This senior capstone explores the impact of school-based nutrition programs on the well-being of elementary school students. This research draws on the experiences and perspectives of four teachers, one principal, and three food service staff members who provide insight into how these programs are implemented and perceived within the school environment. Through the use of literature review and surveys the findings indicate the importance of school nutrition programs and the value of children having access to healthy, nutritious food, which is important for their learning and academic success. Hispanic adults in the United States face disproportionate rates of cardiometabolic disease, yet sex-specific disparities in diet quality remain understudied. PURPOSE: To determine diet quality among middle-aged Hispanic adults, assessing carbohydrate quality based on the carbohydrate-to-fiber ratio (CFR) and protein density as indicators of metabolic risk. METHODS: A total of 30 males and 49 females between 40 to 70 years old participated in a cross-sectional analysis of body composition and dietary behavior. Nutritional Neurocriminology Today
This article examines how food insecurity and limited access to nutritionally adequate foods impair cognitive function, emotional regulation, decision-making, and impulse control. Emerging research purports that individuals experiencing food insecurity face increased risks of mental and physical health problems, violent behavior, delinquency, heightened childhood vulnerability, and criminal justice involvement across the lifespan. The article advocates for increased awareness, routine screening, and specialized training for professionals in mental health, social services, and the criminal justice system to address food insecurity, thereby supporting long-term policy and community-level strategies that reduce criminal behavior and improve outcomes for vulnerable populations.

This mixed-methods, cross-sectional study assessed the current level of knowledge and awareness among people aged 50 and older about sarcopenia, as well as their willingness to adopt lifestyle changes that could prevent or reverse the condition as they age. The study aimed to determine whether a lack of awareness and knowledge is linked to current lifestyle behaviors that contribute to or protect against the development of the disease. The population included men and women 50 and older, living independently in the community with no prior diagnosis of sarcopenia. Polycystic ovarian syndrome (PCOS) is a metabolic endocrine disorder affecting 8–11% of women worldwide, with 70% remaining undiagnosed (WHO, 2023). It presents with symptoms such as irregular menstrual cycles, insulin resistance, high testosterone levels, anxiety, depression, and infertility, significantly impacting quality of life and health (OASH, 2021). The symptoms of PCOS can severely impact women’s quality of life, mental health, and long-term well-being. Tarnopolsky et al. (1990) showed significantly higher fat oxidation (FOx) in women versus men during endurance exercise, likely due to their higher concentrations of estrogen and type I muscle fibers. Prior studies support this stance (Venables et al. 2000), yet Wallis et al. (2006) showed no effect of sex on the metabolic response to exercise. Polycystic Ovary Syndrome (PCOS) is an endocrine disorder affecting approximately 4 – 20% of women worldwide. It is associated with insulin resistance, fertility problems, and an increased susceptibility to chronic conditions through multiple inflammatory pathways. Women with PCOS are also at increased risk for disordered eating. The Mediterranean diet is associated with decreased inflammation and risk of chronic conditions, and intuitive eating principles are associated with decreased disordered eating patterns. Previous literature has examined the benefits of consuming nitrate (NO3)-rich crops (e.g., beetroot, spinach, watercress, arugula) on endothelial function due to their positive influence on nitric oxide (NO) production from the utilization of nitrate-reducing bacteria in the oral microbiome. Sport performance is influenced by sport-specific requirements for body composition. One major predictor of body composition is protein intake. Higher protein intake tends to cause leaner body composition relative to lower protein intake, especially during caloric deficit. In Bexar County, ~72% of the adult population is overweight/obese and 15.5% are diabetic. This suggests that high protein diet could be a high leverage option in the San Antonio population for optimizing body composition for sport performance. Gravel cycling is a relatively new cycling discipline, with the Union Cycliste Internationale (UCI) hosting their first UCI Gravel World Championships in 2022. Gravel races combine features of road racing, cyclocross, and mountain biking, including various terrain of varying technical difficulty (paved roads, dirt roads, fire roads, single- and double-track trails), long distances, substantial vertical elevation gain, obstacles, and limited opportunities to stop for in-race nutrition. Restrictions associated with the COVID-19 pandemic had forced American college students to significantly reduce their daily energy expenditure and increase their sedentary behaviors, thus presumably increasing mental health symptoms, decreasing physical activity levels, and enhancing the promotion of unhealthy eating habits. This study aimed to explore the correlations between mental health symptoms, physical activity levels, and body composition in college students in the years following the pandemic, focusing on the lingering effects of lockdown measures. America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

