Understanding The Impact Of Food Insecurity Among First-Generation College Students On The University Of Arkansas Campus, Madison Price, Jennie S. Popp Ph.D., Nathan Paul Kemper, Louise Michelle Hancox

Discovery, The Student Journal of Dale Bumpers College of Agricultural, Food and Life Sciences

The purpose of this study was to: 1) better understand food insecurity among first-generation college students and how it might differ from that of other college students, and 2) gather opinions from students that may serve as solutions to alleviate food insecurity. This study was conducted with a mixed-methods survey that included both open-ended and closed-ended questions. This survey had 670 responses. Nearly 10% of respondents stated that they were experiencing food insecurity. Almost 18% stated they were first-generation college students. A greater percentage of African American (P = 0.0022) and Hispanic Latino (P < 0.0001) students were first-generation compared to all other students, while a lower percentage (P < 0.0001) of Caucasian students were first-generation compared to other students. The results suggested that first-generation students were more likely to experience nine food insecurity impacts than non first-generation students. Further, both first-generation and non first-generation students indicated low levels of knowledge and/or use of existing resources on the University of Arkansas campus that can help address food insecurity needs. Finally, both first-generation and non first-generation respondents overwhelmingly favored food insecurity solutions centered around expanding access to campus food programs through lower costs and increased awareness of existing campus resources via improved advertising.

Stream Restoration Effectiveness In Mullins Creek In Fayetteville, Arkansas, Amadeo Scott, Shannon Speir

Lotic waterways are vital for habitat, food, water, and flood protection, but urbanization poses a major threat to their integrity. Runoff from urban surfaces leads to pollution, flashiness, loss of biodiversity, and other symptoms, also known as Urban Stream Syndrome (USS). Streams can be restored in order to combat USS, but most restorations are not monitored, so their long-term effectiveness is unknown. This study quantitatively evaluated a decade-old stream restoration in Fayetteville, Arkansas, to assess its effectiveness in combating USS and achieving set restoration goals, and to gain insights for future restoration projects. A major objective of the University of Arkansas System Division of Agriculture (UADA) Fruit Breeding program is to improve the texture of blackberry (Rubus subgenus Rubus Watson). Blackberry varieties with improved fruit firmness transport and store well and may maintain superior quality under challenging postharvest conditions than softer varieties. Increased firmness may also make cultivars less susceptible to red drupelet reversion (RDR), a postharvest disorder of blackberries in which fully black drupelets revert to red after harvest. This research project aims to assess the efficiency and accuracy of three methods applied in evaluating blackberry firmness. The study compares instrumental analysis …

Identifying Youth Appeals In Alcohol Alternative Social Media Content Through Framing, Melina Oneal

Proposed regulations for alcohol advertising prevent beverage companies from targeting people under the legal drinking age. However, similar regulations for alcohol alternative beverages are less explored, which could allow alcohol alternative products to create awareness for alcoholic beverages among youth. Alcohol alternatives beverages, including no-alcohol and low-alcohol products, are increasing in popularity and can function as compliments to alcoholic products to decrease the total alcohol volume consumed or as substitutes for alcoholic products. Most studies investigating flipped learning fail to assess how student perceptions of flipped learning may change once the class is complete, and students have a chance to reflect on the experience. Follow-up studies are needed to evaluate the sustainability of the benefits from flipped learning among students and how they feel it prepares them, if at all, for future classes and/or their professional lives. Therefore, the objective of this study was to explore how graduate and undergraduate dietetics students retrospectively perceive a course that used flipped learning 2 years after they completed the course. This paper presents a creative research project that introduced musical instruments in an outdoor setting to infants and toddlers ages 0-to-3 years old. It was grounded in research suggesting that music plays a vital component in expanding development in the early childhood years, helping to promote learning across many domains. This project began with a survey distributed to 7 infant and toddler classroom educators, after which responses were analyzed for themes regarding perceived infant interests. Obesity affects adults in the United States, leading to chronic diseases and reduced well-being. Time-Restricted Feeding (TRF) is a type of dietary intervention lacking current data regarding the effectiveness on facets of well-being. This study’s objective was to determine the effect of time-restricted feeding supplemented with whey protein isolate on food intake, sleep, and mood in overweight or obese adults. Nineteen participants were randomly assigned to the control or experimental group: 1) control, TRF, and 2) experimental, TRF with whey protein supplementation. Determining The Effectiveness Of Rosemary Essential Oil On The Shelf Life Of Ground Beef Under Different Lighting Conditions, Jordan T. Looper, Kelly R. Vierck

This study determined the effectiveness of rosemary extract on the shelf life of ground beef patties under different retail display conditions. Ground beef patties were produced from an 85%:15% blend (lean:fat). Patties were formed from batches of control or amended with rosemary extract. Patties were individually packaged using overwrap. Groups were assigned into one of two lighting groups (3000K and 3500K). Patties were placed in a simulated retail display for 5 d under continuous lighting and rotated once a day. Lipid oxidation and color samples were taken each day. Relating to lipid oxidation, there was no three-way interaction between display …
