-high performance liquid chromatography-tandem mass spectrometry (UHPLC-MS/MS) was used to analyse the lipid fingerprints of 7 strains of yeast, after the determination of lipase activities. It is suggested that lipid fingerprint mainly includes 2 kinds of sphingosine, 16 kinds of amide, 22 kinds of ester and 3 kinds of fatty acid. Kluyveromyces marxianus SP-1 and Candida (Pichia) norvegensis SP-5 show highest relative amount of 2-Amino-1,3,4-octadecanetrio and N, N-Dimethylsphingosine, which indicates potential for sphingolipids synthesis. Boza is a popular cereal-based traditional beverage particularly consumed during winter months in Balkan countries and Turkic societies. The present study aims to investigate the influence of different cereal sources and starter cultures used in the commercial production of boza on its chemical and microbiota compositions and physicochemical characteristics. Detailed experimentation has revealed that chemical compositions, i.e. carbohydrates (beta-glucans, starches), organic acids, vitamins, dietary fibers, proteins, fat, and minerals, along with physicochemical characteristics, are subject to significant differentiation depending upon the cereal types and microbial consortia of the starter culture used in boza production. Salinity stress has a negative impact on plant growth, which affects homeostasis and productivity. The uptake of nonessential salt ions changes the osmotic balance of the cell and causes dehydration. Higher plants develop salt tolerance mechanisms to avoid dehydration. Sea beet (Beta vulgaris subsp. maritima) is a halophytic ancestor of cultivated sugar beet that displays salt stress tolerance. The process of browning seriously influence the cider quality, but the glutathione producing by yeast can inhibit browning in the production and storage of cider. The glutathione (GSH) producing strain Saccharomyces cerevisiae Y18 was chosen as the starting strain, and after ultraviolet mutagenesis and diethyl sulfate mutagenesis, the strain highly producing GSH was screened by 96-well plates. Secondary screening was carried out by comparing fermenting power and GSH concentration after strain culture in shaker. $\beta$-Glucan is a natural polymer, which is widely studied due to its multiple immunomodulatory properties. In addition, recent findings indicate potent antitumor properties of $\beta$-glucan. International Journal of Speleology

We provide a review of fungi, yeasts, and slime molds that have been found in natural solution caves and mines worldwide. Such habitats provide frequent roost sites for bats, and in eastern North America the environmental conditions that support white-nose syndrome, a lethal fungal disease currently devastating bat populations. A list of 1029 species of fungi, slime moulds, and yeasts in 518 genera have been documented from caves and mines worldwide in 225 articles. Ascomycota dominate the cave environment. Most research has been conducted in temperate climates, especially in Europe. A mean of 17.9±24.4SD fungal species are reported per study. …

Transcription of the yeast retrotransposon Ty2-917 is regulated by a complex set of regulatory regions located both upstream and downstream of the transcription initiation site. In this study, it was found that certain chromatin modifying factors are essential for the transcriptional regulation of Ty2-917. Among the chromatin binding factors tested in this research, non-histone proteins Nhp6A/B have the largest effect on the transcription of Ty2-917. In Dnhp6A/B double mutant yeast strain transcription of Ty2 decreased 20-fold, indicating that these non-histone proteins are essential for the transcription of Ty2-917. In yeast, the cytoplasmic thioredoxin system is composed of NADPH, thioredoxin reductase-1 (TRR1) and 2 thioredoxin genes (TRX1, TRX2). In this study, using yeast knockout mutants for TRR1, TRX1 and TRX2 genes, the role of the thioredoxin system in methionine sulfoxide reduction was investigated. Cells lacking both TRX1 and TRX2 genes simultaneously were not able to reduce methionine sulfoxides to methionine; however, mutants missing the TRR1 gene were able to reduce methionine sulfoxides to methionine, which showed that electrons could be transferred from NADPH to thioredoxins in the absence of TRR1. This study describes the interesting potential of ram horns to be used as a supplement for glycerol production in batch fermentation. The use of ram horn hydrolysate (RHH) as a supplement for glycerol production was investigated using baker’s yeast, Saccharomyces cerevisiae. For this purpose, RHH was first produced. The production and chemical composition of the RHH was as described in our previous study. Modem scanning electron microscopy yields structural information down to 2 to 5 nm from thin, beam transparent biological specimens. This paper examines the possibilities of garnering this level of structural information from bulk, frozen-hydrated samples.

Freeze-fractured, frozen-hydrated yeast cells, frequently taken as a yardstick to monitor progress in low-temperature scanning electron microscopy, have been used to optimize both metal shadowing methods and observation parameters (e.g. accelerating voltage, electron beam irradiation of the specimen).

Uncoated frozen-hydrated yeast cells do not charge electrically at an accelerating voltage of 30 kV. Increasing charging effects are however observed with decreasing accelerating voltages. Very thin …

Cryo-preparation is a reliable technique for the structural investigation of food products in low temperature scanning electron microscopy (SEM). Artifacts, such as, the segregation of water/non-water ingredients, occur during the freezing process by the crystallization of ice; they can be helpful for correct interpretation of visualized details, e.g., the detection of water containing compartments. The size of the segregation structures depends on water concentration and specimen thickness. The intracellular localization of heavy metals in yeast cells was studied by means of energy-dispersive X-ray microanalysis. The yeast, Saccharomyces cerevisiae, was pretreated with phosphate and then loaded with different metal ions, by suspending the cells in salt solutions (Ni, Zn, Cd, Pb, Al and Cr). For the analysis, the cells were embedded in gelatin, rapidly frozen, and thin cryosections were cut on a dry knife.
