Not On The Menu, Kathryn Casteel, Zameena Mejia

The element of “unwelcomeness” and the burden of proof on the plaintiff to prove sexual conduct in the workplace is one of the flaws of Title VII that make it difficult to protect victims of sexual harassment. This is particularly true in restaurants where a sexual environment is often thought of as “part of the job.” Formal complaint systems, if available, in restaurants are often flawed, even though they can pose as an affirmative defense for the defendant if they are available and a victim does not file a complaint. In the cases examined, all involved an accused supervisor or …

Social Exchange Between Destination Marketing Organizations And Stakeholders In Tennessee’S Rural Counties, Angela Gray Sebby Dec 2016

Social Exchange Between Destination Marketing Organizations And Stakeholders In Tennessee’S Rural Counties, Angela Gray Sebby

Doctoral Dissertations

Promoting local culture and heritage, natural resources, farm-to-table opportunities, and outdoor recreation, more visitors are now travelling to rural communities for these experiences.

The goal for rural areas interested in tourism is to create viable and sustainable tourism through destination-marketing strategies. These strategies require extensive research, appropriate planning, and allocated funding, often managed by a Destination Marketing Organization (DMO). With the creation of the Tennessee Rural Development Task Force, Tennessee’s strategy is to increase economic growth in rural communities.

While there is a need for the DMO to form an alliance with industry stakeholders, lack of incentives and strained relationships …

Emotional Labor: Surface Acting A Better Emotional Regulation Strategy For Dealers?, James Luverne Cox Dec 2016

Emotional Labor: Surface Acting A Better Emotional Regulation Strategy For Dealers?, James Luverne Cox

UNLV Theses, Dissertations, Professional Papers, and Capstones

The performing of emotional regulation in the workplace, or emotional labor, has long been researched by scholars. The conclusion that most reached was that individuals performing this regulation were typically better off by changing their emotions felt to their emotions displayed, or what is termed as “deep acting”, rather than “surface acting”, or faking the emotion. This paper will further explore the thoughts behind this argument and propose that dealers that use deep acting are, in fact, more likely to experience emotional burnout due to the inability to constantly change inner emotional states. Additionally, the paper will also seek to …

Evaluating The Impact Of A Smoking Ban In Las Vegas Casino Resorts, Emi K. Sakevich Dec 2016

Evaluating The Impact Of A Smoking Ban In Las Vegas Casino Resorts, Emi K. Sakevich

UNLV Theses, Dissertations, Professional Papers, and Capstones

Worldwide, the smoking population decreases, leaving hospitality venues to decide how a change in policy affects their revenues. In spite of the ban, bars, pubs, and restaurants in countries with a smoking ban report a consistent level of revenue. Within the United States, there are varying degrees of a smoking ban, with minimal effect on revenue. In Nevada, the Nevada Clean Indoor Air Act’s commencement coincided with the Great Recession, skewing hospitality revenue numbers as tourism dwindled. Behaviorally, nonsmokers are more likely to avoid areas with smoke, whereas smokers are not as affected by nonsmoking areas. Casinos in Las Vegas …

Newsvendor Models With Monte Carlo Sampling, Ijeoma W. Ekwegh Aug 2016

Newsvendor Models With Monte Carlo Sampling, Ijeoma W. Ekwegh

Electronic Theses and Dissertations

Newsvendor Models with Monte Carlo Sampling by Ijeoma Winifred Ekwegh The newsvendor model is used in solving inventory problems in which demand is random. In this thesis, we will focus on a method of using Monte Carlo sampling to estimate the order quantity that will either maximizes revenue or minimizes cost given that demand is uncertain. Given data, the Monte Carlo approach will be used in sampling data over scenarios and also estimating the probability density function. A bootstrapping process yields an empirical distribution for the order quantity that will maximize the expected profit. Finally, this method will be used …

Belief In A Just World: An Investigation Of Underdog Brand Effects, Jungyoung (Tiffany) Shin Jul 2016

Belief In A Just World: An Investigation Of Underdog Brand Effects, Jungyoung (Tiffany) Shin

