The hotel has the Brasserie One Restaurant where the philosophy is to serve simple, sensibly priced dishes sometimes rustic, sometimes classic using the freshest of local ingredients. Brasserie One is a true classic Irish brasserie with strong French influences and the use of Irish artisan produce where possible.

Regardless all the advantages of MPs, it has not reach the sizable customer base. In this paper, we examined the core drivers of using mobile payments (MPs) in restaurant industry from the consumers' perspective. Based on the Technology Acceptance Model (TAM), we developed a six factor model to reveal the determinants of consumers' intention to use MPs in restaurant. Security, subjective norm, compatibility with lifestyle, and previous experience with MPs were added to the traditional two factor TAM model (usefulness and ease of use). 300 respondents were recruited from an online survey agency and 258 valid responses were included in …

Purpose of this study is to holistically analyze existing linkages between Aruba’s tourism industry, restaurants and local farmers, by examining strategies that constrain the development of linkages between these stakeholders. Previous research indicated that tourism development is often accompanied with increased demand for imported food, which results in foreign exchange leakages, inflation and competition with local production. Legislation has been proposed in Kentucky that would authorize city legislative bodies to levy a tax on restaurant meals of no more than 3%, regardless of the size of the city. The bill has garnered attention from Kentucky Travel Industry Association, the Kentucky Restaurant Association, and local tourism and restaurant organizations and associations that oppose the tax. The Kentucky League of Cities, an organization that represents the interests of city governments, supports the tax. This study investigates current green restaurant certifications as well as developing a new more user certification. First, a fact finding investigation to find the most established and commonly utilized green restaurant certifications were compared. Second, a new green certification was developed. Third, chosen green restaurant certifications were compared. Lastly, the new green certification analyzed whether restaurants in the central Florida area utilized green practices. This study explored the meaning of authenticity in the context of a small island destination from the residents' perspective, departing from the main stream literature which predominantly focuses on the demand side of the equation. Photo-elicitation was used to investigate the conception of authenticity. The finding from the focus group is that the notions of authenticity are unique, vast, and individualistic and that an encompassing definition of authenticity is difficult to concur. This study examines long-haul Chinese outbound tourists' shopping intentions using the planned behavior approach. Attitude of product and store attributes, subjective norms of co-workers are found to significantly predict shopping intentions of respondents during their overseas trips. Further, behavioral beliefs and the corresponding outcome evaluation of product and store attributes lead to the formation of attitude. Normative beliefs of co-workers, motivation to comply with co-workers, and the interaction between them significantly influence respondents' subjective norms on overseas tourism shopping. Control beliefs, power of control beliefs, and the interaction between them predict respondents' perceived behavioral control on overseas tourism shopping. Both …

This paper explores the traditional pen and paper hotel comment card (HCC) from the guests’ perspective to gain an insight and to improve its effectiveness. The HCC has long been the predominant method of soliciting guest feedback. Although electronic methods of collection are now available the HCC has a sense of familiarity, has general acceptance, and is widely employed. Initially, a literature review of the hotel comment card is provided. Then, the study explores how frequent guests categorize HCC attributes. This paper examines the reliability and efficacy of hotel guest e-mail questionnaire compared to the paper questionnaire in the Asian Pacific context. Conducted in Perth, Singapore and Penang, cities with mature hospitality and tourism industries and a representation of chain and independent deluxe hotels, this exploratory qualitative study examines hotelier views of e-mail guest communication derived from content analysis of guest questionnaires format and content and in-depth interviews with senior hoteliers. The findings indicated that e-questionnaires manifested as e-mails, as a direct replacement of the paper questionnaire, appear to be premature given divergent hotelier views and shortcomings in email response …

The article examines management education for Tourism and Hospitality students in higher learning institutions. It provides the findings of a comparative study of two instructional methodologies—traditional classroom and online courses. The study compared cognitive retention learning outcomes of a sample of students in both modalities over a single academic year. The overall results indicate similar efficacy between the two instructional techniques for participants within the sample.

Using horse racing data in Hong Kong as an example, this paper looks into the properties of an optimization model for making composite ordinal forecasts based on minimization of the absolute error of the joint distribution of the errors of twelve forecasters of race outcomes. It was found that the optimization model is not only sound theoretically, but it is also robust, and can handle situations when data are sparse.

Social responsibility in gambling is increasingly becoming both a policy issue for governments and industries, and a management issue for gambling operators. While many legalized commercial gambling operators adopt a purely economic orientation to their business, non-profit, charity gambling operators tend to focus on the social benefits of their activities. This paper argues that neither a purely economic nor social orientation to gambling is sustainable in the long-term, but that a balance between the two is needed. Empirical data, based on a random sample of2,400 visitors to Las Vegas, are analyzed to provide information relevant to business strategy and public policy development.
