Olive Oil And Movement, Moving Olive Oil, Anne Meneley May 2022

Olive Oil And Movement, Moving Olive Oil, Anne Meneley

Dublin Gastronomy Symposium

This paper addresses several themes in the movement of olive oil. Although it is not often discussed in medico-scientific terms like “peristalsis”, olive oil was and is consumed as a morning shot in many parts of the Mediterranean, to encourage swift and efficient digestive trajectories through the body. It is one of the stars of ancient agriculture, and is still revered as a product capable of capturing a “local” identity, so much so that every olive grower seems to claim their own olive oil is the best. While an icon of “traditional” food, lower grade olive oil was also used …

The Impacts Of The Uk Wine Industry On People, Place And Climate, Claire Lyons May 2022

The Impacts Of The Uk Wine Industry On People, Place And Climate, Claire Lyons

Dublin Gastronomy Symposium

Climate change has moved the boundary at which viniviticulture is possible to above 49.9N+ degrees above latitude, in the UK this has made commercial wine production both possible and profitable. This has triggered a movement in land-use, as vineyards increasingly replace other arable land in England and Wales; a movement of people, as wealthy business professionals return to the land to establish vineyards; and a movement on menus, as English and Welsh wine is stocked at establishments from Weatherspoon’s to The Fat Duck. Concurrently, climate change is severely disrupting agricultural production and livelihoods, prompting passionate calls for a far reaching …

Sweet Tales Of Sweet Potatoes In Edo Japan, Miguel Ángel Pelayo Prieto May 2022

Sweet Tales Of Sweet Potatoes In Edo Japan, Miguel Ángel Pelayo Prieto

Dublin Gastronomy Symposium

Roasted, steamed, pureed, candied - sweet potatoes or satsumaimo are considered autumn delicacies in traditional Japanese cooking (washoku). Although native to the American continent, nowadays, they take part in the Japanese pantry. They arrived in Western Japan in the 17th century, where they prospered as a nutritious, hardy crop and spread eastwards in the following centuries. As a case study, this paper will present the sweet potato's introduction, diffusion, and acceptance during the Edo period (1600-1868) when washoku took shape. Based on written sources and material culture, the main topics will be the naturalization and acculturation of a foreign entity …

The Travels Of Soda Bread: From Everyday Staple To Heritage Food, Lucy Long May 2022

The Travels Of Soda Bread: From Everyday Staple To Heritage Food, Lucy Long

Dublin Gastronomy Symposium

Soda bread, a class of quick breads using baking soda and usually buttermilk as the rising agents, is today firmly associated with Ireland. It is presented internationally in the food industry, cookbooks, and tourism materials, as embodying Irish history and culture. As such, it has come to be seen as a heritage food. Not surprisingly, its history and contemporary reality are more complicated, as is Irish cultural identity in general. Three geographic sites for this identity are the Republic of Ireland (Ireland), Northern Ireland (Ulster), and the U.S. Not only does the bread appear in different forms and play different …

Relish, Condiment, “Kitchen”: Bastions Of Irish Food Practice For Fourteen Hundred Years, John D. Mulcahy May 2022

Relish, Condiment, “Kitchen”: Bastions Of Irish Food Practice For Fourteen Hundred Years, John D. Mulcahy

Dublin Gastronomy Symposium

In his 2016 book “Early Irish Farming”, Kelly notes that we are blessed with a large amount of information about the food eaten by the early Irish and how it was cooked. He relies on that which resides in the Old Irish texts, especially the law-texts and sagas. Kelly’s sources make it clear that our core staple diet was bread and milk, supplemented by 'tarsunn' or “annlann” (Irish for relish, condiment), later known as “kitchen”. But what constituted a relish not only varied over the centuries but also according to who was doing the eating, so that in a rigorous …

School Leadership Support: Understanding The Experiences Of Elementary-Level Teachers During A Global Health Pandemic, Kathleen M. Crawford, Pamela Wells, Juliann Sergi Mcbrayer, Kristen N. Dickens, Katherine Fallon

