Evaluating Food Safety Systems Development And Implementation By Quantifying Haccp Training Durability, Marienne A. Anandappa
Evaluating Food Safety Systems Development And Implementation By Quantifying Haccp Training Durability, Marienne A. Anandappa
Theses and Dissertations--Animal and Food Sciences
HACCP-based food safety programs have been widely acclaimed, accepted and implemented as an effective means of managing food safety risks. While HACCP training is a cornerstone of managing HACCP programs, there is little information about the effectiveness of HACCP training and the durability of HACCP knowledge. Findings reveal a link between involvement level in HACCP activities and the accuracy of HACCP knowledge over time. Opportunities for peer training in HACCP, irrespective of overall experience in the food industry provide favorable circumstances for maintaining accuracy of HACCP knowledge. The optimal window for engaging employees in HACCP is directly following the completion …

Engaging students is a difficult task faced by all academics. Student engagement can be achieved by giving ownership of their learning back to the student and by carefully aligning the assessment methodology to the students learning and future employability. To promote learning ownership in this case-study, a group of final year students were involved in the design of the delivery (‘flipped classroom’) and assessment strategy (‘flipped assessment’) of the curriculum. Upon reflection, students noted a deep understanding of their self-selected topic by taking ownership of their learning and their ‘assessment for learning’ within the bounded learning environment. Additionally, students enhanced …

Line Up, Line Up: Using Technology To Align And Enhance Peer Learning And Assessment In A Student Centred Foundation Organic Chemistry Module., Barry Ryan
Articles
This paper describes how three technologies were utilised in combination to align student learning and assessment as part of a case study. Multiple choice questions (MCQs) were central to all these 10 technologies. The peer learning technologies; Personal Response Devices (a.k.a. Clickers) and PeerWise (http://peerwise.cs.auckland.ac.nz), were implemented to achieve scaffolded, self-directed independent learning by the students which aligned to the assessment methodology through creating, analysing, answering and discussing multiple choice questions. Personal response devices enhanced in-class activity involvement, whilst PeerWise provided structure and support for independent student learning through 15 defined outside class activities. An associated technology, online MCQs hosted …

Critical Research Needs For Successful Food Systems Adaptation To Climate Change, Michelle Miller, Molly Anderson, Charles A. Francis, Chad Kruger, Carol Barford, Jacob Park, Brent H. Mccown
Department of Agronomy and Horticulture: Faculty Publications
There is a growing sense of the fragility of agricultural production in the Global North and South and of increasing risks to food security, as scientific observations confirm significant changes in the Gulf Stream, polar ice, atmospheric CO2, methane release, and other measures of climate change. This sense is heightened as each of us experiences extreme weather, such as the increasing frequency of droughts, floods, unseasonal temperatures, and erratic seasonality. The central research challenge before us is how global, national, regional, and local food systems may adapt to accelerating climate change stresses and uncertainties to ensure the availability, …

The Biodiversity Heritage Library (BHL), created in 2006, is the result of a collaboration of ten natural history museum and botanical garden libraries seeking to digitize core taxonomic literature and to make it free and openly available throughout the world. Today, the BHL includes fifteen member institutions whose efforts have shaped a collection of over 60,000 titles. It is supported through a combination of membership dues, in-kind support from member institutions, contributions from the user community, and direct support from the Smithsonian Institution Libraries, and it reaches tens of thousands of users each year. While managing the complex partnership has …
Integrating Movement And Science To Promote Physical Activity And Academic Performance In Middle School Children, Kevin E. Finn, Kyle Mcinnis
Integrating Movement And Science To Promote Physical Activity And Academic Performance In Middle School Children, Kevin E. Finn, Kyle Mcinnis
Health Sciences Faculty Publications
Background: Recommendations from leading U.S. health agencies concerned with reducing childhood obesity call for increased physical activity during school and afterschool environments. Methods: We developed the Active Science curriculum, which is a variety of activity-based lessons (e.g., nature hike, dance class, walk at local park, treadmill at local YMCA) and incorporated them into traditional science classes and after school programs for middle school children in a low-income, ethnically diverse community. Following the activity experiments, students and teachers uploaded data from devices to an interactive website that provided inquiry-based exploratory learning of science content. Results: Physical activity results showed that the …

