The purpose of this study was to examine implementation of serving food and beverage evidence-based practices (nutrition EBPs) across CACFP participating licensed childcare centers (CCCs, n = 51) and family childcare homes (FCCHs, n = 49) in central California. Results indicated that FCCHs reported significantly higher (p < .05) implementation of nutrition EBPs and barriers than CCCs. Both CCCs and FCCHs refer families to WIC/SNAP when they observe child food insecurity and control how much food is served to children. It is important to consider organizational structure (CCCs, FCCHs) and child food insecurity when developing policies/interventions for improving implementation of nutrition EBPs in ECEs.

Food insecurity has significantly increased throughout the United States as a result of the COVID-19 pandemic. Many schools switched to remote learning and children lost access to free school meals, affecting them psychologically and academically. This study examined the relationship between food insecurity and low academic outcomes, accounting for student mental health, such as anxiety, depression, and ADHD, as well as parental involvement as a possible protective factor against mental health. Using the social-ecological model, this basic interpretive qualitative study sought to examine the phenomenon of food insecurity among Idaho Head Start enrolled families, focusing on barriers and deterrents to accessing available nutrition assistance programs. A total of 11 interviews were conducted with parents who had children enrolled in five Idaho Head Start programs. The data were coded and analyzed and are reflective of how individual, interpersonal, community, and organizational levels factors are reflected in participants’ decisions to access available nutrition assistance programs. The Meal Gap: A Food Activist Curriculum is a series of fifty-four lessons for fourth grade students that introduces them to the topic of food insecurity. The Food and Agriculture Organization (FAO) of the United Nations initiated the World Food Summit in 1996 to discuss and call attention to the “widespread undernutrition and growing concern about the capacity of agriculture to meet future food needs” (Food and Agriculture Organization, n.d.).
