Culinary arts covers the multidisciplinary field and areas of practice and study which includes culinary performing arts (cooking), gastronomy (food studies), bakery and pastry arts, food and beverage studies (bar, restaurant, barista), wine studies , food product development and health, hygiene and nutrition. So many individuals have come into this industry and gained local, national and international success.

This article examines the applicability and usefulness of the stakeholder strategy matrix in the context of festival management. An extensive literature review gave rise to the development of an online survey. Data for the study were collected from festival managers in the US. This empirical study indicated that internal and external festival stakeholders differ from each other in significant ways, and that different management strategies should be used to manage them. The stakeholder strategy matrix appears to be more effective for the management of internal festival stakeholders and the least effective for managing external festival stakeholders. "Gravity Models" Applied To Projections For New Casinos: Techniques And Results, Will E. Cummings

All developers of new casinos prepare, or have prepared for them, projections for the likely gaming-revenue performance of those casinos; in many cases; regulatory authorities in North America also require or commission independent third-party assessments of such performance. These projections are very frequently based on "gravity models," applying techniques pioneered by Reilly and Huff to analyze other retail activities in relation to the geographic distribution of competitors and potential customers. In this paper, I review roughly 80 examples of such applications from recent casino-licensing procedures in the U.S., and compare their results.

Brazil, the host of the 2014 World Cup and the 2016 Olympics, is known for strong competitive traditions in sports and games. It is also one of only three G-20 countries (together with Saudi Arabia and Indonesia) that currently bans non-state provision of gambling products. Whereas past research studied the impact of online reviews on a hotel’s image, the present study analyzes the impact of various measures of customer engagement on the local market ranking of a hotel. For these purposes, the researchers collected data on a sample of hotels including the number of reviews, absolute rating (i.e. 1-5 stars), and market ranking (i.e. 1st, 2nd, 3rd place) on TripAdvisor. The authors tested the relationships between number of reviews, market ranking, overall rating and number of booking transactions. Nevada Gaming Revenue: A Comparative Analysis Of Slots And Tables, Scott Boylan

Throughout much of its existence, Nevada’s gambling industry has been dominated by table games. Historically, slot machines were of secondary importance because they did not generate much revenue and were costly to maintain and operate. Starting in the late 1970s, a series of technological milestones improved the form and function of slot machines, and fueled replacement cycles on casino floors. Nevada gaming revenue data provides evidence of the economic effects of these improvements. Since 1984, slots generally have produced larger revenue gains than tables, although those gains are distributed neither uniformly over time nor across gaming markets. In addition, slots …

The present research sought to understand customer and employee incivility in the hospitality industry. The study identified customer actions that are perceived as uncivil by employees and coping strategies used by employees after experiencing uncivil behavior. Finally, service-recovery situations are differentiated from security-related incidents and guidance is offered to hospitality managers regarding the minimization of customer incivility. An empirical survey was distributed to 297 hotel employees. Regression analysis indicated that the effects of customer incivility were an increase in: customer aggression, employee negative emotions, employee-to-customer incivility, employee-to-employee incivility, and employee sensitivity to uncivil acts. Many people enjoy theme park and other leisure experiences with their families; however, today a great number of single, geographically mobile individuals desire to partake in such experiences. 'Meetup' is the world’s largest social network of local groups and thus allows for both online and off-line (in person) interactions. Using an ethnographic approach, this study examines how individuals can enjoy activities centered on common activities, interests, and opinions (AIO) via immersion in a Meetup group over the course of a year. This paper analyzes state lotteries in the economic and cultural context of the late twentieth century. As access to traditional meritocratic advancement declined, many Americans perceived lotteries as new means of attaining increasingly elusive upward mobility. Their turn to lotteries was facilitated by grassroots coalitions as well as lottery advertisers who claimed lotteries as effective means of making money. The relationship of lotteries and social mobility reveals the full implications of lottery playing in the United States and the reasons this form of gambling has assumed new importance as providing access to the American Dream.

Austin State University provides an opportunity for students to experience these values such as networking, commitment, and building self-confidence.
