Fad Diets: Professional Development Needs Among Nutrition Agents In Select Southern States, Abigail P. Mcalister, Vicky L. Green, Simone Camel, Mary C. Fontenot, Janet F. Pope

The Journal of Extension

Because FCS agents teach communities about dietary guidelines, it is important that they are aware of the latest nutrition research. This study assessed FCS agents’ knowledge of popular fad diets (low-carbohydrate, intermittent fasting, detoxes and cleanses) and their potential adverse effects, and its relationship among location, certifications, years of experience, professional association memberships, and education. Agents in Louisiana, Texas, Arkansas, and Mississippi were emailed a survey. RDN, DTR, and CHES certifications had significant associations (p = 0.03) with knowledge of adverse effects of fad diets. Agents who hold these credentials may have more knowledge about adverse effects of fad diets.

Capstone Projects and Master's Theses

Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Unhealthy eating is a risk factor for food insecurity, so the project indirectly addresses the macro-level health problem that too many college students in California experience food …

Macronutrients And Water – Do They Matter In The Context Of Cognitive Performance In Athletes?, Ewa Karpecka, Barbara Fraczek Mar 2022

Macronutrients And Water – Do They Matter In The Context Of Cognitive Performance In Athletes?, Ewa Karpecka, Barbara Fraczek

Baltic Journal of Health and Physical Activity

Proper nutrition is a key factor in physical performance, but there are also indications of an impact of dietary components on the brain function. Therefore, the aim of the study was to assess the impact of macronutrients and water on cognitive performance. Assumptions of the Mediterranean diet correlate with better global cognition, episodic memory, lower risk of cognitive impairment and neurodegenerative diseases. In turn, a high-fat and high-sugar diet shows the opposite effect. Omega-3 fatty acids could be used as a preventive tool for cognitive decline, but there is still insufficient evidence if supplementation improves cognitive functions. The proper intake …

The Importance Of Nutrition In Oral Health In The General Population And Among Children And Adolescents, Emma Barnes Mar 2022

The Importance Of Nutrition In Oral Health In The General Population And Among Children And Adolescents, Emma Barnes

Honors Theses

Having good oral health is vital for the U.S. population. Although there have been improvements, too many suffer from dental caries and tooth loss. Providing education, dental procedures, and nutritional foods can help prevent these issues. Healthy choices include having a diet with adequate protein, vitamin A, vitamin C, and the vitamin B complex to support proper tissue development in the oral cavity.

Keeping good oral health is crucial for those suffering from diabetes mellitus. Studies show that doing this can help lower the patient's A1C, therefore helping with the management of blood glucose levels and potentially slowing the progression …

Food insecurity is a growing issue in developing and developed countries alike, and in countries like Belize, the prevalence of hunger has soared in recent years. Not having access to diets with sufficient calories and nutrients leads to a host of developmental issues, including stunting and cognitive delays. The purpose of this work was to create an all-encompassing manual for small-scale poultry production in order to provide nourishment for the students and staff of a school in Belize. After determining that the best way to meet the school’s needs was through dual-purpose birds, background research was conducted to determine small-scale …

Then to test feasibility of the nutrition-specific curriculum in increasing knowledge, self-efficacy, and attitudes by a case study approach, pre/post intervention design.

Methods: First, scoping review methodology involved the …
