The objective of this study was to assess the effects of feeding gelatin capsules treated with alcoholic solutions of flavoring agents followed by drying containing fish oil on lactation performance, rumen fatty acids content and milk enrichment of fatty acids. In Trial 1, four multiparous ruminally-fistulated Holstein cows were randomly assigned to one of four dietary treatment sequences in a 4 x 4 Latin square design. Treatments consisted of 1) Control with no capsules, 2) Control plus 200 untreated capsules per cow/day, mixed with the TMR; 3) Control plus 200 treated capsules per cow/day placed directly into the rumen, 4) …

Maximizing Dietary Knowledge And Behavior Through A Teens As Teachers Approach, Anaderi Iniguez, Erica L. Doering, Elizabeth H. Weybright

The teens as teachers model is a promising approach to impact teen behavior. The current study evaluated dietary knowledge and behavior among teen teachers participating in a 4-H youth development program (N = 46; Mage = 15.5 years; 67% female; 48% Hispanic; 38% White Non-Hispanic, 14% Other). A paired sample t test was conducted on pre-and post-program surveys to identify significant improvements in dietary knowledge and behaviors. Findings suggest teens as teachers is generally effective in promoting healthy dietary knowledge and behavior. We recommend this approach be disseminated within Extension 4-H youth development healthy eating active living programming.

Despite important nutrition-related policy and programmatic improvements in South Africa, rates of stunting among young children remain unacceptably high, while rates of overweight and obesity in this same population group are simultaneously on the rise. This study sought to examine the changes in the enabling environment for nutrition aimed at young children in South Africa by drawing on a literature review, policy mapping, and stakeholder interviews, for the time period from the end of apartheid in 1994 to 2021. This compilation of research projects investigates the impact of increased gut volume on the lumbosacral disc angle and the central lumbar angle of the spine. The magnitudes of the lumbosacral disc angle can change due to age, pregnancy, sex, and, as hypothesized, gut volume. It is unknown how the central lumbar angle changes due to increased gut volume. This is important because these spinal modifications can result in pain, specifically in the lower back. The consequences of being overweight or obese rarely include the anatomical changes that result due to excess gut volume and center of mass changes. My goal …

Self-care is defined as actions or activities done by an individual to improve their own health; most often referring to mental health. This project focused on giving tools for self-care and mindfulness through nature. These tools included ways to self-soothe through meditation, mindfulness and nutrition. The project’s activities were conducted at MEarth, an outdoor learning facility located in the Carmel Valley. MEarth is a prime location for this project as it is still a place of learning, but it is not a traditional classroom and teaches in a more engaging way for presenting information. Due to the constant mobility of migrant families, migrant students face disadvantages in their academic performance. This senior capstone research project is to examine the benefits of existing education programs for immigrant elementary school students on migrant students available for a largely Hispanic community on the Central Coast of California. Through the use of literature review, interviews with migrant teachers, migrant coordinators, and migrant directors, the results show that even though migrant students obtain physical and emotional support for the Migrant Education Program, their academic achievement and personal identity are constantly being challenged. The employment of ozone in livestock production as a means of mitigating ammonia is used for enhancing air quality within animal confinement facilities, such as swine or poultry barns. Ammonia is a byproduct of animal excrement. Elevated ammonia concentrations can adversely affect the well-being of both animals and humans. Affiliation is important for women during times of stress. Although, affiliation has been linked to women’s hormones across the menstrual cycle, many women use hormonal contraceptives which disrupt the links between hormones, psychology, and behavior. This study examined how hormonal contraceptives (hormonal IUD vs. the oral contraceptive pill) and menstrual cycle phase (follicular vs. luteal) are associated with affiliative motivations following the Trier Social Stress Test (TSST). Further, this study examined women’s cortisol reactivity and whether cortisol reactivity mediated affiliative motivation following the stressor. Black African American Men (BAAM) suffer disproportionately from trauma related challenges and have a higher risk of encountering trauma across the lifespan. The negative impact of trauma is a major public health concern in the United States, evidence suggests trauma negatively impacts the physical well-being, mental health, and mortality rate. BAAM have increased rates of trauma exposure and their traumatic experience is historically complex involving a variety of contemporary issues (i.e. Adverse Childhood Experiences (ACEs), depression, victimization and desensitization, stress). Obesity, a pervasive global health concern, involves a complex interplay between genetic factors, dietary patterns, and the gut microbiota. Onion peels are rich in polyphenols and known for their antioxidant properties. However, the effects of in-vitro digested onion peel extract has not been investigated thus far. This study therefore assesses the effects of digested bioactive compounds from onion peels, emphasizing gut microbiota shift and metabolites. Onion peel extract (OPE), digested onion peel extract (DOPE), and solid-phase-extracted digested onion peel extracts (SPE-DOPE) were analyzed for total phenolic content (TPC) and antioxidant activity. Volatiles are responsible for the aroma of berries, and are widely used in food, perfumery, and cosmetic industries. However, the potential health beneficial effects of berry volatiles have not been extensively studied. Frequent off-target movement occurrences to soybean [Glycine max (L.) Merr.], rice (Oryza sativa L.) injury, and a lack of barnyardgrass [Echinochloa crus-galli (L.) P. Beauv.] control followed the commercial launch of florpyrauxifen-benzyl in 2018. Florpyrauxifen-benzyl is a synthetic auxin, Herbicide Resistance Action Committee (HRAC)/Weed Science Society of America (WSSA) Group 4 herbicide used for postemergence weed control in rice and labeled for application at 30 g ae ha-1. The research involved testing various cooking vessels and lids in a solar cooking experiment, with a specific focus on the performance of different materials and their heat retention capabilities. It employs a synergistic approach, merging physical and biochemical defenses, to counteract pathogens that enter through dietary or other external routes. This system also facilitates the breakdown of complex carbohydrates, a process beyond the host's innate capacity. An Exploration Into Health Equity Discourse In Mississippi: Organizational Commitments And Practitioner Perspectives, Thuy-Vy Lillian Pham

