Purpose

This paper aims to evaluate and structure the basic heuristics consumers use in evaluating word-of-mouth (WOM) about luxury hotel brands while analyzing the impact of deception in online consumer reviews.

Design/methodology/approach

The research used a two-study mixed-methods approach, using interpersonal deception theory and social proof theory as lenses to conduct our analysis. For the first study, a qualitative conceptual mapping analysis was conducted, examining online consumer reviews to identify key concepts and their relationships in the context of luxury hotel brands. In the second study, the themes were further examined using a fuzzy-set qualitative comparative analysis to analyze their …

The negative influence of meaning-making through work significantly affected emotional exhaustion (EE) but not depersonalization (DP) and reduced personal accomplishment (RPA). The study recommends that operators and managers of classified hotels recognize the importance of boosting …

The Impact Of Sharing Economy Platforms On Tourism: Opportunities, Challenges, And Future Directions, Mehmet Bahar

Journal of Global Hospitality and Tourism

The sharing economy is a socio-economic phenomenon where surplus goods and services, aided by technology, are shared mutually among those in need and providers, coming together to exchange these goods and services. Economic crises, environmental issues, changes in social life, and technological advancements have led to the emergence of the sharing economy as an alternative model to existing goods and services. In this regard, the tourism sector has also been affected by this change, offering new travel and holiday alternatives, competitive advantages to stakeholders, the creation of new income sources, and the establishment of a more sustainable approach. Consequently, this …

Exploring The Significance Of The Traditional Chef’S Uniform In Making Sense Of Professionalism In Culinary Arts Using Interpretative Phenomenological Analysis, Orla Mc Connell

European Journal of Food Drink and Society

Previous studies have found that professionalism is an important success factor for chefs. Yet, research on what professionalism “means” to chefs, and how they “make sense” of it, is currently underexplored. While there is some evidence of the significance of the traditional chef’s uniform in professional identity formation, it also needs further consideration. Culinary arts lecturers and chefs have already contributed to these discussions, but the student voice remains largely unknown. Alongside this, there is no prior research specifically on professionalism in culinary arts in Ireland. Therefore, a research gap emerged, which this paper intends to address. Using interpretative phenomenological …

Identifying Youth Appeals In Alcohol Alternative Social Media Content Through Framing, Melina Oneal Jan 2024

Identifying Youth Appeals In Alcohol Alternative Social Media Content Through Framing, Melina Oneal

West Chester University Master’s Theses

Proposed regulations for alcohol advertising prevent beverage companies from targeting people under the legal drinking age. However, similar regulations for alcohol alternative beverages are less explored, which could allow alcohol alternative products to create awareness for alcoholic beverages among youth. Alcohol alternatives beverages, including no-alcohol and low-alcohol products, are increasing in popularity and can function as compliments to alcoholic products to decrease the total alcohol volume consumed or as substitutes for alcoholic products. Framing theory can be operationalized through the Content Appealing to Youth Index, an index of content elements found in research literature to be appealing to youth, to …

Doctoral

The purpose of the research is to explore the experiences of mature part-time culinary arts degree students in Ireland to examine the phenomenon of professionalism. While other researchers have sought the views of culinary arts educators and practitioners, the student voice is underexplored. The research focuses on a particular context: a major transition in the participants’ lives: their return to education, while working full-time as chefs. Their experiences are considered unique since they, as a group, navigate between two worlds: industry and academia. Notably, a recent study in Ireland found that professionalism is an important career success factor for chefs. …

Adapting And Validating A Survey To Assess Host Communities Support For Migration, Jhon G. Botello, Katherine Palacio, Erika Frydenlund, Humberto Llinás, Jose Padilla

