Handling Practices During Distribution Of Kinnow-Mandarins (Citrus Nobilis X Citrus Deliciosa) Used For Preparation Of Fresh-Squeezed Juices And Their Effects On Microbiological Safety, M. Ghosh, A. Ganguli, M. Kumar

The objective of this study was to assess the microbiological safety of Kinnow-mandarins (Citrus nobilis X Citrus deliciosa) used for preparation of fresh squeezed juices by street vendors. One hundred and fifty Kinnow mandarin samples were collected from different points in the distribution chain from the same lot, washed and aliquots of the wash samples were analyzed for total aerobes, Staphylococcus, total and fecal coliforms, Salmonella and Shigella. Although, there was no notable increase in the total aerobic, total or fecal coliform counts, total staphylococcal counts increased significantly (P<0.05) during distribution to street vendors; seventy-two samples from the street vendors showed the presence of coagulase positive Staphylococcus aureus, twenty-three of these produced enterotoxins B and C. Salmonella and Shigella were not detected in any of the samples. Sources of high numbers of enterotoxigenic S. aureus were traced to unhygienic manual handling by middle level buyers and by street vendors. The results of our study demonstrate the poor microbiological quality of Kinnow-mandarins, the possible entry points of contaminants in the distribution chain of these fruits and unhygienic vending practices. Appropriate intervention measures are needed to ensure safe fresh squeezed juices for consumers.

The effects of exogenous hormones (ABA, NAA, BA, GA; and ethephon) and chemical inhibitors (MH and CW), associated with cooling, on sprouting of dormant (freshly harvested) and non dormant (kept six months at 5-6 °C) onion bulbs were investigated. Effects of NM and BA on the sprouting of the bulbs were similar, particularly when associated with cooling. Cooled + NAA and BA treated dormant bulbs, both sprouted after lo weeks, while non-cooled bulbs sprouted after 10 and 12 weeks, respectively. Effect Of Anoxia On Respiration Rate (Fermentative Index) And Ethanol Production Of Onion Bulbs (Allium Cepa L.), N. Benkeblia, N. Shiomi

The physiological behavior, including carbon dioxide production, fermentative index (FI) and ethanolic production of onion bulbs kept under total anoxia (l00% N2) was investigated. During the first 24 hours, carbon dioxide production increased from 0.01 to 1.56 kPa Co2, and the average rate of the increase in CO2; production between 0 and 24 hours was 0.09 kPa/h. The Q10, of the fermentative index was l.9. Ethanol produced by onion bulbs kept under anoxia during 6 hours was temperature dependent, and was 0.563 and 0.760 pmol kg-1h-1 at 10 and 20°C respectively, while at 4°C the quantity produced was not detected. …

A range of herbs and spices are known to possess antibacterial activity as a consequence of their chemical composition. The sensitivity pattern of S. typhimurium ATCC 14082 to a range of these natural inhibitors was determined by measuring the zones of growth inhibition produced by individual herbs or spices. The herb and spice samples caused different levels of growth inhibition with S. typhimurium ATCC 14082. In general, S. typhimurium ATCC 14082 demonstrated considerable resistance to the antimicrobial activity of these inhibitors. Only cinnamon and garlic produced zones of growth inhibition. Inorganic fertilizers with major nutrients are likely to be contaminated with some micronutrients. Fertilizers, utilized in Saudi Arabia, were analyzed for their total and water-soluble content of Fe, Zn, Mn and Cu. They represented three categories namely: phosphatic, solid multiple nutrient fertilizers (SMNF) and water-soluble multiple nutrient fertilizers (WSMF). Total iron content in examined fertilizers was higher in phosphatic fertilizers and lower in WSMF. Camembert cheese was manufactured from pasteurized cow’s milk by the traditional method in order to determine the changes in the microflora, physico-chemical, and biochemical characteristics over 30-day ripening period. The total bacteria counts were high in cheese throughout ripening with lactic acid bacteria being the main microbial group both on the surface as well as in the center of the curd. The Nutritional Status Of Some Horticultural Crops In Salalah Region, Sultanate Of Oman, M.M. El-Fouly, M.M. Shaban

A field survey has been conducted in Salalah region, Sultanate of Oman to evaluate the nutrient status of some horticultural crops and the respective soils. Soil and leaf samples were collected and analyzed. Soils were found to be characterized by high pH, high CaCO3 content, low or very low micronutrient contents. The unfavorable conditions caused nutrient deficiencies within the plant tissues. To correct the situation, fertilizer use should be based on soil testing and plant analysis, as well as information on farming system and farm management. Use of micronutrient fertilizers should be considered as a part of the fertilizer regime.