This thesis takes a sociological approach to examine healthcare workers' beliefs and medical organizations’ solidarity statements related to diversity and equity and how these discourses aligned and/or diverged. Through interviews with healthcare providers in Mississippi and content analysis of solidarity statements, the study finds that discussions on health disparities more frequently addressed socioeconomic inequality rather than systemic racism, diverging from organizational statements. This emphasis may partly stem from the demographics of the study participants, who were predominantly White—which also reflected the staff where they worked. Additionally, while healthcare workers recognized structural issues related to health disparities, they often showed hesitancy …

The authentication of products with claims regarding protein sources or compositions is a challenge for traditional analytical methods, which generally lack the required specificity whole protein analysis can provide. For example, the establishment of milk as “A2” is achieved through genetic testing of cows before milk production, with no methods to authenticate milk products themselves. The amount of nitrogen stored in terrestrial soils, its “nitrogen pool”, moderates biogeochemical cycling affecting primary productivity, nitrogen pollution and even carbon budgets. The soil nitrogen pools and the transformation of nitrogen forms within them are heavily influenced by environmental factors including anthropogenic activities. However, our understanding of the global distribution of soil nitrogen with respect to anthropogenic activity and human land use remains unclear. Quinoa (Chenopodium quinoa), an orphan crop native to South America, is tolerant of drought and saline soils and produces a highly nutritious grain. Given these qualities, the demand for this pseudocereal has been steadily increasing, and quinoa breeding programs can now be found throughout the world. I believe the introduction of quinoa-like cultivars developed specifically for Northern New England (NNE) with the region’s climate and disease pressures taken into consideration will benefit local farmers and consumers. Background: Taking inspiration from the classical 1974, “moving room experiment” by Lee and Aronson, a “virtual moving room paradigm (Vroom)” was designed using virtual reality (VR) to assess postural control behavior. Methods: Thirty healthy adults (age: 21 ± 1 years; height: 166.5 ± 7.3 cm; mass: 71.7 ± 16.2 kg) were tested for postural stability in a virtual moving room paradigm (Vroom). The Vroom consisted of randomized virtual and visual perturbations of the virtual room moving toward and away from the individual, during both unexpected and expected trials. Background: Eating disorders (EDs) are life threatening psychological disorders characterized by obsessions related to food, weight, and exercise. The presence of an eating disorders has been linked to poorer quality of life (QOL) and clinical impairment. Obsessive compulsive disorder (OCD) is a psychiatric disorder characterized by intrusive thoughts and ritualistic behaviors. EDs and OCD have similar symptom structure as well as similar independent relationships to QOL. The lifespan extension induced by 40% caloric restriction (CR) in rodents is accompanied by postponement of disease, preservation of function, and increased stress resistance. Whether CR elicits the same physiological and molecular responses in humans remains mostly unexplored. In the CALERIE study, 12% CR for 2 years in healthy humans induced minor losses of muscle mass (leg lean mass) without changes of muscle strength, but mechanisms for muscle quality preservation remained unclear. School psychologists, among other educators, experienced a rapid transition to online educational service delivery in response to the Coronavirus-19 pandemic and related stay-at-home orders in March of 2020. Students and educators experienced significant difficulties throughout the pandemic, including increased mental health needs. Educators and parents may have required additional support from school psychologists in order to best support students’ learning online. Spotted wing drosophila, Drosophila suzukii (Matsumura) (Diptera: Drosophilidae), is an economically important pest that damages small, soft-skinned fruits. Female spotted wing drosophila (SWD) have a heavily sclerotized, serrated ovipositor which allows them to lay their eggs in ripe and ripening fruits. Woven polyethylene weed mat has been reported to influence ambient temperature and relative humidity within blueberry canopies.
