A total of 150 ready to use food thickeners were randomly collected from various markets in both urban and rural settings. Four of the samples tested Achi (Brachystegia eurycoma), Akpalata (Afzelia africana), Ofor (Detarium microcarpum), and Ukpo (Mucuna flagellipes) were contaminated with fungal flora. The most common and prevalent fungi observed on incubated powdered form of food thickeners on media, were the Aspergillus group namely Aspergillus flavus, Aspergillus parasiticus and Aspergillus niger. Vegetable fermentations rely on the proper succession of a variety of lactic acid bacteria (LAB) including Leuconostoc mesenteroides. L. mesenteroides initiates the fermentation, producing lactic and acetic acids, CO2, and many flavor compounds. As the fermentation proceeds, L. mesenteroides dies off and other LAB complete the fermentation. Phage infecting L. mesenteroides may significantly influence the die-off of L. mesenteroides. However, no L. mesenteroides phages have been previously sequenced and genetically characterized. Knowledge of more phage genome sequences may provide new insights into phage genomics and phage-host interactions. We investigated the effects of different substrates (potato dextrose agar [PDA], nutrient agar [NA], and corn meal agar [CMA]) and temperatures on growth and aflatoxin production in Aspergillus flavus. Contaminated peanuts from retailers at different locations in Georgia were used throughout the experiment and 200 seeds were selected from each sample. PDA, NA, and CMA served as the substrate to express the mold from the contaminated seeds. Seeds were plated equidistantly on each of the media and incubated at 10° C, 27° C, 30° C, and 37° C, respectively. Seeds incubated on moist filter paper served as control. Neither growth …
