Outcomes and Impact Quarterly

NourishTank, a Shark Tank-style event, saw students propose food and nutrition insecurity solutions. Twenty-eight students formed 11 teams, promoting interdisciplinary collaboration. The winning idea, 'Farm2Fork Gone Mobile,' earned $1,000 toward their proposed project. NourishTank, through partnerships and media, highlights student-driven efforts combating food insecurity and raising awareness.

Stakeholders sought to reduce the burden of preventable diabetes among adults in Utah via a “Food as Medicine” webinar series. The “Food as Medicine” webinar series sought to increase awareness of and enrollment in public diabetes programs. Evaluation results from the webinar series indicated an increase in awareness of diabetes programs and nutrition information needed to improve personal diabetes management.

CBH is a comprehensive nutrition curriculum designed to teach adult SNAP-Ed participants how to eat well and be active on a budget. CBH combines nutrition and physical activity recommendations from United States Department of Agriculture (USDA). Each lesson has three components: a nutrition topic based on the current Dietary Guidelines for Americans, a physical activity discussion based on USDA recommendations, and a Create recipe demonstration and sample. The components are woven together in eight lessons that are designed to keep participants engaged, while actively learning the skills needed to create a healthier lifestyle.

The growing population of free-roaming horses (Equus ferus caballus) on western public rangelands has necessitated that federal agencies, such as the Bureau of Land Management (BLM) and U.S. Forest Service, develop novel approaches to curb growth including reproduction management. However, bureaucracy has hindered effective research and application of horse management on public lands and examples on private lands may present new solutions. The need for food assistance increased by 300% among Utah families as a result of the COVID-19 pandemic. Farmers and ranchers were also adversely impacted by market losses and processing shortages. In response, Farmers Feeding Utah was developed to facilitate access to fresh agricultural produce for families in need.

Blended-design courses integrate both face-to-face and online learning. This thesis discusses the use of three teaching innovations and their effect on student engagement and course satisfaction in a blended-design nutrition course. The three teaching innovations include 1) a web-based learning platform, called Connect (published by McGraw-Hill Education) 2) other easily accessible technological tools (such as Google+), and 3) higher-level use of a graduate-level teaching assistant.

Food neophobia, the fear of new foods, has been identified as a significant barrier to the intake of healthy foods, including fruits and vegetables in young children. Food neophobia can hinder dietary quality as well as dietary variety by limiting the development of food preferences. In order to evaluate the short-term educational and behavioral impact of the American Heart Association's "Face the Fats" web application had upon college students, a study involving 116 Utah State University undergraduate students was conducted. A one-group pre-posttest design was utilized to answer eight research questions focusing on: health risks associated with trans fat, general trans fat knowledge, ability to identify foods containing trans and saturated fats, food label information, healthy alternatives to trans fat, and readiness to change trans fat intake. The Effect Of Parent Involvement In A Nutrition Education Program For Primary Grade Pupils, Barbara A. Kirks

Three schools were matched for socioeconomic data, location, and quality. Students in kindergarten through grade three in two schools received nutrition education; the third school was the control. Of the two treatment schools, one was randomly assigned to receive parent as well as student education in nutrition. Three-hundred and seventy cognitive scores, 168 affective scores, and 100 plate-waste analyses were collected in both pretest and posttest phases. At the end of the four-month treatment period, 24-hour food frequency recalls were collected for 151 children.