School Leadership Review

The purpose of this study was to better understand how the current COVID-19 global health pandemic has professionally and emotionally impacted elementary-level teachers. Teachers experienced diverse challenges during this unprecedented time with a rapid shift from in-person to online learning. Two overarching themes emerged based on participant experiences: abandoning best practices and increased stress and emotional pain. Implications for practice included the need for school leaders to evaluate the current level of support being provided to teachers and assess areas of need to support professional and emotional growth with the backdrop of the pandemic. We encourage future research with all …

Back To The Future: The Artisan Food Producer In Ireland’S Food Tourism Proposition, Rebecca O'Flynn May 2022

Back To The Future: The Artisan Food Producer In Ireland’S Food Tourism Proposition, Rebecca O'Flynn

Dublin Gastronomy Symposium

Artisan food producers are arguably more than the sum of their parts when it comes to the important role they play within Ireland’s food in tourism landscape.

On the one hand, both food and tourism as well as the artisan economy are forecasted to grow globally (Yeoman and McMahon-Beatte 2016, 95; Avent 2018; Polites 2020), suggesting that there is a significant role for artisan producers to play in food tourism in Ireland, compounded by a developing interest in local and sustainable food (Sage 2010). On the other, artisan food producers are both purveyors and preservers of food culture, heritage and …

Mobile Grounds: From Ambulant Café To Take Away Coffee, Nihal Bursa May 2022

Mobile Grounds: From Ambulant Café To Take Away Coffee, Nihal Bursa

Dublin Gastronomy Symposium

Humans’ desire to drink coffee several times a day as part of their everyday routine brought about the development of various ways to prepare and consume coffee on the move. Since coffee drinking has become an addiction, makeshift coffee corners and ambulant coffee sellers have provided fresh coffee at temporary spots in cities in addition to coffee houses; later, take away coffee in disposable cups has become another way to enjoy a cup of coffee. This paper aims to investigate the relationship between manners, tendencies of consuming coffee on the move and related material culture in the Turkish context. For …

Uyghur Cuisine And Identity: An Historical Overview Of A Discreet Diaspora, G. Randall Mcnamara May 2022

Uyghur Cuisine And Identity: An Historical Overview Of A Discreet Diaspora, G. Randall Mcnamara

Dublin Gastronomy Symposium

This work reviews aspects of the disappearing Uyghur foodways since the founding of the People’s Republic of China in 1949 due to migrations, modernization, and now, cultural genocide. Turkic interconnections of culture, trade, and resettlement through the centuries mesh tightly with the Symposium theme of food and movement. The article holds no pretense to exhaustively catalog Uyghur foods or dishes as they can vary greatly within China and even more so throughout the Uyghur communities abroad. The author spent countless time cooking in kitchens and courtyards along the Silk Road in Central Asia and much of the information in the …

Preserving Irish Smoked Salmon: Food Producers, Cultural Heritage, And Environmental Conservation, Malia Guyer-Stevens May 2022

Preserving Irish Smoked Salmon: Food Producers, Cultural Heritage, And Environmental Conservation, Malia Guyer-Stevens

Dublin Gastronomy Symposium

This research argues that the bottom-up heritagization of smoked salmon by Irish smoked salmon producers is an integral piece in the movement to protect wild Atlantic salmon in Irish waters. Wild Atlantic salmon in Ireland have transformed over the centuries from mythological figure to luxury export, and today into national food heritage thanks to the efforts of smoked salmon producers. This designation transforms Irish salmon from a wild animal into a symbol of Ireland’s historic ties to their coastal regions, an embodiment of traditional food practices, and projects the fish’s importance into the future. However, wild Irish salmon face extinction …

'Thinking Outside The Box': Extending Our Analysis Of Surplus Food Movement, Perry Share, Michelle Share, Caitríona Delaney May 2022

'Thinking Outside The Box': Extending Our Analysis Of Surplus Food Movement, Perry Share, Michelle Share, Caitríona Delaney

Dublin Gastronomy Symposium

The concept of movement in relation to food can be applied in diverse ways, literally, but also as metaphor. Food waste, similarly, is an open and contested signifier. To bring the two concepts together, then, is a potentially complicated analytical exercise. Nevertheless, to think of food waste in terms of “movement” may be productive. This paper examines, in terms of movement, the activities of Irish community and voluntary organisations (CVOs), partners with an Irish-based NGO, FoodCloud, in the distribution of surplus food. These are examined within the context of the COVID19 pandemic in Ireland during 2020 and 2021. The paper …

