Hong Kong derives its name from a Cantonese expression 香港, which means "fragrant harbour". Scholars attribute the name to incense factories that stored merchandise in Aberdeen warehouses in the 19th century, but these days it's the scent of cooking that fills the air with sweet aromas as a wave of new restaurants open their doors. As Daniel Jeffreys reports, the city's vibrant culinary scene has made its appetite for skilled labour almost insatiable.

In 2017/18 the Vocational Training Council's International Culinary Institute will open the doors of its new building in Pokfulam. The leaders of Hong Kong's culinary industry have welcomed the project, which is designed to speed the flow of trained staff to the city's booming food sector.

My research project examined sustainable practices in relation to food sources at three universities located along the Pacific Coast of North America. The academic institutions were the University of Alaska Anchorage (UAA), the University of California Santa Barbara (UCSB), and the University of British Columbia (UBC) in Vancouver. These schools were selected because while they each foster an abundance of “local” foods and food industries, they represent different stages in the three pillars of sustainability for food practices. The licensed industry is an increasingly competitive market place, many bars have responded by empowering staff and undertaking structural and management reforms in recent years. Undoubtedly, these changes have significantly raised the levels of customer service and enhanced customer satisfaction. Paradoxically these changes, combined with the responsibilities allocated to bar staff and management to supervise and manage bars with autonomous control have created more fertile conditions, scope and opportunity for dishonest actions by staff members.

The Mediterranean Diet: Could Obese America Eat Its Way To A Longer Life?, Jordan Gillenwater

The Mediterranean Diet (MD) is a long-standing form of nutrition that may be partially responsible for the long life-expectancy of European Mediterranean countries. If this diet is capable of increasing longevity, it may be worthy of integration into U.S. culture. This study uses literature to explore the effects of the MD on disease prevention, as avoidance of potentially lethal, non-communicable disease could increase longevity. Nationally prevalent diseases were studied, including obesity, type II diabetes, and COPD, among others. Results indicate that the diet has been linked to lower risk for development of a wide variety of diseases, thus indicating it …

The purpose of an associate level hospitality management degree program is to prepare graduates for careers in the multi-faceted hospitality industry. In order to be successful these graduates must have the knowledge, skills and ability to be successful in the industry. Americans have become impatient with poor dining service standards. Some believe a depressed economy, lack of skilled labor, and even bad customers have contributed to a new epidemic (Kim & Chen, 2010). Bottom line, most paying customers probably prefer a pleasant service staff to an unpleasant one. Service staff with pleasant personalities and positive attitudes impact the customer experience and overall satisfaction (Ryan & Ployhart, 2003; Barrash, & Costen, 2008). Through an analysis of tuition data, this paper explores the difference in cost of an associate degree in culinary arts from public and private postsecondary schools. The average cost of the associate degree in culinary arts at private school is more than 500% higher than the average cost at the public schools. This disparity in cost raises a question of value. Is the degree from a private school worth more to justify the additional cost? The literature review established the use of post-graduation earnings as an accepted measure of the value of the degree. American consumers are eating more and more of their meals outside the home. Americans are also becoming more diet conscious and the Select Committee on Nutrition and Human Needs (HEW) has encouraged restaurant managers to consider their impact on the nation’s health. The purpose of this study was to survey the eating-out habits and preferences of residents in three adjacent cities in southeastern Washington (Pasco, Richland, and Kennewick), and determine the potential acceptance of a natural foods restaurant in this Tri-City area. -- Method. The specific objectives of this research were to (1) develop an audiovisual self-instruction series with corresponding lectures for in-service education of hospital food service personnel, and (2) test the null hypothesis that there is no significant difference in post-test scores between the conventional lecture method and the self-instruction method.
Supportive personnel of a 516-bed, non-profit university hospital food service were randomly selected to participate in the study. An in-service education program series of five topics was developed and presented by two methods: lectures and an audiovisual self-instruction method using the 3M Sound on Slide projector. Observations on each subject included …
