This reviewed summarized the research status of water content detection methods of plant-based food materials, analyzed the water content detection devices, advantages, disadvantages and applications, and discussed the application of water content detection in different types of plant-based food materials. The advantages of hot air drying, microwave method, Karl Fischer method, absolute dry nitrogen purge method, spectral technology and imaging technology were highlighted, and the future development direction of water content detection of plant-based food materials was prospected.

Objective: This study aimed to explore the feasibility of preparation of loaded losartan starch nanoparticles by high-speed shear-reverse microemulsion crosslinking. Methods: Using losartan as model drug and sodium trimetaphosphate as crosslinking agent, the effects of starch solution concentration, sodium trimetaphosphate addition amount, crosslinking time and shear rate on particle size and yield of starch nanoparticles were investigated. Optical micrography, infrared spectrometer and X-ray diffraction were used to characterize losartan loaded starch nanoparticles. Objective: The uncertainty of determination of three pyrethroid pesticides (cypermethrin, fenvalerate and deltamethrin) in fresh tea leaves by gas chromatography was evaluated. Methods: A mathematical model was established according to the determination process of the experiment, and the uncertainties caused by various factors in the model were identified. The sources are mainly the following 7 aspects: repeated determination of samples, fitness of standard curve, recovery rate, standard solution preparation, sample weighing and pretreatment, and the measurement of instrument. Objective: Establish a high throughput method for the determination of 57 organic pollutants in edible vegetable oil. Methods: The target compounds were extracted by acetonitrile-hexane solution and purified by disperse solid phase extraction and solid phase extraction, after that the contents of 16 polycyclic aromatic hydrocarbons, 17 phthalates, 8 organochlorines and 16 polychlorinated biphenyls in edible oil were detected by gas chromatography triple quadrupole mass spectrometry. Objective: The molecular biological test has the advantage of fast and sensitive, which can effectively make up for the defects of the traditional microbial test method. Methods: According to the conserved sequences of the V3~V4 region of the virulence gene pcrL and the universal gene 16S rRNA of Pseudomonas aeruginosa in GB 8538—2022, primers and probes were designed and synthesized, and a real-time fluorescent PCR kit was established in this study. Objective: This study aimed to investigated the effect of ice-temperature vacuum drying on the powder quality of selenium-rich Rugao black pakchoi. Methods: After pretreatment, the fresh black pakchoi was dried to the moisture content of (5.0±0.5) %, and the physical and chemical indexes were investigated, comparing to the control groups of hot-air drying, vacuum drying and freeze-vacuum drying. Results: The vitamin C content of vacuum drying at ice temperature was 554.60 mg/100 g, and the retention rate reached 83.96%, which was 43.11%, 33.57% and 1.61% higher than that of hot-air drying, vacuum drying and freeze-vacuum drying, respectively. Objective: The effects of freezing method and storage temperature on the quality of large yellow croaker during storage were investigated. Methods: Fresh large yellow croaker fillets were frozen with dry ice and air freezing (-40 ℃) to the central temperature of -18 ℃, and then stored at -40 ℃ and -18 ℃, respectively. Methods: Using Krill meat and prawn meat as main raw materials, waxy corn acetylated distarch adipate, egg white powder, soy protein isolate, glutamine transaminase and other adjuvants were added, and the optimal preparation ratio of shrimp balls was obtained through single factor test and response surface test. Theabrownin, a kind of water-soluble, non-dialysable, highly polymerised brown substance, mainly composed of polyphenol, polysaccharide, protein and nucleic acid, which is closely related to the color and functional activity of fermented tea. Due to the complexity of the formation mechanism, its chemical structure is still unclear. In this review, the structural characteristics, formation mechanism, extraction and detection methods, and functional activity of theophylcin were discussed, and the future research direction was also prospected.

Food material is the key factor of food 3D printing. This review summarized the characteristics of food materials (protein, starch, hydrogel and fat) commonly used in food 3D printing at present, analyzed the influence of different material combinations on the forming performance. Moreover, suggestions on how to improve the printing effect of difficult printing materials were also provided, and the technical bottleneck of food materials development faced in food 3D printing nowadays were noticed. Finally, the direction of food 3D printing technology in the future was prospected.

Objective: Provide data support for the source tracing and pollution prevention of Pseudomonas aeruginosa in drinking water in Hunan Province. Methods: According to the national food safety standards of GB 8538—2016, the bottled water was tested randomly collected from partial cities and counties in Hunan Province, and the whole genome sequencing and molecular traceability of the 18 strains of Pseudomonas aeruginosa were detected. Objective: This study aimed to purify crude polyphenols from wormwood and to study inhibitory activity of its against α-glucosidase. Methods: The adsorption-desorption properties of wormwood polyphenols by seven kinds of macroporous resins were studied. The suitable resin for separating and purifying Wormwood polyphenols was obtained and the purification parameters were optimized. Using different concentration ethanol solution for dynamic elution, the inhibitory activity of different elution fractions on α-glucosidase was investigated. Objective: A simultaneous determination method was established for detecting 19 kinds of quinolones and sulfonamides in aquatic products simultaneously, by using QuEChERS combined with UPLC-MS/MS. Methods: Samples were extracted with 1.0% formic acid acetonitrile solution, ultrasonic for 1 min, and purified by QuEChERS multi-function needle filter. Objective: The study aimed to research the physicochemical properties, structure, antioxidant activity and hypoglycemic activity of different fractions of polysaccharide of goldenmelon. Methods: Four kinds of goldenmelon polysaccharides (CP-40, CP-60, CP-70, CP-80) were obtained by graded purification of water extraction and alcoholic precipitation. Their molecular weight, monosaccharide composition, group composition, antioxidant and hypoglycemic activities were investigated by high performance liquid chromatography and fourier transform infrared spectroscopy. Objective: Replacing wild resources with artificially cultivated Nostoc commune to protect the natural environment. Methods: Compare the biochemical composition, texture characteristics, and sensory evaluation of indoor, outdoor cultivation and wild N. commune, while using outdoor cultivation of Nostoc sphaeroides as a control in the above three aspects. Results: The ratio of dry weight to wet weight of wild N. commune was the largest (2.42%), and its hardness and elasticity were the highest, which were 1.184 N and 78.5%, respectively. Objective: This study aimed to improve the oxidation, exploitation, and utilization of pumpkin seed oil (PSO). Methods: Pea protein isolate (PPI) -Tannic acid (TA) stabilized Pickering emulsion with Maltodextrin (MD) was used as the filling material, and prepared pumpkin seed oil microcapsules by spray drying. Results: After spray drying the Pickering emulsion, the smooth surface of the medium shell structure of microcapsule powder can be obtained. Post-acidification is one of the most important factors affecting the sensory quality, flavor characteristics and stability of yogurt during shelf-life. Non-thermal treatments are novel methods to control post-acidification, which can maintain the original nutritional properties and sensory quality of food to the maximum extent. In this paper, the mechanism of post-acidification of lactic acid bacteria was reviewed. The mechanism and recent research progress of non-heat treatment processes such as ultra-high pressure, ultrasound, pulsed electric field, CO2 treatment, irradiation were analyzed and provided theoretical guidance for the development and industrial application of non-heat acid control technology.

Methods: Two different protoplast monocytes of yellow enoki mushrooms Fv1923 were used as one of the parents to cross with 6 enoki mushrooms protoplasts (2 yellow and 4 white strains), and a total of 12 yellow hybrid strains were obtained.