Hemoglobin As A Predictor For Covid-19 Disease Severity, Nicholas Sarcia, Dan Thai, Andrea M. Bodine Md

Advances in Clinical Medical Research and Healthcare Delivery

Background: The dilemma of who is at highest risk for COVID-19 severe disease and death persists. Hemoglobin levels may be an indicator of COVID-19 disease severity. There is inconsistent data on Emergency Department (ED) hemoglobin levels and severity of disease. Our objective was to examine if COVID-19 patients presenting with abnormal hemoglobin levels have an increased risk of severe disease and in-hospital mortality.

Methods: We conducted a retrospective cohort study at Berkshire Medical Center in Pittsfield, MA to investigate the relationship of COVID-19 disease severity with hemoglobin level. Inclusion criteria consisted of ED patients over 18 years with …

Heart disease is a leading cause of death for African Americans. A community-academic partnership cross-trained community health workers to engage African American adults in a 6-month heart health education and risk reduction intervention. We conducted a one-group feasibility study using a one group (pre-posttest) design. A total of 100 adults were recruited from 27 zip codes in an African American majority city through community-based organizations (46%), churches (36%), and home visits (12%). Ninety-six percent were African American; 55% were female, 39% were male, and 6% were transgender. Their mean age was 44.6 years (SD=15.9). Ninety-two percent had health insurance. Seventy-six …

Bariatric or weight-loss surgery is a popular option for weight reduction. Depending on the surgical procedure, gastric changes like decreased transit time and volume and increased pH, decreased absorption surface in the small intestine, decreased exposure to bile acids and enterohepatic circulation, and decreased gastrointestinal transit time may be expected. In the years after bariatric surgery, patients will also substantially lose weight. As a result of these changes, the absorption, distribution, metabolism and/or elimination of drugs may be altered. The purpose of this article is to report the general influence of bariatric surgery on oral drug absorption, and to provide …

Integration Of Sustainability Into Higher Education Policies: A Case Study Of The University Of South Florida, Mehmet Z. Apaydin

USF Tampa Graduate Theses and Dissertations

Sustainability and the United Nations Sustainable Development Goals (SDGs) are not new notions for higher education institutions (HEIs). However, well-organized efforts to make campuses "sustainable" are not common, and the efforts are modest compared to the institutional capabilities. This thesis, a case study of the University of South Florida (USF), was designed to explore how sustainability values and SDGs are incorporated into higher education policies. To accomplish this, the study employed a mixed method design that includes a literature review, an overview of policies and implementations, document content analysis, a program and course inventory, a keyword analysis, and semi-structured interviews. …

Design Of Self-Assembled Peptides For Wound Healing, Ka-Kyung Kim

Dissertations

According to the CDC, 15% of diabetic patients develop diabetic foot ulcers (DFU) and approximately 170,000 patients undergo non-traumatic amputation annually. DFU is a major complication of diabetes caused by non-healing full-thickness wounds through the dermis. The current treatments include blood sugar control, frequent debridement, offloading, moist wound care, infection treatment, and amputation. To achieve wound closure of DFU, appropriate wound care and antibiotic therapy are essential. Topical regimens include hydrocolloids, alginates, foam, silver-impregnated dressings, and hydrogels. Wound healing is a complex and dynamic interplay between the immune system, keratinocytes, and dermal cells (in case of cutaneous wound). Angiogenesis has …

Kesmas

Benign prostatic hyperplasia (BPH) is a severe illness affecting middle-aged and geriatric male patients. This disease normally occurs at the age of 40 or above and is also associated with sexual dysfunction. Alpha-blockers and 5α-reductase inhibitors are the preferred drugs practiced to treat BPH. However, invasive surgical therapy remains the gold standard for managing the condition in the case of refractory and intricate BPH conditions. Due to the fear of sexual dysfunction and the detrimental influence on their quality of life, most patients seek to avoid synthetic drugs and surgery. For this reason, several patients turn to phytotherapy and other …