Doctoral Dissertations

In today’s society, when companies neglect ethical or social issues involved in business practices, these types of behavior could result in consumer boycotts or anti-consumption. The majority of previous research in anti-consumption assumed that consumers’ brand avoidance is a result of a brand or a company’s moral failure, however, more recent research indicates that this may not be the case. In fact, consumer avoidance of a brand may happen as a result of brand positioning status in the marketplace – coined as “underdog effects”. Although it is still questionable how individuals make judgments about underdogs in the hospitality …

Memorable Dining Experiences: Formative Index And Model Development, Yang Cao Jun 2016

Memorable Dining Experiences: Formative Index And Model Development, Yang Cao

Theses and Dissertations

The purpose of the current study is to understand the nature of memorable dining experiences (MDE), to conceptualize MDE, to develop a formative index to measure MDE, and to test a conceptual model to examine the antecedents and outcomes of MDE. Developed primarily from strategic experiential modules and from the cognitive appraisal theory, this study proposed that MDE consists of five dimensions: affect, sensory, social, intellectual, and behavioral.

This study applied a mixed method approach using a sequential exploratory design. Specifically, the in-depth interviews and a detailed literature review were used to generate the research instrument, and then the online …

Theory Of Under-And Overinvestment: An Empirical Examination Of Value Creation And Destruction In Hospitality Firms, Tarik Dogru Jun 2016

Theory Of Under-And Overinvestment: An Empirical Examination Of Value Creation And Destruction In Hospitality Firms, Tarik Dogru

Theses and Dissertations

In this dissertation, I study underinvestment and overinvestment theories by examining the value creation and destruction in hospitality firms in three separate but coherent and cohesive research papers. In the first study, I analyze the extent to which financial constraints (underinvestment) and corporate governance (overinvestment) affect hotel firms’ value around acquisition announcements. In addition to the traditional form of corporate structure (i.e., C-corporation), hotel firms extensively adopt the organizational forms of franchising and REIT, which might affect under- and overinvestment problems. Nonetheless, little is known whether capital investments create or reduce value for hotel-REITs and franchising hotel firms. The results …

Authenticity In The Country Music Industry, Alyssa Johnson May 2016

Authenticity In The Country Music Industry, Alyssa Johnson

Senior Theses

When researching the country music industry, it is impossible to avoid certain words—authenticity, sincerity, tradition—as a country music consumer, I have personally noticed these themes appearing frequently. As a consumer, I have been confused by the images that I’ve observed in country music scholarship and journalism based on tradition or authenticity (or, more often, the lack thereof). There is serious reverence for certain people, places, and things in country music. The Grand Ole Opry, the “legends” of the industry, and Nashville itself are treated with the utmost respect because of the roles that they’ve played in the development of country …

An Investigation Of Work Environment Characteristics And Work Engagement Of Limited- And Full-Service Hotel Property Front-Line Employees, Robert Jerald Thompson May 2016

An Investigation Of Work Environment Characteristics And Work Engagement Of Limited- And Full-Service Hotel Property Front-Line Employees, Robert Jerald Thompson

Dissertations

Today, employee work engagement is viewed as one of the most important issues for corporations, given its influence on individual and organizational productivity and performance (Attridge, 2009; Czarnowsky, 2008). As a result, all organizations desire employees who are engaged, in particular the hospitality industry. As a service-providing sector of the hospitality industry, hotels are reliant on front-line employees to conduct strong customer-employee interactions and provide efficient service delivery while exceeding customer expectations (Kusluvan, 2003). The hospitality industry needs employees who are committed to the organization and one who is passionate, striving to go the extra mile, and offering discretionary effort …

Values Of Hospital Chief Executive Officers In Ontario, Alexander Smith Jan 2016

Values Of Hospital Chief Executive Officers In Ontario, Alexander Smith

Electronic Thesis and Dissertation Repository

Value-based health systems, where the fundamental goal of the system is to maximize patient value, have been suggested as a means to improve health service delivery. However, our understanding of various stakeholder values in Ontario is limited. This study collected interview responses from 26 Ontario hospital Chief Executive Officers (CEOs) in an attempt to understand their personal values, alignment with health-system values, and use of values to drive decision-making. Results suggest that Ontario hospital CEOs have two value sets; a set of core values (i.e. integrity, compassion, empathy) that are established at a young age and are largely non-negotiable, and …