VMASC Publications

Migration presents challenges to receiving communities, as it tests their ability to respond to unexpected expenditures and social stresses. Evaluating the local impact of rapid and substantial migration flows is difficult due to the absence of a validated instrument for assessing community support for migration. Our study adapted and validated a Support for Migration Assessment survey (SMA) based on Social Exchange Theory (SET). The validation of the SMA contributes in two significant ways. First, it establishes an instrument that enables the assessment of support for migration (SFM) by considering community-level factors: trust in institutions (TII), overall community satisfaction (OCS), and …

Water Misuse In Tourism And Link To Poverty Cycles, Chloe Landry Jan 2024

Water Misuse In Tourism And Link To Poverty Cycles, Chloe Landry

Student Research Design & Innovation Symposium

Tourism is a key distributor of wealth in many developing countries and yet they still struggle with basic needs like food, adequate shelter, and water. Water poverty is extremely prevalent in already poor locations, and when this situation merges with over-tourism it only gets worse. Tourists consume almost 3-4 times the amount of water than locals. This can be from showers, kitchen appliances, recreational uses, and the drinking supply. Since tourists bring in economic empowerment for these destinations, they are inclined to use however much water they please while the locals suffer. This creates a cycle of poverty that begins …

Crikey: A Man Misremembered, Emma Smith Jan 2024

Crikey: A Man Misremembered, Emma Smith

Student Research Design & Innovation Symposium

Hegemony in media is the process in which the dominant ideologies of a society are upheld through signs, signifiers, and other imagery. Using “The Crocodile Hunter,” Steve Irwin as an example of a larrikin, media artifacts and biographical remnants of Irwin’s life were assessed to determine if Steve met the criteria to be considered a larrikin. Critical opinions of Steve Irwin, as well as profiles of other famous Australian larrikins, were also used to compare and contrast the ideals of the larrikin. The purpose of this project was to analyze the concept of hegemony and how it relates to larrikinism, …

It focused on the benefits of incorporating accessibility into the three pillars of sustainable tourism: environment, community, and economy. With an estimated 1.3 billion people living with a significant disability globally, tourism providers are neglecting a significant demographic of travelers with immense influence over tourism revenue. Barriers to accessible tourism include a lack of comprehensive information, poor digital accessibility, and both physical and …

Business ETD Collections

This research explores the influence of McDonald’s plant-based product development strategies on consumer behaviour and brand perception. It highlights the challenges McDonald’s faces when launching plant-based products, particularly in the US, where the desired impact on consumers has not been achieved. The study contrasts this with the success of these products in Europe, where they have enhanced the brand’s sustainability image and contributed to profitability. Additionally, McDonald’s has made strides toward promoting healthy eating by offering plant-based and diet products, while also accommodating cultural and religious sensitivities in its menu localization. The findings emphasise the importance of continuing these strategic …

Evaluating Mcdonald’S Sustainability Practices: Real Commitment Or Greenwashing?, Lorena Elizabeth Alonso De León

Business ETD Collections

This study critically examines McDonald's sustainability claims and practices, focusing on its greenhouse gas emissions and beef consumption. Through secondary research, the study contrasts McDonald's sustainable initiatives with data from reputable sources and climate institutions. While McDonald's has set a net-zero emissions target for 2050, its position as one of the largest beef buyers, contributing 1-2% of global beef consumption, undermines these efforts. The company’s approach to achieving net-zero emissions is described as vague and unattainable without significant changes to its plant-based menu, agricultural practices, and consumer awareness. The findings highlight a gap between McDonald’s sustainability claims and its operational …

Faculty Publications

It is a hypothetical position that employees in the hospitality industry in Ghana experience salary disparities based on the gender of the employee. Pay disparities exist because of unconscious biases in areas such as hiring, promotions, performance reviews, and salary decisions. In ensuring equal pay for equal work to fulfill the International Labor Organization (ILO) convention, this study investigated the internal equity pay of the employees in Ghana's hospitality industry based on equal work. This quantitative association study adopted a self-constructed research instrument to measure internal equity pay and randomly selected 350 respondents in the hospitality industry in Ghana to …