Fifteen samples of Laban made at home in three Omani regions were subjected to physical-chemical and microbiological analysis. Laban had an average titratable acidity, pH, fat, protein and total solids of 1.12%, 3.98, 1.I2%, 2. 11% and 6.29%, respectively. The microbial flora of traditional Omani laban was found to be predominantly mesophilic lactococci. and homofemenentative lactobacili. The mean Lactococci and lactobacilli counts were 1.3 x 10 8 and 2.4 x 10 6/ml respectively. The main microbial types involved in the manufacture of Omani laban were Lactoeoccus lactis ssp lactis. The structural properties of mixtures with pectin, oxidised starch and glucose syrup were investigated using small deformation dynamic oscillation. The composition of the mixture, pH and temperature course of analysis were designed to imitate the development of confectionery products. In the absence of added calcium, preparations of low methoxy pectin with glucose syrup form viscous solutions, which remain crystal-free at subzero temperatures. The effect of a saline nutritional regime on tomato (Lycopersicon esculentum Mill.) fruit yield and fruit quality enhancement for five cultivars (CLN 425, Pearson, Napoli, Hymar, and Sierra) was studied. The saline nutrient treatment consisted of (i) a control. When projecting livestock environmental prospects for the 1990's. it is critical to recognize the multidimensional nature of managing livestock species under hot environments. This paper identifies potential critical physiological windows during the life cycle of the animal that are sensitive to heat stress and responsive to environmental modification. Ovarian follicular development appears to be sensitive to heat stress leading to reductions in intensity of oestrus and subsequent fertility. Clostridium thermocellum, a thermophilic anaerobic bacterium, holds promise as a biocatalyst for conversion of lignocellulosic biomass into biofuels. This microbe has been subjected to various metabolic engineering strategies, including the deletion of genes encoding secondary fermentation products such as H₂, formate, acetate, and lactate, as well as the expression of heterologous genes to redirect carbon flux toward ethanol production. Despite these efforts, achieving economically viable ethanol titers remains a challenge. Its strength has been the ability to provide multiple chromatograms for parallel visual comparison of standards and samples. It’s weakness has been the lack of digitization to allow objective chemometric analysis of the data. Childhood obesity is diagnosed in children with a weight that is above the normal levels for their age and height. This diagnosis can be made if the child's body mass index (BMI) percentile is equal to or above 95% for age and sex. This study explored the influence of nutrition counseling provided by registered dietitian nutritionists (RDNs) on collegiate athletes’ dietary behaviors, knowledge, and perceptions of nutrition. A mixed-methods approach was employed, incorporating qualitative interviews with 15 athletes from six sports across four schools. Participants reflected on their counseling experiences, focusing on its impact on their nutritional habits, health, and athletic performance. Quantitative data, including a one-sample t-test on recommendation scores, revealed a mean score of 6.73 (SD = 0.46) on a 7-point scale, indicating consistently high satisfaction with nutrition counseling. Motion sickness is associated with thermoregulation and metabolic control, but the underlying neural circuitry remains largely unknown. Here we show that neurons in the medial vestibular nuclei parvocellular part (MVePC) mediate the hypothermic responses induced by motion. Reactivation of motion-sensitive MVePC neurons recapitulates motion sickness in mice. We show that motion-activated neurons in the MVePC are glutamatergic (MVePCGlu), and that optogenetic stimulation of MVePCGlu neurons mimics motion-induced hypothermia by signalling to the lateral parabrachial nucleus (LPBN).