Team Cohesion In The Restaurant Industry: The Influence Of Core Evaluations, Marissa Orlowski Jan 2016

Team Cohesion In The Restaurant Industry: The Influence Of Core Evaluations, Marissa Orlowski

Electronic Theses and Dissertations

Team cohesion has been clearly established in the literature as an essential component of effective work teams, yet little research has been conducted in regard to what factors lead to cohesion within a restaurant management team. What is currently known about the antecedents of cohesion indicates that it emerges from individual team member attitudes and perceptions as a collective property of the team. This, in turn, suggests cohesion is influenced by the dispositional traits of team members. The core evaluations construct, which represents a model of dispositional traits existing within each individual at the most basic level, offers implications for …

The Effect Of Employee Behaviors On Consumers' Emotions And Behavioral Intentions In Positive Service Encounters, Yoshimasa Kageyama

Electronic Theses and Dissertations

Focusing on positive service encounters, this study examined the relationships among employee behaviors, customers' positive emotions, and subsequent customer behaviors. A comprehensive framework of positive service encounters and ten hypotheses were developed based on an in-depth literature review and an application of the theory of cognitive appraisal and the theory of positive emotions. The dissertation employed a survey design with measurements from previous research and collected data with Amazon Mechanical Turk. The target sample (N=299) was individuals that had a positive interaction with an employee at hotels over the last six months. The Structural Equation Modeling results suggested that employees' …

The Moderating Effect Shift Work Has On Support, Engagement, Satisfaction, Turnover, And Service Delivery: An Empirical Analysis Of Us Hotel Front Desk Personnel, William Ingram Jan 2016

The Moderating Effect Shift Work Has On Support, Engagement, Satisfaction, Turnover, And Service Delivery: An Empirical Analysis Of Us Hotel Front Desk Personnel, William Ingram

Electronic Theses and Dissertations

Several industries require operations and services to be provided at all hours of the day. Many organizations have implemented a shift work system for scheduling purposes to meet the demand of their industry. While some research has been conducted on the effects of shift work on employees, overall, there is still much to be learned, especially in the hotel industry. Most hotel front desks in the United States operate 24 hours a day and therefore, have to staff employees for the morning, afternoon, and overnight shifts. Previous literature states that each shift starts and ends at different times of the …

Meeting Planner Loyalty To Convention Service Managers: An Investigation Of Emotional And Functional Competence In The Business-To-Business Exchange, Michelle Holm Jan 2016

Meeting Planner Loyalty To Convention Service Managers: An Investigation Of Emotional And Functional Competence In The Business-To-Business Exchange, Michelle Holm

Electronic Theses and Dissertations

The current state of literature surrounding the business-to-business (BTB) exchange in the meetings, incentives, conventions, and events (MICE) industry is limited. Likewise, the manner in which meeting planners forge their intentions to repurchase was unknown until the present study was conducted. The following research focused on the role of the hotel convention service manager (CSM) in the BTB exchange with the meeting planner to understand the role they play in the meeting planner's decision to repurchase. Since hotel CSMs have not been assessed in previous literature, one of the major contributions of this study was that it established a set …

Arts In The Hotel Industry: Bridging Creative And Financial Goals For A Twenty-First Century Experience, Yookyoung Kong

MA Projects

The hospitality landscape of cities has changed significantly in recent years: hotels are themselves destinations. The trend is to manage atmospheric interior yet not overwhelming the area with pieces. However, the fine line separating art and design has become increasingly blurry. This article will analyze the implications of displaying world-class contemporary art in hotels. In essence, art has the potential to transform the industry even further. It could even be said that exhibitions can be a boon to hotel business. Furthermore, this paper demonstrates that the emergence of boutique and life hotels will facilitate the movement of displaying artwork in …

