The hospitality industry faces a persistent skills gap as graduates enter the workforce with limited preparation in the adaptive, operational, and AI-enabled competencies modern employers require (Jackson, 2013; Sigala, 2018). Cooperative education offers a structured response, yet many programs default to a single internship that leaves the integration of theory and practice to chance. This report presents an undergraduate scaffolded cooperative education framework developed at a U.S. hospitality business school that sequences two foundation courses, six concurrent work-integrated courses, and a capstone digital portfolio across a two-year arc. Background/Introduction/Purpose: This study examined hospitality and tourism college/university students’ views of their engagement, well-being, and sense of belonging in academic and extracurricular activities, based on 130 responses from students in the United States.
Methods: Descriptive analysis, analysis of variance, confirmatory factor analysis, and structural equation modeling were used to analyze the responses. Qualitative comments were also obtained.
Results: Respondents felt positive overall about their engagement, and many participated in extracurricular activities. The relationships between class engagement and sense of belonging, and between campus engagement and sense of belonging were significant, and the sense of belonging significantly influenced student subjective …

From Kitchen To Canon: Women And Culinary Recognition Executive Summary, Eulanda A. Sanders, Andra Harris

Despite women comprising a majority of the U.S. restaurant workforce, they remain significantly underrepresented in culinary leadership and elite recognition. Using an exploratory, descriptive design that draws on secondary data from the ACS, NRA, U.S. Census Bureau, and the James Beard Foundation, this study maps gender disparities across the culinary career pipeline. Women represent approximately 54% of the restaurant workforce but only 24.8% of chefs and head cooks, with a substantial gender wage gap persisting across the occupation (NRA, 2026; U.S. Census Bureau, 2024). Hospitality employers continue to report a persistent readiness gap between academic preparation and operational performance. Supervisors cite inconsistent communication, limited cultural intelligence, weak leadership judgment, and subjective evaluation systems as barriers to building strong talent pipelines (Baum, 2015). This report presents the Competency‑Rated Experiential Assessment Model (C.R.E.A.M.), implemented within a live hotel operation at The Lodge at Hocking College to address these challenges. Within eight weeks, students demonstrated measurable improvements in communication clarity, cultural awareness, bias mitigation, and professional judgment. This poster presents a framework for bridging the gap between theory and practice in teacher education by designing relevant learning experiences that better prepare preservice teachers. Grounded in seminal teacher education literature, the approach explicitly connects coursework to professional applications while preserving the integrity of theoretical foundations. The framework emphasizes ongoing communication of purpose and alignment across courses. Additional strategies include integrating career-focused activities, facilitating reflective exercises, inviting practitioner perspectives, and providing applied assignments. Evidence from student feedback highlights increased engagement, confidence, and perceived relevance.

The rapid expansion of generative AI (Gen-AI) has reshaped teaching and assessment in online, asynchronous introductory biology courses, creating new challenges for academic integrity and meaningful learning. This poster examines practical strategies to promote ethical AI use while maintaining student engagement. Transparency of instructions and timely, personalized feedback were found to curb AI misuse in online discussion posts. Structured use of AI tutors encouraged responsible engagement with Gen-AI, and surveillance methods for summative exams had mixed effects.

Our objective was to foster increased retention of freshman student and subsequent progression into upper division coursework by incorporating learning skill development and motivational activities into the Introductory Biology courses (BIOL190/191). Enhancement of the introductory biology courses at UNLV has the potential to improve the educational experiences of thousands of students, since about 600 to 800 students enroll in the introductory biology courses each semester. The current study investigates the relationship between noun classes and plant folk taxonomy in Chasu (G 22). The study focuses on two objectives: the first objective is to describe the plant folk taxonomy in Chasu and the second objective is to determine the relationship between noun classes and plant folk taxonomy in Chasu. Data were collected from rural villages in Same and Mwanga districts by using free listing, field interviews (jungle-walk-and-identify), and written texts containing Chasu plant names. Internships play a vital role in bridging the gap between academic knowledge and practical industry experience for hospitality business students. This study investigates the impact of internship experiences on workforce readiness, focusing on gender-based differences in perceived achievements and areas for improvement. Grounded in Experiential Learning Theory (ELT) and Work-Integrated Learning (WIL), the research examines how internships contribute to students’ career preparation. A survey of 373 students revealed that female students emphasized interpersonal and creative problem-solving skills, whereas male students highlighted technical expertise and leadership. Organizations are turning to technologies like artificial intelligence (AI) to enhance employee development, including AI-driven avatars. Drawing on recent literature in microlearning, avatar-mediated education, and technological adoption models, this study examines the potential of AI avatars to personalize instruction, enhance accessibility, reduce costs, and enhance learning outcomes. Purpose – This study examines the impact of COVID-19 on Physical Activity (PA) on hospitality & tourism, kinesiology, and recreation students at California State University. Grounded in a case study in Barbuda in the Caribbean, this research examines sustainability from the perspective of what arts and heritage can contribute to community engagement and local and broader understandings about the environment. This article documents a growing body of literature recognizing the role of arts and culture, including local knowledge and traditional ecological knowledge (TEK), in climate change endeavors. This project focuses specifically on the Walt Disney World Park, Magic Kingdom. I started by collecting data through the MyDisneyExperience app. By recording the data, I was then able to create polynomial functions to the fifth the degree. Each attraction received a function which allowed me to predict the wait times for that attraction. Then, by graphing the functions and analyzing the graph using calculus the “best time” and “worst time” to go to the attraction were found. The goal of this creative project is to conduct research on career fairs and hospitality events to successfully host the first ever Hospitality Career Fair at the University of Arkansas. The lack of career advancement opportunities on the campus for hospitality management students continued to increase despite the rapidly growing industry across the community, so the creation of the career fair would allow improvement for the students and the companies. The impact of COVID-19 has had implications for every single lifestyle and business (Sharma et al., 2022). Not only did it impact the economy, but the service industry took the brunt of it.
