Many restaurant organizations have committed a substantial amount of effort to studying the relationship between a firm’s performance and its effort to develop an effective human resources management reward-andretention system. These studies have produced various metrics for determining the efficacy of restaurant management and human resources management systems. This paper explores the best metrics to use when calculating the overall unit performance of casual restaurant managers. These metrics were identified through an exploratory qualitative case study method that included interviews with executives and a Delphi study. Florida bed and breakfasts (B&Bs) were surveyed for the purpose of discovering the attitudes, beliefs, and actual behaviors of B&B owners and operators that contribute to an operation’s success. This study had several objectives: 1) to provide an analysis of attitudes and beliefs perceived to be necessary for success and the actual behaviors exhibited by operators based upon their self-definition of success, 2) to collect demographic information from various bed and breakfasts in Florida, and 3) to expand the limited amount of research that has addressed issues in the bed and breakfast industry. An Investigation Into Hotel Employees' Perception Of Green Practices, Sun-Hwa Kim

This study examined how employees of the hotel industry perceived green practices. Data was collected from 220 employees working in eight green certified hotels in Orlando. Research results revealed that performance levels of green practices implemented by hotels were lower than the importance levels of those same green practices as perceived by hotel employees. The results of the study illustrated that (1) the employees' perception regarding green practices was not different than one of hoteliers in terms of importance and performance, and (2) employees weighted the green practices that were beneficial to them as more important than green practices that …

In a risk assessment process, insular methods of data collection and analysis may lead to an inaccurate risk assessment as stakeholders hold individual biases, conflicting interests and parochial approaches to certain risks. The article considered these issues and tested a consensual risk assessment approach that can overcome many of these issues. A staged risk assessment process was applied within an entertainment complex in the Security, and Food and Beverage Departments. This dissertation empirically investigates the effects of the gaming industry on a local economy, specifically housing prices and sales in the city and surrounding areas of Las Vegas. This study explores many of the economic effects that Las Vegas' relatively unrestricted gaming industry has on surrounding home prices and sales and analyzes the specific forces and the issues they involve. This study categorizes different Taiwanese gambling types using PGSI, and further evaluates the perceptions and attitudes toward the legalization of casino gambling. A survey was conducted using convenient sampling and distributed by Internet. Results indicate that across groups of different types of gamblers, there are significant differences in perceptions toward the legalized casino gambling industry. Also, across groups of different types of gamblers, there are significant differences in attitudes toward legalized casino gambling. Using data from a repeater market hotel in Las Vegas, Nevada, the relationship between sports book and slot machine revenues is examined. Daily sports book write and daily slot handle are compared over a 250 day period. Though many industry leaders theorize that sports book gamblers also wager in slot banks, the results of this research fail to demonstrate a statistically significant relationship between sports book write and slot coin-in. Applying grounded theory methodology and method, this qualitative study uncovers and presents a rich, theoretically expressed understanding of the experience of salaried Black hospitality and tourism professionals who earn at least $100,000 annually. A 13-step customized research process featuring a novel literature review method, which utilizes researcher pre-data collection assumptions as a framework for conceptualizing and processing an unwieldy literature, enhancing post-data analysis, and developing research conclusions, is introduced.

The Winding Stair Restaurant is located at 40, Lower Ormond Quay Dublin on the north side of the river Liffey beside the Ha’penny Bridge. The proprietor is Elaine Murphy. The Winding Stair started life as a bookshop and café which was a popular meeting spot in Dublin during the 1970s and 1980s. The café closed in 2005 and in 2006 the current proprietor re-opened it as a restaurant.
