In the hospitality industry, service-learning opportunities are particularly important for students seeking work in the meeting and event planning industry. Faculty of a hospitality program at a regional university in East Texas decided to investigate the benefits in embedding service learning activities to their hospitality courses. The study investigated student perceptions of their participation in compulsory service learning assignments were created and implemented. Service learning assignment benefited the respondents personally; it benefited the sponsoring organization; it benefited the respondents’ career goals and their own individual awareness of community issues.

In this qualitative pilot study, the author conducts research on chef educators and their background and interest in, preparation for, and comfort level with teaching college students about culinary sustainability. Five chef educators teaching in a culinary/hospitality program were interviewed about their personal and professional experiences with culinary sustainability. Two broad themes emerged from the data. First, initial exposure of participants to culinary sustainability was impactful and led to subsequent internalized, habitual practices. Two sub-themes under this first finding were related to the influence of early family and early career experiences. Second, continued learning about sustainable culinary practices is primarily …

This study investigated if there was a significant difference in hospitality students who did and did not participate in a study abroad program to determine if study abroad had an impact on their emotional intelligence, diversity, and sustainability awareness. The results of this study will assist both hospitality education and study abroad by providing information.
A descriptive, four-section survey was distributed online via Qualtrics utilizing snowball sampling. A total of 110 respondents participated in the study; 72 nonstudy abroad and 38 abroad. It is increasingly important for organizations in the hospitality industry to utilize qualitative, customer-generated content on social media to gain insight into guest perceptions, intentions, and outcomes. On the basis of the service quality model, this research sought to investigate the discrepancy between expected and perceived service. Guest reviews from online review websites like Yelp and TripAdvisor were randomly sampled for 16 hotels across the United States of America. For each hotel, 20 written comments and their corresponding numeric ratings were coded and analyzed using Tropes. The emphasis on tourism in the economy of South Dakota provides extensive opportunities in the field of Hospitality and Tourism for employment in the region. Specific employment opportunities exist in the hotel, food and beverage, and travel accommodation industries. Local job postings indicate opportunities for Lodging Managers, Meeting, Convention, and Event Planners, Food Service Managers, and Administrative Service Managers. On a national level, these positions all show expected growth of between 2-33% over the next seven years (Bureau of Labor Statistics Occupational Handbook, 2015).

Some supervisors lack effective strategies to retain millennial-generation employees. The purpose of this multicase study was to explore effective strategies to retain culinary-educated millennial employees in a full-service restaurant. Nine millennials and three supervisors from three full-service restaurants in Denver, Colorado, consented to semistructured interviews concerning retention strategies. Herzberg’s two-factor theory served to guide the scope and the data analysis for the multicase study. Ten subcategories emerged from the three themes that aligned with Herzberg’s motivation factors, hygiene factors, and millennial values and attitudes. Purpose
The purpose of this study was to provide insights into developing effective crisis responses within the cruise industry. Particularly, this study tested the effects of different crisis responses on individuals’ safety perceptions and cruise travel intentions. This study also tested how individual characteristics; such as past cruise experience and demographic characteristics, may affect the communication outcomes.
Originality/Value
Using an interdisciplinary approach, this study applied crisis communication theories to a cruise travel context. The findings of this study can be directly applied to develop effective crisis responses for hospitality practitioners, which exemplify the essence of translational research.

The purpose of this study is to examine the factors that affect guest services in the restaurant industry of South Mississippi as examined from the line level employee. This satisfaction can include things in the servicescape (e.g. noise level, parking availability) as well as the service support that a waiter receives from their coworkers and supervisors.
