Abstract There are eight foods that contribute to food allergies in the western world and peanut is the most common. Currently, there are no medical treatments that can cure an individual of food allergy, so avoidance of the allergic food is the only option. In the United States, there are three immunodominant allergic proteins accountable for patient sensitization to peanut, Arachis hypogea 1, 2, and 3 (Ara h 1, Ara h 2, Ara h 3). A Maine native, Darlene French hails from South Bristol. After spending part of her childhood in Florida, the family moved back to Maine and settled in Boothbay Harbor. After several years in restaurants and catering, French applied for a position in school food service. She was hired as a cook, she took every training available to her, and advanced to baker, and then manager, and finally is the current food service director in Boothbay Harbor.

Opaque fluids have a limited irradiation transmission. Thus, their decontamination employing near UV irradiation poses significant technical challenges. In the present study, a thin UV-transparent/waterproof glue layer coated with a 1.5 wt% of TiO2 and a new PhotoReactor Cell were implemented. TiO2 irradiation in the PhotoReactor Cell was effected on the TiO2 particle side, not directly in contact with the fluid, allowing the postulation of an “h+” site mobility mechanism on photocatalysis.

The broad goal of this thesis was to examine the extent to which Food Technology in secondary schooling enables a pathway into the study of Food Technology at a higher education level. The study was guided by Technacy Genre Theory as it was assessed as offering the most contemporary approach in the literature for examining forms of technological knowledge through measuring the relationship between Human, Tool and Material/Ingredients of technological practice. The research found that Food Technology teaching in many secondary schools was significantly different to the genre practiced by the vast majority of professional Food Technologists.

Many Mexican women consume inadequate amounts of folic acid. Fortification of the corn tortilla could be an effective way to help increase the folic acid levels among the Mexican population. Previous studies have shown significant folic acid losses in fortified tortilla dough (masa) as it is held before baking. This loss in folic acid could be due to degradation by lactic acid bacteria naturally present in the masa. The microflora of traditionally made nixtamalized corn masa from six tortilla mills in Guadalajara, Mexico were isolated and characterized, and their effect on folic acid content was evaluated. To develop a dispersive Raman spectroscopic method for measuring amylose-amylopectin ratios of corn starch mixtures, 67 mixtures were prepared by randomly mixing waxy and normal corn starches. Amylose contents were measured using a dual wavelength iodine binding colorimetric method. Raman data were collected from 250 to 3200 cm-1 using optimized instrument parameters. Partial least-squares (PLS) and principal components regression (PCR) were used to prepare multivariate calibration models; however, PLS commonly outperformed PCR. Truncating the spectra to 250 to 2000 cm-1 improved the results (r2 of validation = 0.831, SEP = 2.90%). Removal of a cold water swelling …

This study was conducted to determine presence, antibiotic resistance, and genetic relatedness of Campylobacter on diverse farm types. Cloacal fecal samples from poultry (broilers, layers, and turkey breeders), and fecal rectal samples from non-poultry animals (farrowing sows, finisher pigs, and lactating dairy cows) were tested for Campylobacter using BAM protocols. Agar disk diffusion method was used to determine antibiotic resistance, and PFGE analysis to determine genetic relatedness of isolates recovered within the different farm types. Campylobacter was detected in 34.8% (range of 6.7 to 62.0%, P < 0.001) of cloacal samples from poultry, in 61.4% (range of 55.0 to 69.0%, P < 0.05), and 26.0% (range of 19.0 to 34.0%, P < 0.05) of rectal samples from pigs, and dairy cows, respectively. A definitive structure of the native casein micelle structure continues to elude researchers. Data and images obtained via cryo - transmission electron microscopy of isolated native casein micelles allowed for the reconstruction of a three dimensional model of the micelle; which contains water filled cavities (ca. 20 to 30 nm diameter), channels (diameter larger than ca. 5 nm), and several hundred high density nanoclusters (6-12 nm diameter) within the interior of the micelles.
The SDS polyacrylamide gel electrophoresis of isolated micelles (pH 6.8, 5.0) showed that whey proteins were found associated with the isolated micelles regardless of the pH …