Results from this study suggest that great caution should be used when referring co archived palynological slides.
A New Plant Record For Iowa: Lactuca Hirsuta (Asteraceae), Thomas L. Eddy
A New Plant Record For Iowa: Lactuca Hirsuta (Asteraceae), Thomas L. Eddy
Journal of the Iowa Academy of Science: JIAS
A new record of a native vascular plant, Lactuca hirsuta Muhlenberg ex Nuttall var. sanguinea (Bigelow) Fernald, is reported for Iowa. A specimen was collected in 1983 by the author during a study of the Swaledale railroad prairie in Cerro Gordo County, north central Iowa (Eddy 1988). The plant was inexplicably excluded in the species catalogue when a Swaledale railroad flora was published in 1988; thus, this “new” Iowa record in 2013 was collected 30 years prior. The voucher specimen was “re-discovered” by Dr. Neil A. Harriman at the University of Wisconsin-Oshkosh (OSH), and its identification verified.

Smaf: A Soil Health Assessment Tool, D. L. Karlen, C. D. Nance, D. L. Dinnes, D. W. Meek
Journal of the Iowa Academy of Science: JIAS
The Soil Management Assessment Framework (SMAF) was developed to help quantify soil quality/health effects of tillage, crop rotation, and other soil management practices. Our objective was to determine if the SMAF could detect soil health differences after growing a single winter triticale (X Triticosecale Wittmack) crop. Soil samples were collected from 0 to 7.5- and 7.5 to 15- cm depth increments during the 2003 – 2004 and 2004 – 2005 growing seasons near Ames and Lewis, IA, and analyzed for several potential soil quality indicators. The SMAF analysis showed higher soil quality ratings for surface than subsurface samples. It also …
The Mediating Role Of Dietary Patterns On The Relation Between Acculturation, Psychosocial Factors, And Cardiovascular Disease Risk Factors In The U.S. - Mexico Border, Ximena Burgos
Open Access Theses & Dissertations
Chronic diseases affect both, developed and developing countries around the world. In the U.S., cardiovascular diseases (CVD) are the leading cause of death for all groups including Hispanics (Heron, 2009). Hispanics are disproportionally affected by CVD and experience risk factors at higher rates than non-Hispanic whites (Swenson, 2002). Although CVD are among the most expensive and widespread health problems, they are among the most preventable. Evidence shows that diet plays a very important role in the development of chronic diseases; current dietary changes are partially responsible for the increasing epidemic of chronic diseases worldwide. It is well established that the …

An Interdisciplinary Research Course In Theoretical Ecology For Young Undergraduates, Glenn Ledder, Brigitte Tenhumberg, G. Travis Adams
School of Biological Sciences: Faculty Publications
As part of an interdepartmental effort to attract promising young students to research at the interface between mathematics and biology, we created a course in which groups of recent high school graduates and first-year college students conducted a research project in insect population dynamics. The students set up experiments, collected data, used the data to develop mathematical models, tested their models against further experiments, and prepared their results for dissemination. The course was self-contained in that the lecture portion developed the mathematical, statistical, and biological background needed for the research. A special writing component helped students learn the principles of …

A Walk Down The Red Carpet: Students As Producers Of Digital Video-Based Knowledge., Barry Ryan
Articles
Disengaged and apathetic students are common in many undergraduate classrooms. Learning to these students is a passive process, typified by a consumer-like attitude. One approach to engage students, and enhance the learning experience, is to integrate active learning into the curriculum. The purpose of the pedagogical evaluative study described here was to investigate if student researched, designed and created digital video could act as a viable reusable peer learning resource. Although the use and integration of technology was central to the scope of this project, other ideas such as threshold concepts, the requirement for both active and authentic social constructivist …

