An Outline History Of The Unionisation Of Hotel, Restaurant And Catering Workers In Dublin, Norman Croke Nov 2025

An Outline History Of The Unionisation Of Hotel, Restaurant And Catering Workers In Dublin, Norman Croke

European Journal of Food Drink and Society

George Orwell in his classic Down and Out in Paris and London described the hotel industry’s work system as an elaborate caste system, with a prestige graded system to that of a soldier. The elaborate management system placed the manager at the top, followed by the maître d’hôtel, head waiter, head cook, chef du personnel, other cooks, waiters, laundress, apprentices, the plongeurs (menial tasks in the restaurant), chambermaids and cafetières, in that order. A key feature of hotels was the division of labour from the concierge, who looks after arrivals and departures, to the porter, receptionist, housekeeping, restaurant, the maître …

Breaking The Mould: The Origins Of Irish Farmhouse Cheese In The Countercultures Of The 1970s And 1980s, Finbar Deery Nov 2025

Breaking The Mould: The Origins Of Irish Farmhouse Cheese In The Countercultures Of The 1970s And 1980s, Finbar Deery

European Journal of Food Drink and Society

This article examines the origins of farmhouse cheese in Ireland, which began in West Cork in 1974 with the creation of Milleens by Veronica Steele. This new farmhouse cheese industry is an example of food production that had no comparable reference in Ireland at the time. The farmhouse cheese industry is examined as an expression of a growing countercultural movement on the island in the 1970s and 1980s. This paper argues that the re-emergence of small-scale cheese production in Ireland is one expression of broader changes in the country and is both connected to and instrumental in the development of …

The Battle To Brand And Market Irish Beef—1950–73, Declan O'Brien Nov 2025

The Battle To Brand And Market Irish Beef—1950–73, Declan O'Brien

European Journal of Food Drink and Society

This article examines the controversy around the marketing of Irish beef up to Ireland’s entry into the EEC in 1973. The internal industry wrangle simmered from the birth of the modern processing industry in the 1950s but burst into life following the collapse in beef farmer incomes in the late 1960s. The article will explore how the Department of Agriculture and successive ministers for agriculture sought to navigate a middle line between the conflicting positions of the farm organisations and meat factory owners. While the National Farmers’ Association (NFA) and the Irish Creamery Milk Suppliers’ Association (ICMSA) consistently called for …

Agricultural Extension In Ireland: A Century Of Continuity And Change, Mícheál Ó Fathartaigh, Áine Macken-Walsh, Monica Gorman

European Journal of Food Drink and Society

In 1901, Ireland had the largest publicly funded professional extension service – agricultural scientists helping farmers to farm better – relatively, in the world. Utilising a wide range of historical sources and contemporary data, this paper provides a snapshot of the education and work of Irish advisors and their extension activities then and now. It identifies what has changed and what has not, showing key influences on Ireland’s current advisory services. Education for advisors 100 years ago was characterised by gender segregation, with less capacity and diversity. Continuity in the work of advisors then and now is shown in a …

Why The Irish Don’T Eat Offal, Niall Toner Nov 2025

Why The Irish Don’T Eat Offal, Niall Toner

European Journal of Food Drink and Society

In the past fifty years or so, the diverse and colourful displays of animal offal and organ meats that used to be seen in butchers’ shop windows in Ireland, as well as in the UK and America, have all but disappeared. In Ireland, which has seen a gastronomic renaissance in more recent times, these traditional foodstuffs appear to have been slow to return to our plates. But have offal and organ meats a place in the future of the cuisine, and can the increased consumption of offal and organ meats, produced locally, contribute towards a more sustainable food production system, …

“Add What You Think Proper”: Exploring The Culinary Narrative Of Newbridge House Through The Cobbe Recipe Book (1806–1838) And Archive, Cathal Dowd Smith Nov 2025

“Add What You Think Proper”: Exploring The Culinary Narrative Of Newbridge House Through The Cobbe Recipe Book (1806–1838) And Archive, Cathal Dowd Smith

European Journal of Food Drink and Society

Newbridge House, in north County Dublin, was built in 1747 by Archbishop of Dublin, Charles Cobbe to designs by prominent architect James Gibbs. Having arrived in Ireland in 1717, acquiring land and ecclesiastical promotion, Cobbe settled in north Dublin and built a house in the Palladian vision for his family. In 1755 his heir and sole surviving son Thomas married Lady Elizabeth ‘Betty’ Beresford, daughter of the 1st earl of Tyrone. Together Thomas and Lady Betty assembled an art collection at Newbridge, extending the house for that purpose. Included in that extension were more bedrooms, but, importantly here, increased servants’ …

The History Of Dublin Coddle And Its Significance As Part Of Ireland’S Intangible Cultural Heritage, Sinéad Mcglynn, Máirtín Mac Con Iomaire Nov 2025

