Background: Childhood obesity is a public health problem associated with many co-morbidities. The majority of young children in the United States (U.S.) attend formal early childhood education (ECE) programs, often consuming the majority of daily calories and engaging with teachers during mealtimes. Mealtime best practices support children’s development of healthy eating habits. This dissertation aimed to understand how COVID-19 has influenced mealtimes in ECE centers, including (1) the division of responsibility between adults and children during mealtimes, (2) the child feeding dynamic, and (3) how mealtime best practices have been included during COVID-19.

This research employed a matched-pairs randomized field experiment design to evaluate a classroom-based health education intervention for pre-Kindergarten and Kindergarten children in a rural region of the southeastern United States. Schools were matched on demographic characteristics, then one school from each pair was randomly assigned to the treatment group and one to the delayed treatment group. The intervention included a field trip experience and an integrated curriculum designed to increase knowledge about nutrition, physical activity, and sleep. Introduction: Amidst the evolving COVID-19 pandemic, understanding the transmission dynamics of the SARS-CoV-2 virus is key to providing peace of mind for the community and informing policy-making decisions. While available data suggest that school-aged children are not significant spreaders of SARS-CoV-2, the possibility of transmission in schools remains an ongoing concern, especially among an aging teaching workforce. Even in low-prevalence settings, communities must balance the potential risk of transmission with the need for students' ongoing education. Community-academic partnerships have demonstrated how collaboration can provide academic healthcare workers and non-medical community providers such as educators and social services with a comprehensive view of issues affecting refugee populations. The ICIH (Interagency Council on Immigrant Health) is a physician-community partnership consisting of healthcare professionals, non-medical educators, social workers, early childhood services and other community agencies. It was formed to address the well-being of a local immigrant population, strengthen bonds between the community and healthcare system, and educate and empower pediatricians to provide culturally aware services. This study investigated the impact of the International Baccalaureate (IB) Primary Years Programme (PYP) on student wellbeing and related outcomes. The PYP, an educational framework for children ages 3–12, offers a holistic education focusing on whole-child development through an inquiry-driven approach. It does so through multiple programmatic elements that include leadership and teacher professional development, to deliver an inclusive curriculum in classrooms that builds transdisciplinary skills, culminating in the development of students’ international-mindedness, critical thinking and attributes of the IB learner profile.

Regular participation in physical activity (PA) is important for the healthy growth and development of preschoolers. The Míranos! Look at Us We Are Healthy (Míranos!) is an obesity prevention intervention with age-appropriate structured and unstructured outdoor/indoor play and classroom activities led by teacher. As an objective instrument to provide information on human movements, accelerometer can accurately identify the levels of physical activity and assess the effects of physical activity intervention. Background: Australia has joined a growing number of nations that have evaluated the physical activity and sedentary behavior status of their children. Australia received a “D minus” in the first Active Healthy Kids Australia Physical Activity Report Card.
