Food Literacy promotes the way people should consciously think about the food we ingest on a day-to-day basis. This paper explores how teachers can positively teach students how to be literate when it comes to food and how students can apply these learnings towards their English subject matter skills. This paper also explores how children from all economic backgrounds seek out highly processed foods (such as fast food) which are filled with various chemicals and additives, which in turn, can affect students' performance within the classroom in an negative manner.

One such program, Youth Enjoy Science at the University of Nebraska Medical Center, has employed American Indian/Alaska Native youth in mentored cancer research internships from 2017 to 2022. The primary purpose of this study was to examine mentor and mentee experiences of participation in Youth Enjoy Science research education internships to learn from their stories. This qualitative phenomenological study explored how college executives make decisions for their organizations. The Competing Values Framework (CVF) provided the conceptual framework for this study which focuses on how an organization relates to its environment. In this dissertation, I begin with a paper exploring K-12 educators’ use of evidence. I give several examples of how practitioners are delivering programming that is in direct opposition to commonly held evidence-based understandings, explore the reasons why this is happening and then offer a relatively new type of partnership between practitioners and researchers that looks promising in the ongoing pursuit of greater research engagement and use of evidence by practitioners. This paper also applies the Outcomes Based Concern Model for deconstructing the reasons practitioners do not use evidence to the degree desired by policymakers.

The National Council Licensure Examination for Registered Nurses (NCLEX-RN) first-time pass rate for an associate degree in nursing (ADN) program was below the national mean, presenting a problem for graduates who failed the NCLEX-RN and could not enter the workforce as registered nurses.