The History Of Dublin Coddle And Its Significance As Part Of Ireland’S Intangible Cultural Heritage, Sinéad Mcglynn, Máirtín Mac Con Iomaire

European Journal of Food Drink and Society

Dublin coddle is held in great affection by generations of Dubliners and is a significant cultural identifier, yet to date there has been little or no academic research into its historical origins. Dublin coddle is a divisive dish which appears to be linked with the capital city, with almost tribal associations, where other ‘tribes’ refuse to consume it. This study argues for the inclusion of Dublin coddle-making, a regional dish made with sausages, ham or bacon, potatoes and onions, as part of Ireland’s Intangible Cultural Heritage (ICH) as set out by the United Nations Educational, Scientific and Cultural Organization (UNESCO). …

Food Traditions In The Folklore Of Oíche Shamhna (Halloween): An Exploratory Study Of Food In The Schools’ Collection 1937–39, Caitríona Nic Philibín Nov 2025

Food Traditions In The Folklore Of Oíche Shamhna (Halloween): An Exploratory Study Of Food In The Schools’ Collection 1937–39, Caitríona Nic Philibín

European Journal of Food Drink and Society

Oíche Shamhna or Halloween marks the end of the harvest, the beginning of winter and the last of the four Quarter Days of the Irish calendar year. While food is plentiful at this time of year, food specific studies of this feast day are few. Through archival research this paper explores food traditions at Oíche Shamhna found in the Schools’ Collection 1937–’39 (folklore collected from more than 50,000 schoolchildren in Ireland). Analysis of a sample taken from the Collection reveals four main themes: ‘Games,’ ‘Games with Divinations,’ ‘Supernatural,’ and ‘Cakes and dishes in general.’ Within these themes the significance of …

Feasts Of Prestige: Political Hospitality In The Early Irish Sagas Through The Framework Of Dietler’S Commensal Politics, Elizabeth Waters, Elaine Mahon Nov 2025

Feasts Of Prestige: Political Hospitality In The Early Irish Sagas Through The Framework Of Dietler’S Commensal Politics, Elizabeth Waters, Elaine Mahon

European Journal of Food Drink and Society

This exploratory article appliesMichael Dietler’s framework of commensal politics to representations of feasting in the early Irish sagas preserved in Irish medieval literature. Although set in a mythic past, the sagas reflect the social and political structures of early medieval Ireland, where feasting was a ritualised means by which social hierarchies were expressed, and political relationships were defined. Dietler’s model centres on three types of feasts: empowering feasts, patron-role feasts, and diacritical feasts, each with defining characteristics that contribute in distinct ways to the social order. Viewed through the interpretive lens of this framework, this study reveals that, similar to …

El Maya Yucateco En El Paisaje Lingüístico De Cancún (México): Entre Invisibilidad Y Comodificación De Autenticidad, Jannis Harjus, Benjamin Peter, Linda Yoksulabakan-Harjus

Journal of Maya Heritage

The goal of this contribution is to analyze the presence of different languages in the linguistic landscape of Cancún, Quintana Roo. Cancún has a population of about 650,000 inhabitants. As a main tourist destination, the city also remains a top migration destination for Mexicans from other (rural) Mexican areas. Therefore, in addition to autochthonous speakers of maya yucateco, speakers of other indigenous languages, e.g., tzotzil and chontal, also migrate to the Cancún metropolitan area. In this paper, we analyze to which extent Cancún’s linguistic superdiversity is reflected in its urban landscape. In order to achieve that, we first created photo …

Factors Affecting Public Knowledge About Ocd Mental Health Literacy, Lauren Angell, Aleena Babu, Jimmy Dumont, Lauren Masapollo, Kaitlyn Silva

The Graduate Review

This research project aimed to examine how varying portrayals of obsessive-compulsive disorder (OCD) influence public mental health literacy (MHL). Our research questions focused on the impact of multidimensional vs single portrayals of OCD on OCD MHL, as well as the influence of certain sociodemographic factors on OCD MHL. Additional exploratory questions were investigated and aimed to explain the relationship between OCD MHL and media, as well as OCD MHL and education levels. To investigate these questions, the study employed a combination of experimental and survey-based methods. By fostering greater awareness of misinformation about OCD, the study not only aimed to …

An “Other” Tongue: Nadsat As Anti-Language In A Clockwork Orange, Ian Hugo Nov 2025

An “Other” Tongue: Nadsat As Anti-Language In A Clockwork Orange, Ian Hugo

The Graduate Review

In this essay, I explore how “Nadsat” is used in Anthony Burgess’s 1962 novella A Clockwork Orange. “Nadsat” is a constructed language that suffuses English vernacular with words and phrases of Russian origin, and it can often prove a significant obstacle to reader comprehension of the overall narrative. However, apart from merely acting as a whim of experimentalism, I argue that Nadsat serves a functional purpose in the text, drawing on research from a variety of fields including literary studies, psychology, philosophy, and linguistics. I begin by showing how Nadsat excludes those who do not “speak” it or (in …

