A Case Study On Promoting A Healthy School Culture To Combat Childhood Obesity And The Role Of The Principal, Nancy Torres
Open Access Theses & Dissertations
AbstractObesity is the leading cause of death worldwide. Childhood obesity has jumped to 22.4% in 2020 from 19.3% in 2019. One-third of children are overweight and obese, with an approximately 66% chance of becoming an obese adult. The costs of obesity are to overall health: financial, physical, social, and emotional. Obesity affects students at school, a point of service. Therefore, the purpose of this study was to examine what efforts has the principal undertaken to address childhood obesity in a Title I elementary school on the US-Mexico border and how these efforts helped to define and shape the schoolâ??s culture. …

Time, Money, Or Knowledge: What Factors Are Associated With Implementing Youth Cooking Programs?, Alison C. Berg, Nancy O. Taylor, Courtney S. Brown, Silvia Q. Giraudo
The Journal of Extension
Research suggests participating in youth hands-on cooking programs, like those offered by Extension and 4-H, can improve nutrition behaviors and reduce the risk for obesity. We surveyed [STATE] Extension professionals (n = 127) to explore factors (e.g., employee characteristics, resources, county demographics) related to offering youth hands-on cooking programs and curricula used. Over 2/3 of participants offer programs and reported creating their own curriculum. More years of experience, having received Extension Specialist training, and increased confidence were positively related to offering these programs. Results suggest training could increase confidence and program implementation and standard curricula may be needed.
The Presence Of Childhood Obesity In Nebraska And The Physiological Repercussions Of The Disease, Madison R. Bezousek
The Presence Of Childhood Obesity In Nebraska And The Physiological Repercussions Of The Disease, Madison R. Bezousek
Honors Theses
Childhood Obesity can cause lifelong repercussions in children and adults. There has been stigma around the causes of obesity and its relation to lifestyle choices, without consideration of the genetic and syndromic causes. In this literature review the causes of obesity were investigated, along with the effect on the physiological systems and the enviornmental factors that are continuing the obesity epidemic. Preventing and treating lifestyle obesity is something that is seen to have the greatest effect on youth, especially with intergenerational obesity. Nebraska schools have implemented programs to encourage healthy living, and ongoing research is being implemented to reduce the …
Comparing Three Resilience Frameworks Across Outcomes For Children Who Have Experienced Multiple Adverse Childhood Experiences, Kevin Keane
All ETDs from UAB
Adverse childhood experiences (ACEs) have a well-established relationship with poorer mental health, health, and school-related outcomes among children. ACEs researchers have identified potential resilience frameworks like the National Scientific Council on the Developing Child (NSCDC), Health Outcomes from Positive Experiences (HOPE), and cumulative positive childhood experiences (PCEs) frameworks that identify protective factors to mitigate ACEs. However, each framework has a limited evidence base with no known studies comparing their effectiveness. The purpose of this dissertation was to compare the relationship between these three resilience frameworks and childhood outcomes in three domains (mental health, weight status, and school-related outcomes) among children …

Childhood obesity rates are at an all time high, and mental health issues are rising every day. Recently, Carl Sandburg High School has seen a steady increase of the number of students’ with high Body Mass Index (BMI) and mental health struggles. This school improvement plan addresses the impact and role the school environment can have in decreasing students’ BMI and increasing students’ quality of life. The plan contains information on developing a nutrition education intervention program, as well as making changes to the school breakfast and lunch program and the food choices it provides students.
Child Obesity Moderates The Association Between Poverty And Academic Achievement, Ashley W. Kranjac, Dinko Kranjac
Child Obesity Moderates The Association Between Poverty And Academic Achievement, Ashley W. Kranjac, Dinko Kranjac
Sociology Faculty Articles and Research
Childhood overweight and obesity are major public health problems in the United States. Children who experience poverty are 1.5 times more likely to suffer with overweight and 1.6 times more likely to have obesity. The extent to which overweight or obesity exacerbates the negative influence of socioeconomic inequality on child academic outcomes has not yet been examined. We estimated the effect of poverty on math and reading achievement trajectories using the Early Childhood Longitudinal Study (ECLS) Kindergarten class of 1998−1999 survey data and multilevel growth curve modeling techniques. Our findings indicate that the impact of obesity status is more pronounced …
Benefits Of School Gardening On Low-Income Elementary School Students, Caitlynn Lange
Benefits Of School Gardening On Low-Income Elementary School Students, Caitlynn Lange
Capstone Projects and Master's Theses
The increase in obesity rates in America’s youth could be a reflection of undernourished school lunches, a decrease in physical activity, and the lack of knowledge of health and nutrition. Children who come from a low-income family are more likely to be affected by these circumstances. School gardening may be a way of replacing those impacts. This senior capstone research project examines the benefits of school gardening on low-income elementary school students when implementing as part of the curriculum in schools.

