Mentoring: A Model For The Future Nurturing Of Culinary Talent, Mairtin Mac Con Iomaire

Conference papers

Should time be invested in nurturing the next generation of Culinarians in order to improve the profession? Is fear and intimidation acceptable in a professional kitchen? Can we identify the reasons behind the high levels of staff turnover? What is mentoring? In this paper I hope to address these questions, and to discuss mentoring as a model for nurturing culinary talent. Dalhousie Law Journal

The case law, since Entrop, shows a judicial tendency to apply the requirements established by the obiter dictum of Entrop. (Etrop dealt with safety sensitive but land-based industry.) The danger is that the principles, as developed by and since …

The Pig In Irish Cuisine Past And Present, Mairtin Mac Con Iomaire

Conference papers

The inspiration to research and present this paper came from a folklore tale about how Saint Martin created the pig from a piece of fat. The paper will explore the pig in Irish cuisine and culture from ancient times to the present. The paper will discuss the pig in Irish literature and mythology; outline the role the emergence of the potato had on domestic pig keeping, and trace the rise of commercial processing in the nineteenth century to the present day.
