The use of internship as a means of informal education is relatively commonplace. This is evident by the vast amount of literature dedicated to workplace learning, however very little research to date has explored the impact of international culinary internships on students. This paper addresses the void in research by exploring the nuances associated with culinary internships and in particular investigates the 2006 and 2007 student cohorts studying in the Technological University Dublin for the degree award of BA in Culinary Arts. Efforts to prepare students with skills necessary to compete in a 21st Century global, digital economy require technological literacy, but many teachers are inhibited by antiquated models of education and epistemological beliefs that leave them reluctant to integrate educational technologies in their content instruction (Dunn & Rakes, 2010; Mouza & Wong, 2009). There is an extensive base of literature that attempts to describe how college students understand “knowledge” and their role in generating it. Educators draw from this literature to help students develop increasingly sophisticated ways of using knowledge. Although existing research aims for broad generalizability, it is clear that various disciplines have developed their own unique value systems. Scholars of “hard,” physical science are likely to hold very different ideas about the nature of “fact” and “inevitability” than those in the “softer,” social sciences [1].
