Beavers Coffee & Donuts isn’t the only mobile donut shop in Chicago, but it was the first, and it’s still the only one making its tasty treats fresh to order. Co-owner and co-founder, Gabriel Wiesen's (BUS '08) little donut shop on wheels paved the way for a whole range of related endeavors: catering private events, franchise opportunities and Midwest Food Trucks, another of Wiesen’s ventures, which manufactures nearly half of the licensed food trucks in Chicago. He also launched the Illinois Food Truck Owners Association as a vehicle to amplify owners’ voices and advocate for their rights.

This paper discusses the ways that capabilities and human development theory can guide the creation of entrepreneurship programs, utilizing a framework of human-centered design thinking. It is well known that a variety of institutional factors shape gender outcomes and gender inequality within entrepreneurship, particularly with regard to necessity versus opportunity entrepreneurship and informal versus formal sector entrepreneurship. Integrating the insights from both institutional theory and economic geography, we develop a new conceptual framework to explain how formal and informal institutions in developing countries influence knowledge exchanges within and across geographical locations, thus affecting entrepreneurs’ and firms’ innovative behaviors and outputs. We suggest that the prevalence of informal institutions in developing countries increases the importance of geographic proximity for knowledge exchanges. At the same time, informal institutions provide alternative channels for maintaining non-local social interactions that facilitate knowledge exchanges among geographically distant firms. This study explores the current state of innovation and high-tech entrepreneurial initiatives in Historically Black Colleges and Universities (HBCUs). Previous research showed that institutions’ environment, faculty empowerment, organizational trust, early stage capital, innovation centers and innovative teaching practice had a major effect to support innovation and foster tech-entrepreneurship. We present our conceptual model. The final section explains the current state of research and implications for future research are discussed.

Plastic Fantastic: The Fiberglass Boatbuilding Industry in Holland, Michigan is a chapter concerning the use of fiberglass reinforced plastic (FRP) to build boats starting in the 1940s. In the 1950s boat builders discovered that fiberglass would allow them to design boats that would lead to new boat sales and increased profit margins for years to come. This technology steadily spread throughout American boat manufacturing plants, including Holland, Michigan, placing the town among the leaders in the industry.

This paper describes a study of BC’s food artisan sector including: a definition and description of food artisans, growth in consumer demand and business, distribution mechanisms and markets, contributions to employment, future business plans and challenges to growth. The study found that consumer demand for products has been increasing whereby 80% of artisans indicated increased demand for their products over the past 3 years, Demand was generated from both resident markets (70%) and visitor markets (30%). The study examines the strategies adopted by street vendors or hawkers in Ghana in a bid to gain competitive advantage. Drawing on six focus group meetings held with street vendors in two sub-metropolitan assemblies (Bantama and Tafo) in Kumasi, Ghana, the study finds that street vendors adopt ten strategies – networking, multiple undifferentiated market strategy, the sale of convenient products, “dying and resurrecting” (strategic exit and return into business), regular changing of goods and services, exploitation of flexible operating hours, cost-based pricing strategy, sales promotion, trade credit and locational advantage – to gain competitive advantage. We develop a temporal and spatial partial equilibrium model to evaluate the welfare impact of new technology on the apple industry to control fire blight. We show significant benefits of GM technology relative to conventional methods and other new methods such as microencapsulation of biological agents. We also show that the cost-reduction benefits of the technology exceed the yield-increasing benefits.
