Educating and training a multisectoral food systems workforce is a critical part of developing sustainable, resilient, and healthy food and water systems. This paper shares perspectives from a working group of educators, learners, and food systems subject matter experts that collaborated over the course of a year to develop, pilot test, and evaluate two interactive webinar series with a multi-site cohort of dietetics interns and graduate students. The three-part webinar series format included a training webinar, a practice activity, and a synthesis webinar. This article describes how a focus on outcomes can be a tool for guiding systemic change. By focusing on positive outcomes to be achieved, a group can guide its collective efforts toward an ideal future rather than becoming fixated on individual problems to solve. While there is support for an outcome-guided approach in the literature on individual and organizational change, this approach has not been used extensively to support department-level changes in science, technology, engineering, and mathematics (STEM) education.

The problem of practice is the inconsistent implementation for disruptive technology—mixed reality (MR). Currently, faculty are in charge of integrating MR into andragogy. According to the 2018 Intergovernmental Panel on Climate Change, without urgent global changes, climate catastrophe caused by warming of greater than 1.5°C will occur by 2030, endangering the planet's capacity to sustain human populations and livelihoods. The National Network for Sustainable Living Education administered a national survey in January 2017 to assess how well-positioned Extension is to address sustainability in the communities the organization serves. Educators from 40 states responded, and 1,395 usable surveys were received. Survey results will help Extension employees discover opportunities for innovation and relevancy in their programming.

This research investigates various methods for producing food on the campus of Gettysburg College in order to improve food sustainability. The transportation of food contributes to the increased use of fossil fuels, which in turn leads to global warming and climate change. By producing a larger portion of its food on-campus, Gettysburg College could reduce the amount of food transported to the school, thereby lessening the College’s environmental impact. Urban farming techniques, hydroponics, aquaponics, and greenhouse-based agriculture are explored as viable methods for achieving this goal. I reflect on Big History texts, critical papers and books as well as my own experiences and interviews with others. My research and reflections suggest that big history pedagogy failed to convey sufficient meaning and purpose to students.