Execution of the USDA organic standards led to more support for local food as distinct from organic food. The current study was conducted to examine fresh produce perceptions and purchasing decisions of S.C. consumers. Four-hundred and eight S.C. consumers were surveyed at S.C. grocery stores. More than one-third of the S.C. consumers not knowing about the 'certified S.C. grown' program suggest that the S.C. Department of Agriculture (SCDA) may want to improve the promotion of their program. Eighty-five percent of consumers indicated that they would choose local over organic. In response to concerns about an increasingly globalized food system in the United States, and increasing interest in the connections between small- and medium-scale (SMS) farms and institutional foodservice operations (IFO), the U.S. has recently developed legislation to link farmers to institutional markets (Joshi, Azuma, & Feenstra, 2008; Poulton, Dorward, & Kydd, 2010; USDA, 2010; Wootan, 2012). The purpose of this study is to determine if these connections are viable, sustainable and ultimately if the food is safe for consumption in the IFO. Previous works demonstrated that various species of Leishmania promastigotes exhibit differential sensitivity to complement-mediated lysis (CML) during development. Upon exposure to normal human serum (NHS), cultures of Leishmania chagasi promastigotes recently isolated from infected hamsters (fewer than 5 in vitro passages) are CML-sensitive when in the logarithmic growth phase but become CML-resistant upon transition to the stationary culture phase. Visualization by light and electron microscopy revealed dramatic morphological differences between promastigotes from the 2 culture phases following exposure to NHS. Flow cytometric analysis demonstrated that surface deposition of the complement components C3, C5, and C9 correlated inversely with promastigote CML-resistance. …

During storage, the milling and physicochemical properties and eating quality of rice change, which is generally termed `aging'. Aged rice is preferred by processors, and there are attempts to develop accelerated aging process using various heat sources. In this study, the effects of various heat treatments and their influence on the milling, pasting, thermal, and cooking properties of two long-grain rice cultivars during storage were investigated using a full-factorial experimental design. Whole wheat flour production and demand has increased dramatically during the last decade due to evidence supporting the benefits of whole grains in the diet. Hence, the food industry has provided a wide variety of new whole grain products. There are unique challenges that accompany whole wheat flour production, especially related to milling and storage. Escherichia coli O157:H7 is a human pathogen that can cause a wide spectrum of disease symptoms, such as bloody diarrhea, hemorrhagic colitis, and hemolytic uremic syndrome (HUS). Escherichia coli O157:H7 illness are mainly associated with undercooked beef; however, in recent years outbreaks have been linked to fresh produce such as spinach, lettuce, and sprouts. In 2009, flour was implicated as a contamination source in the consumption of raw cookie dough resulting in 77 illness-cases. Wanda Shockey, a native of Monroe, Louisiana, began her child nutrition career in Bastrop, Louisiana, first as the home economics teacher and then becoming the child nutrition director. After moving to Arkansas, Shockey was child nutrition director for Little Rock School District for nine years and had fifty schools. Later she moved to the Arkansas Department of Education where she has been director of child nutrition for the past fifteen years.

Fish is an allergenic food capable of provoking severe anaphylactic reactions. Parvalbumin is the major allergen identified in fish and frog muscles. Antibodies against fish and frog parvalbumin have been used to quantify parvalbumin levels from fish. However, these antibodies react variably with parvalbumin from different fish species. Several factors might be responsible for this variation including instability of parvalbumin in fish muscle as a result of frozen storage and differential parvalbumin expression in muscles from various locations within the whole fish. The aim of this study was to examine the applicability of delactosed whey permeate 28 (DWP) treatment on preserving the quality and antioxidant attributes of fresh-cut 29 tomato. Tomatoes were treated with 3 % DWP by dipping, spraying and a 30 combination of both, stored at 4 °C for 10 days and compared with the industrial 31 standard, chlorine. The combination of dipping and spraying of DWP showed the best 32 results for all the markers tested. Thirty samples of sorghum beers “dolo” were selected from traditionally fermented household manufacturers from Burkina Faso. Dolo samples were screened for their total phenolic content, proanthocyanidins and putative antioxidant capacities, and were compared with industrial beers and wines. Total phenols were measured using the Folin-Ciocalteu method. Proanthocyanidins content were determined by the method of HCl-butanol hydrolysis. Antioxidant activities were evaluated both with 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay and by the trolox equivalent antioxidant capacity (TEAC) using 2,2’-azinobis(3-ethyl-benzothiazoline-6-sulfonic acid radical) (ABTS•+). Histo-aspartic protease (HAP) from Plasmodium falciparum is an intriguing aspartic protease due to its unique structure. Our previous study reported the first recombinant expression of soluble HAP, in its truncated form (lys77p-Leu328) (p denotes prosegment), as a thioredoxin (Trx) fusion protein Trx-tHAP. The present study found that the recombinant Trx-tHAP fusion protein aggregated during purification which could be prevented through the addition of 0.2% CHAPS. Trx-tHAP fusion protein was processed into a mature form of tHAP (mtHAP) by both autoactivation, and activation with either enterokinase or plasmepsin II. Objective To investigate the impact of fortification by comparing food records and selected biochemical indicators of nutritional status pre- and post-fortification.

The wheat curl mite, Aceria tosichella Keifer, transmits at least three harmful viruses, wheat streak mosaic virus (WSMV), high plains virus (HPV), and Triticum mosaic virus (TriMV) to wheat (Triticum aestivum L.) throughout the Great Plains. This virus complex is considered to be the most serious disease of winter wheat in the western Great Plains. One component of managing this disease has been developing mite resistance in wheat; however, identification of mite biotypes has complicated deployment and stability of resistance.
