In the context of higher education, striving for high quality is not a new strategy. Institutions have always held academic excellence and high quality as the highest goals. Achieving these goals was easier in a time of abundant resources and favorable demographics. But the environment has changed now. Institutions are now facing decreasing enrollments and revenues while costs and competition for students are increasing. The function of assessment in higher-education hospitality programs is to improve student learning. Although the assessment process is common in higher-education institutions, examples of assessment practices in hospitality programs have not been made available to academic practitioners. This paper describes a method successful at formulating assessment in a hospitality college professional program.