The Role Perception Of Organizational Citizenship Behavior In The Japanese Hospitality Industry: Culture-Based Characteristics And Generational Difference, Yoko Negoro Jan 2016

The Role Perception Of Organizational Citizenship Behavior In The Japanese Hospitality Industry: Culture-Based Characteristics And Generational Difference, Yoko Negoro

Electronic Theses and Dissertations

Although a substantial amount of research on Organizational Citizenship Behavior (OCB) has been conducted, little is known about it within the context of the Japanese hospitality industry. While OCB is generally considered to be beyond ordinary job duties (extra-role), some researchers suggest that Japanese employees view OCB as part of their job (in-role). However, theoretical explanation for this phenomenon is still scant. This research aims to examine how culture-based organizational characteristics (workplace harmony and customer orientation) and generation influence the role perception of OCB among Japanese hospitality employees. An online survey was developed and distributed to hospitality employees working in …

Antecedents Of Emotional Labor And Job Satisfaction In The Hospitality Industry, Valeriya Shapoval Jan 2016

Antecedents Of Emotional Labor And Job Satisfaction In The Hospitality Industry, Valeriya Shapoval

Electronic Theses and Dissertations

It is a general policy in the hotel industry that all the service should be provided in the friendly and a professional manner. The first smile of a front desk clerk or a wait staff can make a difference in customer satisfaction and loyalty. A service quality is becoming more important with increase of competitiveness among hotels and hotel brands. A process of regulating positive emotions for an organization is called Emotional Labor (EL) (Grandey, 2000). While essential for the hospitality industry, empirical research on EL is very limited, and research on EL during stressful situations is almost nonexistent. To …

Tourist Responses To Potential Climate Change Impacts And Adaptation Measures In Florida's Coastal Destinations, Roberta Atzori Jan 2016

Tourist Responses To Potential Climate Change Impacts And Adaptation Measures In Florida's Coastal Destinations, Roberta Atzori

Electronic Theses and Dissertations

Some of the most vulnerable areas across the world have started experiencing the consequences of climate change, with action to deal with it long overdue. Florida, one of the most visited tourist destinations in the world, holds one of the most 'unenviable' positions in terms of its vulnerability to climate change with the effects already visible, particularly on its coastal areas. Climate is one of the major factors in affecting travel motivations and destination choice, and as such the implications of climate change for tourist behavior and demand patterns are significant. Beside the physical impacts of climate change, society's perception …

The Effect Of Brand Diversification And Systematic Risk On Firm Shareholder Wealth: The Case Of Brinker International, Inc., Abdullah Makki

Electronic Theses and Dissertations

Divestiture activity within the restaurant industry has increased in the last twenty years, however there is a dearth of research investigating the subsequent effects of the phenomenon. In particular none of the studies in the literature, have specifically examined the effects of restaurant firms' brand diversification strategies and systematic risk on shareholder wealth when controlling for divestiture completions. This research extends the knowledge from previous work on corporate unbundling and brand diversification strategies to the unique restaurant industry. Drawing on agency theory, the long- and short-term effects of the resulting brand diversification levels on firm shareholder wealth following a divestiture …

Food Tourism In Ireland: An Exploration Of The Role Of Food Tourism In Cultural Sustainability, Lisa O'Riordan Jan 2016

Food Tourism In Ireland: An Exploration Of The Role Of Food Tourism In Cultural Sustainability, Lisa O'Riordan

Theses

Previous research proposes that food tourism is a medium through which traditions can be maintained, as well as a conduit through which authentic culture can be experienced (Fox, 2007; Henderson, 2014; Okumus et al, 2007). Food tourism is also advocated as a sustainable means of environmental, economic and sociocultural development (Everett and Aitchison, 2008; Montanari and Staniscia, 2009). The unique focus of this research study is the role food tourism plays in cultural sustainability in Ireland, specifically, in Kinsale, the English Market and Dingle. In particular, this study draws on the viewpoints of thirty three food tourism representatives on the …