Net Effects Of Batrachochytrium Dendrobatidis (Bd) And Fungicides On Anurans Across Life Stages, Jenise Brown
Net Effects Of Batrachochytrium Dendrobatidis (Bd) And Fungicides On Anurans Across Life Stages, Jenise Brown
USF Tampa Graduate Theses and Dissertations
Amphibians are declining at alarming rates globally. Multiple factors contribute to these declines, including chemical contaminants and emergent diseases. In recent years, agrochemical use, especially fungicide applications, has increased considerably. Previous studies have demonstrated that these agrochemicals leave application sites and enter wetlands via runoff and have detrimental effects on non-target organisms. For example, exposure to contaminants can have multifarious effects on amphibians, such as reducing their ability to deal with a secondary stressor, such as disease.
A pathogen that is found concomitant with chemical contaminants in aquatic systems is Batrachochytrium dendrobatidis (Bd). Bd has decimated amphibian populations worldwide. Susceptibility …

Use Of Stable Isotope And Trace Metal Signatures To Track The Emigration Of Female Blue Crabs, Callinectes Sapidus, From Tampa Bay, Sky Barrington Williams
USF Tampa Graduate Theses and Dissertations
The blue crab, Callinectes sapidus, supports a successful fishery in the Atlantic Ocean and throughout the Gulf of Mexico, with a total landing of 8,158,788 lb. and a total value of $10,562,128 for the state of Florida during 2012 (FWC 2012 Annual Landings Summary). An accurate and comprehensive understanding of the blue crab's life history and seasonal migration behavior is essential in defining effective management strategies for the fishery. Tag recapture studies and ultrasonic tracking methods for studying blue crab migrations are costly in terms of time and resources. In this study an alternative approach, microchemical natural tagging, was …
Seeds Of Resistance: Towards A Revolutionary Critical Ecopedagogy, Peter Mclaren
Seeds Of Resistance: Towards A Revolutionary Critical Ecopedagogy, Peter Mclaren
Education Faculty Articles and Research
The death throes of mother earth are imminent unless we decelerate the planetary ecological crisis. Critical educators, who have addressed with firm commitment topics of race, class, gender, sexuality, disability, and other social justice issues are casting their eyes to the antagonism between capitalism and nature to ask themselves how we can rationally regulate the human metabolic relation with nature. As the global power complex reduces human life and mother earth to mere production and consumption, critical revolutionary ecopedagogy is developing new, unalienated forms of selfpresence. Ecopedagogy is inspired by and inspires a new social arc, rooted in practices of …

A Preliminary Investigation Of The Validity Of Time-Based Measures Of Sustained Attention For Children, Michael R. Kulfan
A Preliminary Investigation Of The Validity Of Time-Based Measures Of Sustained Attention For Children, Michael R. Kulfan
Antioch University Dissertations & Theses
This study is a preliminary investigation of the validity of using time-based measures to quantify sustained attention in children ages 6-12. Problems with sustained attention negatively affect childhood learning and development. The prevalence of disorders known to impact sustained attention performance continue to rise in the United States. Currently, commercially available, objective measures of sustained attention use normative comparisons that provide limited information about the effect such problems have on child performance in natural settings. We reviewed test data from 290 charts of children ages 6-12 referred for neuropsychological evaluation. The Test of Everyday Attention for Children (TEA-Ch) is an …

York River Water Quality Curriculum: Using Real Water Quality Data To Investigate Water Quality Cycles And Answer Applied Marine Science Questions, Bob Carroll, Sarah Mcguire
Reports
Considering that Virginia has approximately 50,000 miles of rivers and streams, 2,500 square miles of estuarine water and 100 lakes greater than 100 acres, water quality monitoring with your students is a great hands-on activity that gets students thinking about the properties and processes occurring in classroom aquaria, lake, stream, river, estuarine and marine environments. It can be difficult to elucidate water quality patterns or trends with student generated data due to the low number of samples taken, the possibility of inaccurate results due to user error or expired test kit reagents as well as the innate lack of accuracy …
