Analysis Of Processing Times Of Selected Quantity Food Production Formulas, Vivian Sue Connelly

Masters Theses

The relationship of recipe processing time to number of servings, and pan size to number of servings was studied. These relationships are a prerequisite to the development of standard times for production tasks. Two recipe processing steps, panning pork chops and panning and dredging meat cubes were selected; the physical conditions influencing the performance of the steps were identified and controls defined. The variables were 100, 300, 500 and 700 servings and two pan sizes, counter pans (20 x 12 x 2-1/2 inches) and bun pans (18 x 26 x 3/4 inches).

Time required to prepare the processing steps varied …

The Development Of A Device For The Evaluation Of The Textiles And Clothing Core Course, Katie May Varnell

Masters Theses

(Introduction)

Evaluation, as an integral part of the teaching-learning process, is of prime importance to those involved with educational programs. Institutions of higher learning are faced with the difficult task of presenting an integration of knowledge among numerous fields of interest. Evaluating progress, or the lack of progress, of student comprehension of this integration of knowledge is an essential aspect of this task. Evaluation of a course involves the clarification of objectives, the development and use of a variety of ways of assessing changes in students, meaningful ways of summarizing and interpreting that evidence, and use of the …

Health Insurance Status Of Selected Rural Families In Sevier County, Tennessee, Willie F. Felder

Masters Theses

Expenses incurred as a result of illness or accident can be an insurmountable threat to the economic security of many families. While it is known that in Tennessee over 2,500,000 persons had some form of health insurance protection in 1962 (19, p. 27), no data are available, so far as the writer was able to ascertain, on how rural families in the state have attempted to make provision against the risk of extensive health costs.

Enrollment of selected groups of rural families in health insurance programs has been reported in a number of studies made in various sections of the …

The Problem and Definition of Terms Used

There has been much speculation concerning time management by these employed homemakers, but there was very little available research on this areas of management.

The Problem

Masters Theses

Introduction

The Old Order Amish Mennonites, undoubtedly the plainest of the "plain people," have a high regard for the beliefs and customs of their forebears. Their forefathers had no telephones, automobiles, electric lights, radios, or church buildings, so the Amish of today work the land with horses, travel in buggies, burn gas lights, gather in homes for worship services, and wear styles of dress which were common in seventeenth and eighteenth century Europe.

Estimates made on the basis of recorded church membership in the Mennonite Yearbook place the Amish population of the United States at approximately 57,000. Their high birth …
