Specialty coffee, comprising a tenth of the global coffee trade, is distinguished by its strict quality requirements and traceable origins. The diverse flavor profiles of specialty coffee raise demands on providers to serve individual taste preferences. Prior research has not sufficiently explored how to predict customer preferences for specific flavor profiles or how these preferences influence behavioral intentions such as revisiting or recommending a café. The strong negative consequences caused by the outbreak of the COVID-19 pandemic created the need for a scientific investigation of changes that occurred in the organizational culture of the hospitality industry. This research paper, using the Delphi method, served three purposes. It first assesses the changes that the COVID-19 pandemic has brought to selected cultural components (product, external relations, and entrepreneurship strategy) that shape a hotel’s organizational culture, and determines how it interacts with other stakeholders on an inter-organizational level. The labor-intensive structure, 24/7 service availability, diversity of departments including kitchens, housekeeping, and technical services, the high labor turnover ratios, along with the long working hours and shift systems inherent in accommodation establishments all play a role in the occurrence of occupational accidents (OA). Fundamental reasons underlying OA are unsafe behavior and unsafe working conditions. The restaurant market is becoming more competitive, and businesses are challenged to differentiate themselves in this sector in terms of quality of services. This research aimed to identify the specific indicators for measuring the quality of restaurant service in Brazil. Based on a quantitative paradigm, we adopted a user-generated content analysis with a sample of 1,143,631 customer reviews from 35,611 restaurants in seven Brazilian cities available on the TripAdvisor platform. Hospitality and tourism (H&T) researchers employ structural equation modeling (SEM) and other multivariate techniques to test their models with survey data. These approaches assess relationships among constructs and model fit, but they do not highlight the most influential survey items or links among them. Other challenges include method-specific requirements for appropriate data, the best indices to identify optimal models, minimum sample sizes, missing data, and interpreting the results from complex models. This case study discusses an initiative to aid a traditional Quilombo community in the State of Rio de Janeiro through community-based tourism (CBT). Through the Young Leaders of Americas program, a US Department of State funded initiative, the authors worked together in Brazil and the United States to increase visibility, linkages and awareness of this CBT project. The paper highlights how research in the field influenced what specific steps would be taken in practice to increase the benefits of tourism for the community. CBT as a concept is briefly discussed, and a background of Quilombos in Brazil is given.
