An Exploratory Study Of Household Alcohol Consumption From The Us Bureau Of Labor Statistics Consumer Expenditure Survey With A Focus On Market Conditions And Regulatory Structures, Mayya Makarycheva

Dissertations, Theses, and Capstone Projects

Alcohol consumption and use is not just a harmful behavior or a potential recreational activity, but it also may form a way of self-identification.

Each type of beverage apparently has their own profile of dedicated drinkers. Those drinkers are also apparently loyal to the location of purchase. However, one may also consider whether consumption in one location is a predictor of consumption in the other location. This distinct tendency highlights the intricacy of consumption patterns, as on-premise and off-premise consumption simultaneously serve as complements and substitutes in the long run in terms of both location and type of beverage.

New Jersey is the Garden State. The food business is in its nature. But how the state's foodways work, and particularly how they shape the cities of North Jersey, brings vitality to some neighborhoods while leaving others behind. The cities of Orange, Elizabeth, and Paterson have especially interesting food pasts, and particularly promising food futures.

An Industry Under Construction, Hannah Fullmer Dec 2021

An Industry Under Construction, Hannah Fullmer

Capstones

A growing number of entrepreneurs (often young, frequently queer or people of color) are trying to change a restaurant industry from within by opening up their own businesses. HAGS, an upcoming queer-focused fine-dining restaurant and Daughter, a community-focused cafe in Brooklyn are just the newest of these socially-minded ventures popping up across the country. These spaces are committed to creating equitable spaces, addressing toxic restaurant and workplace cultures and are frequently tied to larger social issues like food insecurity, zero-waste initiatives or in the case of HAGS, queer representation. But these new business owners are fighting an entrenched system and …

From Brooklyn To “Brooklyn” The Cultural Transformations Of Leisure, Pleasure, And Taste, Emily Holloway Mar 2020

From Brooklyn To “Brooklyn” The Cultural Transformations Of Leisure, Pleasure, And Taste, Emily Holloway

Publications and Research

To tell the story of Brooklyn’s complex history in hospitality and cuisine is to tell a story about the tensions of high and low culture, of the mobility of capital and residents, and of the tremendous influence yielded by macroeconomic change. A sleepy bedroom community for the eighteenth and much of the early nineteenth centuries, Brooklyn’s waterfront (both historically and today) is deeply tied to its nineteenth and twentieth-century industrial heritage. The ad hoc economies that supported factory and dock workers, included boardinghouses, saloons, brothels, food carts, and amusement parks and drew a stark contrast to those of factory and …

The element of “unwelcomeness” and the burden of proof on the plaintiff to prove sexual conduct in the workplace is one of the flaws of Title VII that make it difficult to protect victims of sexual harassment. This is particularly true in restaurants where a sexual environment is often thought of as “part of the job.” Formal complaint systems, if available, in restaurants are often flawed, even though they can pose as an affirmative defense for the defendant if they are available and a victim does not file a complaint. In the cases examined, all involved an accused supervisor or …

Persuasive Design Of Destination Websites: An Analysis Of First Impression, Heejun Kim, Daniel R. Fesenmaier Jan 2008

Persuasive Design Of Destination Websites: An Analysis Of First Impression, Heejun Kim, Daniel R. Fesenmaier

Publications and Research

This research examines the persuasiveness of destination websites through an investigation of users’ first impression. To achieve this goal, it builds on research by Fogg (2003) and by Kim and Fesenmaier (2007) to assess the effect of the design factors of destination websites on first impression formation. The results of this study indicate that the subjects were able to make quick judgments on tourism websites, and that inspiration and usability were the primary drivers evoking a favorable first impression. This research concludes by discussing the implications of these findings and possible directions for future study.
