The Fumbally Specials Menu 2017, The Fumbally
The Fumbally Specials Menu 2017, The Fumbally
Menus of the 20th Century
The Fumbally is the culmination of 4 years of cooking, travelling, working at festivals, gathering ideas, arguing those ideas, making mistakes, making new friends, finally realising those ideas, having lots of dinners, tasting new things, building a kitchen and seeing what will happen. Some of us have been working in kitchens all our lives, others haven’t, but we all have a love for food, good coffee and the simple pleasure of sharing a meal with friends.

Around The Table : A Project About Food In Dublin, Dublin’S Culture Connects
Academic Publications
A project about food, with Dublin City Council and The National Library, prompted by a bid for European City of Culture 2020, which takes in the area of the city from the mouth of the River Liffey up to Stoneybatter on the Northside, and involves retired Dockworkers, a homework club on Greek Street, a group of women who grew up near the markets, and several other communities we don’t know exist yet but will want to know more about — to be concluded inside three months?” Oh yes. In our role of boisterous intruders in these selfcontained, well-hidden worlds, we …

Co-Creation Experience: Measurement Development And Influence On Value In Sharing Economy, Pei Zhang
Co-Creation Experience: Measurement Development And Influence On Value In Sharing Economy, Pei Zhang
Theses and Dissertations
Since its introduction, an increasing attention has been paid to the scholarly discussion of value co-creation. One of the most essential problems in value co-creation is the development of comprehensive conceptualizations and measurement scales of value co-creation. However, most existing scales concentrate on co-creation behavior instead of co-creation experience and the development of a valid and reliable measurement scale of co-creation experience has been regarded as a top research priority. Meanwhile, the emergence of shared experience in tourism and hospitality has raised great attention from both academics and industry practitioners. Tourist shared experience such as participating in peer-to-peer accommodation inherently …

Let's 'Meetup' At The Theme Park, Edwin Torres, Marissa Orlowski
Faculty Scholarship and Creative Works
Many people enjoy theme park and other leisure experiences with their families; however, today a great number of single, geographically mobile individuals desire to partake in such experiences. ‘Meetup’ is the world’s largest social network of local groups and thus allows for both online and off-line (in person) interactions. Using an ethnographic approach, this study examines how individuals can enjoy activities centered on common activities, interests, and opinions (AIO) via immersion in a Meetup group over the course of a year. Notably, members visited with greater frequency, had less tolerance for long lines, and were more likely to attend special …
Assessment Of Physical Workload, Ergonomic Problems And Prevalence Of Pain Among Low Wage Hotel Housekeepers In Orlando, Rachel Mammen
Assessment Of Physical Workload, Ergonomic Problems And Prevalence Of Pain Among Low Wage Hotel Housekeepers In Orlando, Rachel Mammen
Electronic Theses and Dissertations
This research study examined the work conditions, ergonomic problems, and prevalence of pain among low wage hotel room cleaners in Orlando. In most hotels, the cleanliness of guestrooms is one of the most important service standards expected by customers. The role of the housekeeper is thus critical to service provision and hotel profitability. The hospitality industry is a major recruiter of low wage workers with the majority working in housekeeping departments. Due to the nature of the research problem, a positivist quantitative approach was adopted although the survey instrument included space for qualitative comments to some of the latter open-ended …

Consumer Decision Making For Accommodations In The Shared Economy, Jeffery C. Kreeger
Theses and Dissertations
Although many components of the shared economy have existed over time, it has recently blossomed into a thriving business that facilitates sharing of assets and services with strangers by using applications on the Internet. Recently, a convergence of many factors favorable to the development of the shared economy occurred and has become a new way of doing business for many and has introduced a new business model. Many people are shifting their goals from owning assets to borrowing them. This is not only economically favorable, but it is also environmentally favorable for the planet. The Lodging Shared Economy (LSE) is …

Strategies To Retain Millennial Employees At Full-Service Restaurants, Candace A. Ruiz, Anne Davis
International Journal of Applied Management and Technology
Some supervisors lack effective strategies to retain millennial-generation employees. The purpose of this multicase study was to explore effective strategies to retain culinary-educated millennial employees in a full-service restaurant. Nine millennials and three supervisors from three full-service restaurants in Denver, Colorado, consented to semistructured interviews concerning retention strategies. Herzberg’s two-factor theory served to guide the scope and the data analysis for the multicase study. Ten subcategories emerged from the three themes that aligned with Herzberg’s motivation factors, hygiene factors, and millennial values and attitudes. The 10 subcategories were developed suggesting effective strategies differ by supervisor. Among the 10 subcategories, the …