Introduction: Similar to prior reviews, the Journal of Wellness editors searched the literature from the second half of 2022 for an interesting and impactful selection of publications on wellness in healthcare professionals.
Methods: Editors conducted a standard keyword search in Pubmed, focusing chiefly on large journals, interventional trials, and other prospective research. We included papers published between July 1, 2022 and December 31, 2022.

The Army Combat Fitness Test (ACFT) is a newly developed test assessing U.S. Army soldiers' combat readiness. The Healthy Eating Index 2015 (HEI-2015) is a questionnaire established by the USDA that quantifies overall diet quality. CBH is a comprehensive nutrition curriculum designed to teach adult SNAP-Ed participants how to eat well and be active on a budget. CBH combines nutrition and physical activity recommendations from United States Department of Agriculture (USDA). Each lesson has three components: a nutrition topic based on the current Dietary Guidelines for Americans, a physical activity discussion based on USDA recommendations, and a Create recipe demonstration and sample. The components are woven together in eight lessons that are designed to keep participants engaged, while actively learning the skills needed to create a healthier lifestyle.

Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Background: Data about physical activity report card for Ghanaian children and youth are available but reports on physical activity patterns and dietary habits of undergraduates are scarce. Material and methods: This cross-sectional study sampled 278 participants (161 males, 117 females, mean age = 20.73 ± 1.72 years). Blood pressure, heart rate, physical activity patterns and dietary habits were measured. Results: Most (83.1%) of the sample predominantly engaged in household activities. Time spent on treadmill/ cycling activities is significantly higher in females than males (P = 0.018). Day/week for high intensity sports was higher in males (P = 0.005), while household …

Proper nutrition is a key factor in physical performance, but there are also indications of an impact of dietary components on the brain function. Therefore, the aim of the study was to assess the impact of macronutrients and water on cognitive performance. Assumptions of the Mediterranean diet correlate with better global cognition, episodic memory, lower risk of cognitive impairment and neurodegenerative diseases. In turn, a high-fat and high-sugar diet shows the opposite effect. Omega-3 fatty acids could be used as a preventive tool for cognitive decline, but there is still insufficient evidence if supplementation improves cognitive functions. The proper intake …

Background: Participation in physical activity (PA) from a young age helps to build the foundation for a healthy life in the future. The purpose of this study was to investigate the relationships between energy intake, dietary habits, PA levels, and healthy lifestyle behaviours (HLSBs) in primary education and pre-service teachers. Material and methods: A total of 105 primary education teachers (69 female, 36 male) and 95 pre-service teachers (64 female, 31 male) participated voluntarily in this study. This creative project was created to serve as a 10-week afterschool club curriculum for 3rd-5th graders to teach them about nutrition and healthy eating patterns. The goal of the program is to help kids establish a foundation for healthy eating that they can utilize throughout their lives, potentially reducing their risk of developing chronic diseases as an adult. Segregated neighborhoods are linked to the environmental exposures, education and behavior of their residents. Access to exercise and nutrition resources are dependent on whether or not residents are able to afford it or not. PURPOSE: To identify the associations between the location of nutrition and exercise resources to household income. METHODS: Selective Zip codes in the Austin Area were used to identify the median household income through an online search where data is collected from the U.S. Census. Abstract
Background: Forty percent of the US population ages 20-39 are categorized as obese,
their BMI is over 30, and 35% of college age students are obese or overweight. Issues related to obesity cost the US $147 billion annually. Between 40%-50% of college students are reported to be inactive. Inactivity can lead to increased morbidity and mortality related to increased risks of cardiovascular disease, diabetes, hypertension, musculoskeletal issues, and depression. Providing dietary and physical activity education and access to nutritional information promotes behavior change in young adults.

The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.
Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one.
