Background: Lifestyle and environmental factors are known to contribute to allergic disease development, especially very early in life. However, the link between diet composition and allergic outcomes remains unclear. Methods: In the present population-based cohort study we evaluated the dietary intake of 10-year-old children and analyses were performed with particular focus on atopic dermatitis or food allergy, allergic diseases known to be affected by dietary allergens. Dietary intake was assessed via semi-quantitative food frequency questionnaires. Based on these data, individual nutrient intake as well as children’s Dietary Inflammatory Index (C-DII™) scores were calculated. Information about atopic manifestations during the first …

Sex or gender differences in the risk of Alzheimer’s disease and related dementias (ADRD) differ by world region, suggesting that there are potentially modifiable risk factors for intervention. However, few epidemiological or clinical ADRD studies examine sex differences; even fewer evaluate gender in the context of ADRD risk. The goals of this perspective are to: (1) provide definitions of gender, biologic sex, and sexual orientation, and the limitations of examining these as binary variables; (2) provide an overview of what is known with regard to sex and gender differences in the risk, prevention, and diagnosis of ADRD; and (3) discuss …

Human genetic studies support an inverse causal relationship between leukocyte telomere length (LTL) and coronary artery disease (CAD), but directionally mixed effects for LTL and diverse malignancies. Clonal hematopoiesis of indeterminate potential (CHIP), characterized by expansion of hematopoietic cells bearing leukemogenic mutations, predisposes both hematologic malignancy and CAD.

Could Differences In Aerobic Capacity Between Lower Limbs Negatively Impact Mobility Among Older Adults?, Daxton Kennington, Chayston Brown
Student Research Symposium
Falls are a primary cause of injury and mortality among older adults with 28.7% reporting falling each year. Previous research has found lower limb asymmetries are not strictly due to strength differences or previous injury among young, healthy individuals. Our proposed strategy will assess aerobic capacity between limbs and quantify asymmetries by comparing VO2 peak and power in single limb cycling vs. double limb cycling tests. We hypothesis that individuals with asymmetries (limb differences) will have greater fall risk and worsened mobility than individuals without asymmetries. Our sampling will include individuals 65 years of age and older. Limb dominance will …

Dietetic Student Perceptions Of Interdisciplinary Teams, Mckenna Voorhees
Student Research Symposium
Introduction: Interdisciplinary/interprofessional collaboration (IDC) is an important component of healthcare delivery through which providers can efficiently and effectively meet the diverse and complex care needs of patients/clients. Interprofessional education (IPE) enables the acquisition of skills needed for IDC. Registered Dietitian Nutritionists (RDNs) function as important members of interdisciplinary teams; as such, shifts in dietetic program accreditation standards currently require the incorporation of IPE in curricula. A broad exploration of interdisciplinary dietetic student attitudes is needed to pinpoint target areas of improvement in IPE to promote effective participation in future IDC among RDNs. Objectives: To examine overall dietetic student attitudes of …

Docosahexaenoic Acid May Reduce Risk Factors Of Cancer Development In A Mouse Model Of Colitis-Associated Colorectal Cancer, Eliza Stewart, Marcus Hayden
Student Research Symposium
Colorectal cancer (CRC) is one of the most prevalent cancers worldwide and has increased incidence in developed countries. There is a close link between CRC and inflammatory bowel disease (IBD). A main symptom of IBD is colitis, which is inflammation of the colon. Diet plays a key role in the development of CRC, specifically a Western-type diet, which is characterized by energy dense and nutrient deficient foods. This dietary pattern is associated with both increased inflammation and dysbiosis of the gut microbiome, two factors that contribute to the development of CRC. Docosahexaenoic acid (DHA) is an omega-3 fatty acid that …

Food is vitally important for human beings. Without food, humanity would perish. Not only does food provide us with energy, but it also provides us with adequate nutrients so the systems throughout our body can function properly. Unfortunately, many people throughout the world, from top rated athletes to people living in impoverished areas, are either uninformed or do not have easy access to nutritional information or advice. There is a huge malnutrition epidemic among elite collegiate athletes and an even bigger malnutrition problem among the rural population of Uganda.
To solve the problem of malnourishment of collegiate athletes, I have …

Experts’ Views On Issues Affecting Egg Labeling In The United States: A Delphi Study, Rexanna Powers
LSU Doctoral Dissertations
When purchasing food, many consumers have reported they question the ethical and humane treatment of products derived from animals at the point of purchase. To complicate this issue further, many U.S. consumers lack exposure, interaction, and involvement with the agricultural industry. As a result, they have reported a willingness to pay premium prices for meats, dairy, and eggs whose packaging suggests quality welfare practices. Therefore, the purpose of this investigation was three-fold: (1) establish operational definitions for poorly understood poultry industry terms, i.e., cage-free, free-range, pasture-raised, and organic; (2) describe experts’ perceptions of the strengths, weaknesses, opportunities, and threats (SWOT) …

Investigation Of Iron Homeostasis In Colon Tumorigenesis, Hyeoncheol Kim Ph.D.
Chemistry and Chemical Biology ETDs
Iron is essential part of the human metabolism. It is a catalytic co-factor for many proteins, but it generates harmful reactive oxygen species in human body. Also, many irons metabolic genes are changes in human cancer cells compared to normal cells, leading to iron accumulation in cancer cells especially in colorectal cancer.
Due to iron’s significant role in colorectal cancer promotion, much research is focused on its role in colorectal cancer genesis. But some important metabolic aspects are not fully addressed and researched. One key aspect of iron on colorectal cancer cell progression is hemin iron. Much research warned hemin …
Quantifying Predator Functional Responses Under Field Conditions Reveals Interactive Effects Of Temperature And Interference With Sex And Stage, Kyle E. Coblentz, Amber Squires, Stella Uiterwaal, John Delong
Quantifying Predator Functional Responses Under Field Conditions Reveals Interactive Effects Of Temperature And Interference With Sex And Stage, Kyle E. Coblentz, Amber Squires, Stella Uiterwaal, John Delong
School of Biological Sciences: Faculty Publications
- Predator functional responses describe predator feeding rates and are central to predator–prey theory. Originally defined as the relationship between predator feeding rates and prey densities, it is now well known that functional responses are shaped by a multitude of factors. However, much of our knowledge about how these factors influence functional responses is based on laboratory studies that are generally logistically constrained to examining only a few factors simultaneously and that have unclear links to the conditions organisms experience in the field.
- We apply an observational approach for measuring functional responses to understand how sex/stage differences, temperature and predator densities …

Creating Sustainable, High-Performance Silkworm Fibers Inspired By Neurodegenerative Disease (Amyloids), Gavin Christensen
Creating Sustainable, High-Performance Silkworm Fibers Inspired By Neurodegenerative Disease (Amyloids), Gavin Christensen
Student Research Symposium
Amyloids present in neurodegenerative diseases, like Alzheimer’s, have a devastating effect on neurons at a microscopic level. The aggregation of amyloid plaque in neuronal synapses prevents communication between brain cells, resulting in decreased cognitive function. The ability of amyloids to form these plaques on a microscopic scale can potentially increase the strength of silkworm silk fibers when utilized on a macroscopic scale. Amyloids, by nature, have a high beta sheet concentration that forms beta nanocrystals when incorporated into the silkworm genome via CRISPR-Cas9. Silkworm silk, with select amyloid and spider silk gene sequences, poses a strong candidate for a biosynthetic …

Depression affects nearly 10% of U.S. adults and is often present among those who have experienced a major coronary heart disease event, such as myocardial infarction. It is unknown if the prevalence of depression is elevated in adults who …