Resort Fees And Service Fees In The U.S. Hotel Industry: Context And Concepts Related To Partitioned Pricing, John O'Neill, Donna Quadri-Felitti
Resort Fees And Service Fees In The U.S. Hotel Industry: Context And Concepts Related To Partitioned Pricing, John O'Neill, Donna Quadri-Felitti
ICHRIE Research Reports
Though hotel resort fees and other service charges are a source of considerable revenue at certain U.S. hotels, most hotels do not charge such fees, and among those that do, they do so for specific and unique market-based reasons such as the behavior of competition. This report reviews the concept of resort fees in an effort to provide a balanced perspective regarding service fees in the light of sensational media reports about the topic. This report finds that only approximately seven percent of U.S. hotels charge such fees, and such fees are mainly limited to resort hotels in certain markets. …
Competency-Based Training In Aviation: The Impact On Flight Attendant Performance And Passenger Satisfaction, Latoya Gibbs, Lisa Slevitch, Isaac Washburn
Competency-Based Training In Aviation: The Impact On Flight Attendant Performance And Passenger Satisfaction, Latoya Gibbs, Lisa Slevitch, Isaac Washburn
Journal of Aviation/Aerospace Education & Research
According to the United Nations World Tourism Organization (UNWTO, 2017), over one billion tourists traveled the globe in 2016. In spite of this increase of travelers, airlines are faced with declining levels of customer service and quality of customer experience (American Customer Satisfaction Index [ACSI], 2012). Frontline service employees, like flight attendants, create a critical impression of the service which affects customer perceptions and satisfaction. Nevertheless, many unknowns exist about what creates such impression and how it can be improved. In particular, no study has investigated the effects of Competency-Based Training (CBT) on flight attendants’ performance and consequently passengers’ satisfaction. …

Tourism Taxation, Politics And Territorialisation In Tanzania’S Wildlife Management, Emmanuel Sulle, Holti Banka
Arusha Climate and Environmental Research Centre
Tourism activities occurring on communal lands such as Wildlife Management Areas (WMAs) are increasing in Tanzania. This is the result of natural resources governance reforms aimed to empower communities to manage and benefit directly from resources found in their jurisdictions. This article explores the impacts of taxes imposed on tourism activities occurring on communal lands and the emerging politics of resource and revenue sharing among WMA member villages. In the process, we use empirical data gathered from two WMAs in northern Tanzania between 2006 and 2016. We find that while the current high tax rates on tourism businesses occurring at …

Determinants Of Continuance Intention And Word Of Mouth For Hotel Branded Mobile App Users., Liza Cobos
Electronic Theses and Dissertations
This study examined the cognitive and affective factors that influence users' post-adoption behavioral intention. Specifically, based on the Expectation Confirmation Model (ECM) (Bhattacherjee, 2001b) the impact of cognitive factors (i.e., perceived usefulness, confirmation of expectations, mobility, personalization and responsiveness) and affective factors (i.e., satisfaction, perceived enjoyment) on hotel branded mobile applications (apps) users' continuance intention and WOM were examined. Hospitality firms invest considerable resources on technology solutions that are aimed at improving the consumer experience. However, for investments to be profitable firms must ensure that technology solutions are continuously used and ensure post-adoptive behaviors such as continuance intention and WOM. …

Theses and Dissertations
This dissertation examines the relationship among theme park demand, theme park attractiveness, and visitors’ theme park choices. It consists of three studies reported through five chapters. Key data were obtained from the website of an online travel agency, TripAdvisor, using web scraping techniques. The first study developed a new approach to measure tourist source markets’ theme park demand and theme park attractiveness by solving a reverse gravity model via particle swarm optimization. Findings from this study should help theme parks to evaluate more accurately the demand market and their own competitiveness compared to other theme parks. The second study explored …

Theses: Doctorates and Masters
Luxury and upscale hotels, in common with businesses in other service industries and more broadly, seek to develop a strong brand that will contribute to a long-term competitive advantage. However, research on consumer-based brand equity in luxury and upscale hotels is limited. Therefore, the current research, based on fundamental theories of brand equity development established in the packaged goods and the service industries including hotels, has developed a consumer-based brand equity model for the luxury and upscale hotel sector.
A mixed methods research design was employed. A qualitative study was first conducted using focus groups with the data being content …
Dispatches From Donut Land
DePaul Magazine
Beavers Coffee & Donuts isn’t the only mobile donut shop in Chicago, but it was the first, and it’s still the only one making its tasty treats fresh to order. Co-owner and co-founder, Gabriel Wiesen's (BUS '08) little donut shop on wheels paved the way for a whole range of related endeavors: catering private events, franchise opportunities and Midwest Food Trucks, another of Wiesen’s ventures, which manufactures nearly half of the licensed food trucks in Chicago. He also launched the Illinois Food Truck Owners Association as a vehicle to amplify owners’ voices and advocate for their rights.

