Short-Term Rental Versus Small Hotel Industry Amid Covid-19 Pandemic: What Drives Millennials’ Accommodation Choices?, Tammy Wee, Melissa L. S. Liow
Journal of Global Hospitality and Tourism
This paper aims to establish the motivation factors behind the accommodation choices made by millennials for stays at short-term rental properties and small hotels amidst the COVID-19 pandemic, a topic that remains under-represented in the hospitality and tourism literature. Using data from a survey of 145 millennials who stayed at an Airbnb property and a small hotel in the past year, a non-parametric test was utilized to compare six motivation factors that affect millennials’ accommodation choices, guided by the push-pull motivational framework. The Wilcoxon signed-rank test results showed that the millennials significantly considered price and reviews as their common pull …
Reconsidering Services Marketing As A Discipline, Mark S. Rosenbaum, German C. Ramirez
Reconsidering Services Marketing As A Discipline, Mark S. Rosenbaum, German C. Ramirez
Journal of Global Hospitality and Tourism
This viewpoint suggests that foundational theories and concepts which characterize the services marketing discipline may no longer be valid due to the global pandemic. The authors discuss the impact of the Great Resignation on both consumers and organizations and posit that many consumers now accept lower levels of service offerings and performance. They further question whether organizations will ever return to pre-pandemic service levels. Further, the authors contend that the discipline’s focus on employee-customer relationships has now shifted to customer-technology exchanges and that human interactions, in many service exchanges, are diminishing in importance. The authors put forward future research questions.

The author discusses several steps towards having a strategic event plan in place within hospitality establishments, that can strive to regain, and potentially surpass, pre-Covid attendance and profits. These steps include (1) understanding who the guest currently is and who we want to encourage for further visits, (2) knowing the current market and what events might stimulate the attendance, and (3) identifying when an event is needed to boost visitation and profitability. The author also puts forward several research questions throughout the viewpoint.

What they expect in retirement is radically different from their parents. So what are the factors that affect whether or not they choose to move into senior living communities? In one of the first studies of its kind, UCF Rosen College of Hospitality Management’s Dr. Suja Chaulagain, Dr. Abraham Pizam, Dr. Youcheng Wang and Dr. Denver Severt look at the motivational factors that influence seniors’ decision-making.

Turning The Tables On Covid-19, Wei Wei
Turning The Tables On Covid-19, Wei Wei
Rosen Research Review
The COVID-19 pandemic all but eviscerated the restaurant industry. Around the world, businesses shut doors. For some this would prove to be forever, and those that did reopen were stifled by strict social-distancing regulations and the challenge of how best to rearrange their servicescapes to meet regulations and still provide an enjoyable dining experience. The big question: how best to do this? Dr. Wei Wei from UCF Rosen College of Hospitality Management and her collaborators examined the issues of built density and customer power to uncover a vital piece of the puzzle.
Essential Worker Heroes, Cynthia Mejia
Essential Worker Heroes, Cynthia Mejia
Rosen Research Review
The COVID-19 pandemic brought with it untold disruptions to the hospitality and related services industries, and it also prompted a dramatic shift in public perceptions towards line-level workers. Normally associated with unskilled and ‘dirty’ labor, these workers were embraced as ‘heroes’ by providing essential services in the face of a severe and frightening public health threat. This phenomenon provided a rare opportunity for researchers in the fields of hospitality and psychology to examine how those workers, and the society they served, made sense of this perceptive shift.

Restaurants Post Covid-19, Elizabeth Yost, Murat Kizildag, Jorge Ridderstaat
Rosen Research Review
When you’re suddenly forced to close 1,800 restaurant dining rooms without any certainty of being able to reopen them any time soon, you need to act decisively and prioritize if you plan to be around for a grand reopening. For Darden Restaurants and their market-leading US brands, those priorities during lockdown were ‘look after the people – look after the cash!’ Dr. Elizabeth Yost, Dr. Murat Kizildag and Dr. Jorge Ridderstaat of UCF Rosen College of Hospitality Management investigate the company’s achievement.

Festivals And The City: The Contested Geographies Of Urban Events, Andrew Smith, Guy Osborn, Bernadette Quinn
Festivals And The City: The Contested Geographies Of Urban Events, Andrew Smith, Guy Osborn, Bernadette Quinn
Books / Book chapters
This book explores how festivals and events affect urban places and public spaces, with a particular focus on their role in fostering inclusion. The ‘festivalisation’ of culture, politics and space in cities is often regarded as problematic, but this book examines the positive and negative ways that festivals affect cities by examining festive spaces as contested spaces. The book focuses on Western European cities, a particularly interesting context given the social and cultural pressures associated with high levels of in-migration and concerns over the commercialisation and privatisation of public spaces.
The key themes of this book are the quest for …

Week 8 Research Article: Implementation Of Robotic Automation In Foodservice, Jessica Minard
Hospitality Graduate Student Scholarship
Studies have been conducted to examine the recent increase in the implementation of robotic automation in foodservice. These studies conclude that serving robots do exist currently, primarily in countries outside of the United States. In addition, studies suggest that customers have a better customer service experience with serving robots if they go into the interaction with a positive perception. Therefore, the implementation of robotic automation in the foodservice industry will possibly continue to be implemented in countries where it has not yet currently been brought to the markets.

Beer Preferences Of Women: Looking At Gender Stereotypes Through The Consumption Of Craft Beer, Jennifer Horowiec
Beer Preferences Of Women: Looking At Gender Stereotypes Through The Consumption Of Craft Beer, Jennifer Horowiec
Hospitality Graduate Student Scholarship
Centuries ago, beer brewing was done by women who were highly respected members of their communities. During the Middle Ages, priests and monasteries took over these duties, and since then, all things beer have become synonymous with masculinity. Through advertising, public drinking spaces, and even coming-of-age rituals, beer consumption has been geared toward men. Even beer styles themselves have been labeled either masculine or feminine with light, sweet and fruity beers being associated with femininity and dark, robust, and hoppy beers being associated with masculinity. Although the stereotype of craft beer consumption being a masculine activity still exists, the number …

The Impact Of Social Capital On U.S. Based Destination Marketing Organizations And Interorganizational Relationships, Jeremy Fairley
The Impact Of Social Capital On U.S. Based Destination Marketing Organizations And Interorganizational Relationships, Jeremy Fairley
Electronic Theses and Dissertations, 2020-2023
Previous literature echoes the notion that destination marketing organizations (DMOs) play a critical role in ensuring a desired tourism development scenario. To date, the performance measurement of destination marketing organizations is paralleled to financial indicators or operations, ignoring the presence and quality of relationships among DMOs and tourism stakeholders. Based on the premise of social capital theory, it is argued that social capital and the inter-organizational relationships between DMOs and tourism stakeholders can influence the success of tourism efforts in a destination, which in return is a contributing factor to the DMOs success as an organization. Furthermore, broader literature indicates …
