The growing prevalence of sarcopenia among older adults as well as youths has prompted further research aimed at developing effective preventative measures and treatment plans. Sarcopenia is often thought to occur solely due to aging, but several other factors contribute to progressive muscle loss. Background: Wellness programs are an emerging priority among organizations concerned about employee wellness and productivity. Data from Long Island Jewish Medical Center (LIJMC) revealed that in 2019 there were 1,690 employee visits to the ER due to chronic diseases; 30% were classified as ER sick visit and 40% of employees who visited the ER had no primary care provider. Many companies use biometric screening and health risk assessment to measure the health of their employees. Despite over a decade of both quantitative and qualitative studies, food insecurity among US college/university students remains a pervasive problem within higher education. The purpose of this perspective piece was to highlight research gaps in the area of college food insecurity and provide rationale for the research community to focus on these gaps going forward. Introduction: Zambia is a multilingual country that uses 8 different languages for instruction including English and 7 other indigenous languages.

Methods: Survey research conducted between May-June 2022 on 6-7th graders within 9 Zambian schools. Classroom observations made and teachers interviewed.

Results: In Eastern and Southern Provinces, Zambian teachers speak an average of 5 languages while students speak an average of 2. Both teachers and students say English remains the most important language followed by first languages.

Conclusion: Continued research on language-in-education policies and impacts on student performance must be conducted if “One Zambia, One Nation” is meant to promote all …

Four posters were created with the intent of providing adolescent athletes, their parents, and their coaches with information about important topics in sports nutrition including a general overview of nutrition goals, hydration strategies, recovery nutrition, and nutritional considerations for vegetarian and vegan youth athletes. CBH is a comprehensive nutrition curriculum designed to teach adult SNAP-Ed participants how to eat well and be active on a budget. CBH combines nutrition and physical activity recommendations from United States Department of Agriculture (USDA). Each lesson has three components: a nutrition topic based on the current Dietary Guidelines for Americans, a physical activity discussion based on USDA recommendations, and a Create recipe demonstration and sample. The components are woven together in eight lessons that are designed to keep participants engaged, while actively learning the skills needed to create a healthier lifestyle.

After taking a class at UNL about environmental awareness, two honors students paired up to start a hydroponics club at a local Lincoln school. In reaching out to the LPS director of sustainability, they were paired up with Prescott Elementary School. Over the course of a semester, they developed a club that got a hydroponic grow tower functioning for the school and taught students about nutrition and sustainability. This club is only in its beginning stages, but the impacts that it is making around the school can already be seen.

Sestrins are highly conserved proteins which are induced under environmentally stressful conditions to adjust the cell’s response to such disturbances. This protein possesses two domains critical for its dual function in reducing reactive oxygen species (ROS) and regulating the mTORC1 complex. Sestrins may use diverse transcription factors, such as Nrf2, peroxiredoxin reductase activity, and a catalytic cysteine to regenerate oxidized species; however this was confirmed to be through a mechanism likely different than AhpD, for which there was distance sequence similarity. In Spring 2021, the librarian presenters partnered with Laura Bauer, a Nutrition faculty member, to teach students in introductory Nutrition classes information evaluation skills. The instructor's assignment originally asked the class of non-science major students to find a recipe online that met a personal nutrition goal based on current recommendations. BACKGROUND: In this study, we examined nutrition-related topics among adolescent students attending schools with different Indices of Community Socio-Educational Advantage (ICSEA). METHOD: Participating students (N = 206) from 5 schools in Western Australia completed a paper-based questionnaire on nutrition-related topics. Frequencies and independent chi-square tests were used to identify differences between sexes and school ICSEA. RESULTS: Of the participating students, 75% were interested in learning about 8 of 16 topics. We found statistically significant differences by sex (p < .01) for “Eating the right foods for preventing illness and disease,” “Eating the right food for being active” among girls, and “Reducing food waste” among boys. We also noted differences by school ICSEA. CONCLUSION: Acknowledging sex and socioeducational differences in teaching and learning may help teachers to engage adolescent students in nutrition education.

Prediction of energy expenditure allows for calculation of appropriate energy requirements, which is especially important for athletes. Resting metabolic rate (RMR) is the greatest contributor to total daily energy expenditure (TDEE) and is typically measured via indirect calorimetry. Indirect calorimetry is not always available, which results in the need for predictive equations. Most predictive equations have been developed with participants resembling the general population and have not been found to be appropriate for athletes, as they may incorrectly predict RMR due to the unique differences of body composition between athletes and the general population. For this Seminar in Biology course, Maria Bata and I partnered with LIFE*SPIN to plan and execute a "Seeding Planting Party" to teach children about basic botany, nutrition, and leadership. Introduction: Nutrition impacts attendance for primary school students in Southern Ethiopia and Zambia. Food insecurity causes school-age children to be undernourished, malnourished, and stunted. These health concerns greatly impact ability to attend and perform in school.

Methods: Between May and June of 2019 6th and 7th grade students were surveyed within 4 schools in Ethiopia and 5 schools in Zambia. Anthropometric data, health history, and nutritional habits were surveyed.

Results: 8% of Ethiopian students were stunted while 10% of Zambian students were stunted. Ethiopian students indicated school lunch was an incentive while Zambian students did not. Most …

Food distribution centers are instrumental in decreasing food insecurity, however, some of the food donated is expired or may be damaged leading to increased risk of foodborne illness.

Extension professionals must demonstrate organizational value to garner public awareness and support. Measuring and communicating outcomes that have public value can be challenging. In this study, Ripple Effects Mapping incorporating the Community Capitals Framework was used to evaluate a childhood obesity prevention study, iCook 4-H, of youth-adult pairs in Maine. The purpose of the present study was to compare muscle strength, size, activation, and oxygenation between older women with and without sarcopenia during dynamic fatiguing leg extension bouts with high (5-repetition maximum[5-RM]) and low (30% of estimated 1-RM[30%1-RM]) loads. Eleven women (n = 6 non-sarcopenic [mean ± SE; age = 75.8 ± 2.6y] and n = 5 sarcopenic [age = 74.5 ± 3.1y]) were screened for eligibility and sarcopenic status. Background: Using a Community-Based Participatory Research (CBPR) approach may increase the likelihood of relevance and acceptability of the designed intervention, especially on a college campus.