DePaul Magazine
Established in 2009 with a $7.5 million grant from the Conrad N. Hilton Foundation, the School of Hospitality Leadership is growing quickly. One of the basics students learn is that part of creating an enjoyable hotel stay is meeting traveler expectations. Millennials and the influence of the shared economy are driving this evolution to redefine hotel and travel experience. Nicholas Thomas, assistant professor and director of the J. Willard and Alice S. Marriott Center for Student Development and Engagement at DePaul, and some of the school’s alumni explore a few of the many new trends that hotels are adopting in …

The element of “unwelcomeness” and the burden of proof on the plaintiff to prove sexual conduct in the workplace is one of the flaws of Title VII that make it difficult to protect victims of sexual harassment. This is particularly true in restaurants where a sexual environment is often thought of as “part of the job.” Formal complaint systems, if available, in restaurants are often flawed, even though they can pose as an affirmative defense for the defendant if they are available and a victim does not file a complaint. In the cases examined, all involved an accused supervisor or …

The Influence Of Hospitality Leaders’ Relational Transparency On Followers’ Trust And Deviance Behaviors: Mediating Role Of Behavioral Integrity, Anthony Gatling, Cass Shum, L Book, Billy Bai
Hospitality Faculty Research
This paper investigates the effect of leader's relational transparency on follower organizational deviance through followers’ perception of leader's behavioral integrity and their trust in leader. Multi-level modeling results from a multisource survey-based field-study with 24 hospitality student project teams (N = 149) show that behavioral integrity mediates the relationship between leader's relational transparency and follower's trust in leader. Furthermore, multi-level path analysis suggests that leader's relational transparency, a team-level construct, exerts a cross-level effect on follower's organizational deviance through the mediating roles of behavioral integrity and follower's trust in leader. The study has yielded theoretical and practical implications that are …

Occasional Papers
This paper explores the performance history of the Korean girl group The Kim Sisters, once highly visible racial icons, within the social and cultural context of 1960s Cold War America and popular entertainment culture. The Kim Sisters’ disappearance from American screen and scene raises questions about public memory of the Korean War, the status of Asian American performers in popular entertainment industries, and shifting attitudes about race, gender, and sexuality in the 1960s. Focusing in particular on the production and reception of their feminine beauty on stage and television, this paper highlights the Kims’ early years in the newly-formed Republic …

Emotional Labor: Surface Acting A Better Emotional Regulation Strategy For Dealers?, James Luverne Cox
UNLV Theses, Dissertations, Professional Papers, and Capstones
The performing of emotional regulation in the workplace, or emotional labor, has long been researched by scholars. The conclusion that most reached was that individuals performing this regulation were typically better off by changing their emotions felt to their emotions displayed, or what is termed as “deep acting”, rather than “surface acting”, or faking the emotion. This paper will further explore the thoughts behind this argument and propose that dealers that use deep acting are, in fact, more likely to experience emotional burnout due to the inability to constantly change inner emotional states. Additionally, the paper will also seek to …

Evaluating The Impact Of A Smoking Ban In Las Vegas Casino Resorts, Emi K. Sakevich
UNLV Theses, Dissertations, Professional Papers, and Capstones
Worldwide, the smoking population decreases, leaving hospitality venues to decide how a change in policy affects their revenues. In spite of the ban, bars, pubs, and restaurants in countries with a smoking ban report a consistent level of revenue. Within the United States, there are varying degrees of a smoking ban, with minimal effect on revenue. In Nevada, the Nevada Clean Indoor Air Act’s commencement coincided with the Great Recession, skewing hospitality revenue numbers as tourism dwindled. Behaviorally, nonsmokers are more likely to avoid areas with smoke, whereas smokers are not as affected by nonsmoking areas. Casinos in Las Vegas …