Religion's Role In Shaping Psychopathological Narratives, Andrea Gonzalez Mendoza Nov 2025

Religion's Role In Shaping Psychopathological Narratives, Andrea Gonzalez Mendoza

The Graduate Review

Understanding the interplay between religion and psychopathology is essential for clinicians navigating the complexities of mental health diagnosis and treatment. This paper explores the nuanced relationship between belief systems and diagnostic frameworks, shedding light on how religious beliefs influence the perception, assessment, and treatment of mental disorders. Drawing upon historical and current-day research, this paper examines how religious interpretations shape the presentation and understanding of psychopathological symptoms. In doing so, this paper argues that psychopathology cannot be understood without considering the influence of religion on its conceptualization. The latter is illustrated by looking at historical diagnostic patterns and how they …

Public School Districts Should Close Their “Alternative” And “Continuation” High Schools, Sean J. Drake Nov 2025

Public School Districts Should Close Their “Alternative” And “Continuation” High Schools, Sean J. Drake

Center for Policy Research

Public school districts across the country funnel academically struggling students into "alternative" or "continuation" high schools designed to help them catch up on credits and graduate on time. However, these schools often reproduce more inequality than they alleviate. This brief summarizes findings from a two-year ethnographic case study of an alternative high school in suburban Los Angeles, California. The author finds that these schools offer limited curricula and no extracurricular opportunities, while Black, Latino, and low-income students are vastly overrepresented compared to district averages. Students transferred to alternative schools are also more likely to drop out than low-performing peers who …

Clacls Reportage, Vol. 2, Tatiana Bertolucci Peixoto, Marcela Joya, Oscar Aponte, Ana María Granados Romero

Center for Latin American, Caribbean, and Latino Studies

This second volume of the CLACLS Reportage Series is a testament to our ongoing commitment to public-facing scholarship that bridges academic research and the lived experiences of Latinx communities in New York and beyond. This edition brings together three distinct yet interconnected stories that speak to belonging, migration, and cultural transformation across generations.

Tatiana Bertolucci Peixoto follows the legacy of Marielle Franco, the Black, queer, favela-born activist whose political assassination in Rio de Janeiro reverberated around the world galvanizing a global network of resistance—from Brazil’s favelas to New York’s diasporic communities—turning her name into a living emblem of feminist, anti-racist, …

Dictators And Lying Dictators: An Experimental Investigation Of Preference Based-Group Biases In Chinese And American Interactions, Aaron S. Berman, Saika Cer Askin, Shapeng Jiang, David Porter, Jason Shachat

ESI Working Papers

This study examines group-conditional generosity and behavior using students from Chapman University in the United States and Wuhan University in China. Participants make allocation decisions in either a standard Dictator Game (DG) or a Lying Dictator Game (LDG), where a privately reported die roll determines the allocation. We vary whether participants interact with members of their own or the other university community. The LDG game, through the possibility of plausible deniability, allows for the moderation of image concerns that potentially influence DG behavior. We complement these tasks with individual decision benchmarks that exclude the Receiver to control for group differences …

Translational Framework For Implementation Evaluation And Research: A Critical Approach To Patient-Centred Equity Design, Carl R May, Elvin Geng, Et Al.

2020-Current year OA Pubs

BACKGROUND: The field of implementation research has recently seen much interest in equity, with a strong emphasis on recognising and responding to disparities in care. Recent studies highlight the role of macro-level processes that translate meso-level institutional behaviours to micro-level healthcare practices, and that are generative of health and care inequities. They emphasise challenges patient-centredness and underscore the need for justice-oriented intervention design to address disparities and promote equitable care.

AIM: To develop a patient-centred and justice-informed approach to the design of complex healthcare interventions and innovations in service delivery.

METHOD: Patient-centred Equity Design was developed in five stages. Sociological, …

From Past Pain To Present Unity The Role Of Trauma In Shaping Collective Identity Within Refugee Communities, Shahd Alasaly Nov 2025

From Past Pain To Present Unity The Role Of Trauma In Shaping Collective Identity Within Refugee Communities, Shahd Alasaly

USF Tampa Graduate Theses and Dissertations

In this dissertation I explore the social dimensions of trauma and resilience among Syrian refugees resettled in the United States. Drawing on in-depth interviews and focus group data collected at a resettlement center in Tampa, Florida, I aim to understand how displacement reshapes identity, disrupts traditional gender roles, changes social bonds, and how healing occurs within one’s community. I frame my work within Social Identity Theory, Identity Theory, and the sociology of trauma. My research highlights the gendered expressions of trauma, the transformation of masculinity under forced migration, and the role of spirituality in community healing.

This project includes three …
