Being Sustainable is an essential milestone in the food industry. Companies form and fall because of consumers' reactions to the industry. The food industry and restaurants account for some of the highest Food Waste and Pollution, approximately 34% of the Global anthropogenic greenhouse gas emissions, including food production, processing, distribution, and consumption. (Crippa et al., 2021) In a sector like this, ensuring a complete understanding of sustainability in the industry is of utmost importance. This dissertation consists of a creative project, The Impersonation Artist: A Novel, and a critical afterword, “Displacement and Dissent in Fiction and Art.” On a narrative level, The Impersonation Artist engages the question of how, and if, participatory art can reveal and intervene in oppressive conditions. The novel employs a stylistic methodology in which the use of multiple narrators and narrative fragmentation formally gestures toward the complex dilemma of how artists might intervene in contemporary problems in the face of conflicting ideologies and ever increasing precarity. This thesis is a collection of poetry that mixes formal and free verse in order to convey the speaker’s spiritual journey in content as well as form. The work introduces a speaker who is deeply religious and who expresses her spirituality in the form of formal poetry such as sonnets as she adheres to certain principles of faith. The use of form in the thesis represents her adherence to those principles, while breaking form is symbolic of her breaking away from those principles. LESSONS IN PERSISTENCE is a thesis that operates within the tradition of writing about trauma and resilience, taking up themes of mental illness, class, colonialism, loss of a parent, navigating queerness in a conservative Christian context, and reckoning with gender-based violence and expectations directed toward people socialized as women. Coffins and Conditioner is part one of a modern fantasy story follows a latine, nonbinary hairdresser named Mura Saiz whose entire clientele consists of supernatural entities like werewolves, vampires, and fae.
