Authenticity is deemed to be a crucial element in many tourism experiences. Tourism, however, is often accused of succumbing to notions of perceived authenticity to ensure commercial success, leading to misrepresentations of cultures. Food tourism, conversely, is advocated as a means of encountering genuine culture, history and lifestyle. This paper investigates the role of food tourism as an authentic representation of culture in Cork’s English Market. In-depth interviews were conducted with market traders and analysed through the grounded theory method. This paper will examine the feasibility of restaurants integrating or providing nutritional information labels on food menus to increase business sales and gain customer satisfaction. Pearl Street Grill & Brewery came into existence in 1997 at 76 Pearl St in downtown Buffalo, NY. It was initially formed as a partnership between a group of local investors and the Wynkoop Brewing Company of Denver, Colorado which was already a successful brewpub operation.

The objectives of this research study were to: (1) determine the total labor time by work function in the production of eight vegetarian entrees, (2) ascertain total labor cost in the production of the selected entrees to determine total cost of entree, and (3) compare labor time data from four of the entrees selected with data from a research project conducted earlier.

Continuous time study techniques were used to collect labor time data in the production of the eight vegetarian entrees. Data collected were processed and tabulated on an Apple II computer system. Actual time expended in each work function …