Health Services Research Dissertations
Since the 1970’s the rate of childhood obesity in the United States has tripled and now one in five school-aged children is obese (Ogden et al., 2016). The childhood obesity epidemic will have medical, social, economic implications for future generations. Risk factors for childhood obesity include genetics, food intake, and physical activity, maternal health during pregnancy, parental weight, maternal employment and sociodemographic influences. This study examined the relationship between caregiver misperception of their preschoolers’ overweight/obese weight status and possible predictors that may assist in future interventions. The study evaluated NHANES data of 1245 caregivers with a child under age five …

Observational Study To Identify Best Practices Of Successful Active Science Programs, Elizabeth Egan
Health Sciences Student Work
Introduction: Obesity amongst our nation’s youth is on the rise and has drastically increased in recent decades. This chronic health issue lends to potential risk of developing comorbidity of type 2 diabetes, hypertension, heart disease, an increased risk of premature death and many other serious chronic diseases. Obesity prevention and health promotion programs aimed at targeting obesity, and more specifically childhood obesity, should implement nutrition and/or physical activity components. Effective programs have taken into account moderate- to vigorous-intensity physical activity (MVPA) measurements, class size and class management (if the program utilizes an education or group fitness component), and the demographic …

The following project was created to address the rising epidemic of childhood obesity. Childhood obesity is caused by many factors such as genetics, metabolism, community and neighborhood design, diet, exercise, and short sleep duration (Center for Disease Control: Childhood Obesity Facts). Social determinants of health, systems of oppression, and stigma can all influence the obesity epidemic. These include but are not limited to social status, location, culture, age, sexuality, ethnicity, and race. These identities can influence affordability and access to healthcare and further contribute to the obesity epidemic. It is important to understand these issues as a future provider. A …

The Difference In Academic Achievement For Students In The Healthy Fitness Zone Compared To The High Risk Zone For Bmi And Aerobic Capacity, Nathan C. Pennington
Electronic Theses and Dissertations
Childhood obesity rates have climbed significantly over the past 40 years. With that, there has also been an increase in the number of associated health concerns, such as diabetes, heart disease, and asthma, of many. Quite independently, there has also been an increase in the accountability placed on schools to improve their reading and math test scores. This has resulted in a decrease in physical activity times in schools in order to provide more class time for reading and math. This study’s purpose has been to identify whether a difference exists in academic outcomes for students in the HFZ compared …

The Associations Of Farm-To-School Programs On Childhood Obesity In School Breakfast, Hannah Brzozowski
All Master's Theses
Farm to School (F2S) programs claim to increase fruit/vegetable consumption and promote healthy, lifelong food/beverage choices. Both of which are identified strategies in the prevention of childhood obesity. Long-term effects of F2S programs are largely unexplored. This cross-sectional study matched ten schools, five with F2S, and five with a traditional National School Breakfast Program (NSBP). Third- and fourth-grade students (n=1031) were recruited for study participation to assess the effects of regular breakfast consumption and participation in F2S programs on body mass index (BMI). Demographic data, anthropometric data, and frequency of breakfast participation were collected. Additionally, BMI and frequency of breakfast …

The Effects Of Nutrition Education On Third And Fifth Grade Students’ Fruit And Vegetable Knowledge, Preference, And Consumption, Alexandra Epstein-Solfield
All Master's Theses
Regular consumption of fruit and vegetables (F/V) may reduce the risk of obesity and obesity-related diseases, yet most American school children fail to meet recommended intakes. One proposed method for reducing childhood obesity is implementing school-based nutrition education programs aimed at increasing F/V intake. This repeated measures study examined the effectiveness of an eight-week F/V-targeted nutrition education intervention on elementary-school students’ nutrition knowledge, F/V preference, and salad bar consumption. A convenience sample of third- and fifth-grade students (n = 149) participated in the study. Surveys were administered pre- and post-intervention to assess F/V knowledge and preference. Pre- and post-plate waste …

Influence Of Teacher Participation On Student Fitness And Student Participation In Physical Education, Whitney Morris
Walden Dissertations and Doctoral Studies
Physical activity plays a key role in the health of children. Childhood obesity is increasing in the United States, and children are spending less time being physically active. Active participation by a physical education (PE) teacher in physical activities has been suggested as a means of promoting student fitness. The purpose of this quasi-experimental quantitative study was to determine whether modeling of physical activity by a PE teacher would increase student participation and physical fitness. Bandura's social learning theory provided the theoretical framework for the study. Participants included 311 4th and 5th grade elementary students enrolled in physical education classes. …

The Moderating Effect Of Self-Efficacy On Normal-Weight, Overweight, And Obese Children's Math Achievement: A Longitudinal Analysis, Ashley Wendell Kranjac
Sociology Faculty Articles and Research
Increased body weight is associated with decreased cognitive function in school-aged children. The role of self-efficacy in shaping the connection between children's educational achievement and obesity-related comorbidities has not been examined to date. Evidence of the predictive ability of self-efficacy in children is demonstrated in cognitive tasks, including math achievement scores. This study examined the relationship between self-efficacy and math achievement in normal weight, overweight, and obese children. I hypothesized that overweight and obese children with higher self-efficacy will be less affected in math achievement than otherwise comparable children with lower self-efficacy. I tested this prediction with multilevel growth modeling …

The Impact Of A Dance Aerobics Program On Middle School Girls' Physical Activity Level, Self-Efficacy, And Decisional Balance, Alexis Suozzi Bridley
Dissertations
Rates of childhood obesity have increased dramatically in recent years. Decrease in physical activity is among the leading causes, with adolescent females at greatest risk for obesity. School-based interventions have shown promise; however, few studies have considered the type of activity on physical activity level. According to the Transtheoretical Model (TTM), intrinsic readiness, self-efficacy, and perceived risks and benefits regarding change contribute to behavior change. Yet no known studies have considered the impact of intervention with a traditionally preferred activity on selfefficacy and decisional balance. Therefore, this study aimed to explore the impact of a 2- week dance aerobics program …
